1/2 cup white cranberry juice cocktail
1 cup lychee juice (from a can of lychees)
2 1/2 envelopes unflavored gelatin (1/2 envelope equals about 1 teaspoon of gelatin powder)
1/2 cup peach schnapps (or Cointreau™ for a less sweet jello shot!)
6 chopped lychees, for garnish, if desired

Steps:

  • Pour juices into a saucepan and sprinkle with gelatin. Allow to soak for a minute or two.
  • Heat over low heat, stirring constantly, until the gelatin is fully dissolved (about 5 minutes). Remove from heat.
  • Stir in the vodka and schnapps.
  • Pour into a standard 1 lb loaf pan (about 9" x 5"). Refrigerate until fully set, several hours or overnight.
  • To serve, cut into desired shapes. Garnish each jello shot with a few pieces of chopped lychee, if desired.

2 (3 ounce) boxes pineapple gelatin mix
1 teaspoon sugar
1 cup water
1 (12 ounce) can lychees in heavy syrup
1/4 cup light rum
10 -12 small plastic cups (or shot glasses)

Steps:

  • In a medium bowl, combine the gelatin and the sugar.
  • In a small saucepan, bring water to a boil.
  • Add boiling water to the bowl and whisk vigorously to dissolve the gelatin.
  • To the gelatin mixture, add 1 cup of lychee syrup, and rum and whisk again.
  • Cut the lychees in half and place 1 half in each cup.
  • Pour the gelatin mixture into the cups.
  • Refrigerate until set.

1 cup boiling water
2 cups milk
¾ cup white sugar
1 ½ teaspoons almond extract
8 lychees, or to taste

Steps:

  • Pour 1 cup water into a bowl; stir in gelatin powder until dissolved. Slowly stir boiling water into gelatin mixture. Mix milk, sugar, and almond extract into gelatin mixture; add lychees. Pour gelatin mixture into a shallow container; refrigerate until set, 3 to 4 hours.
