1 1/2 cups chicken stock ((or vegetable or mushroom stock; 350ml))
1 tablespoon Shaoxing wine
1 tablespoon brown sugar ((or granulated sugar))
2 teaspoons sesame oil
1/4 cup soy sauce ((can sub gluten-free soy sauce or tamari))
1 1/2 tablespoons dark soy sauce
2 tablespoons oyster sauce ((or vegetarian or gluten-free oyster sauce))
1/4 teaspoon white pepper
1/4 teaspoon salt

Steps:

  • In a jar with a tight lid (must hold 2 cups of liquid), combine all of the stir fry sauce ingredients together and shake well.
  • This sauce should keep for a few weeks in the refrigerator; all you need to do is measure and pour out what you need for your dish.

1 can (8 ounces) pineapple chunks
2 tablespoons plus 1 teaspoon cornstarch
1/4 teaspoon ground ginger
1-1/2 cups chicken broth
3 tablespoons brown sugar
1 tablespoon soy sauce
1 tablespoon molasses
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon garlic salt
1/4 teaspoon paprika
1/8 teaspoon pepper
3/4 pound boneless skinless chicken breasts, cut into 1-inch cubes
5 tablespoons canola oil, divided
3 medium carrots, chopped
1 small onion, sliced
1 small green pepper, coarsely chopped
Hot cooked rice

Steps:

  • Drain pineapple, reserving juice; set pineapple aside. In a small bowl, mix pineapple juice, cornstarch and ginger until smooth. Stir in broth, brown sugar, soy sauce and molasses., In a large resealable plastic bag, combine flour and seasonings. Add chicken, a few pieces at a time; close bag and shake to coat., In a large skillet, heat 4 tablespoons oil over medium heat. Add chicken; cook and stir until no longer pink. Remove from pan; discard cooking juices., Stir-fry vegetables in remaining oil until crisp-tender. Stir cornstarch mixture and add to pan. Bring to a boil; cook and stir 1-2 minutes or until sauce is thickened. Return chicken to pan. Add reserved pineapple; heat through. Serve with rice.

1/4 cup lychee juice
1 teaspoon sesame oil
1 teaspoon minced fresh garlic
1/2 teaspoon ground ginger
1 cup pineapple juice, plus
2 tablespoons pineapple juice, for mixing
4 teaspoons cornstarch

Steps:

  • In a small saucepan, combine lychee juice, pineapple juice, oil, garlic and ginger over medium heat.
  • Combine 2 tablespoons of pineapple juice and corn starch in a separate bowl and stir until the corn starch dissolves.
  • Add cornstarch to saucepan and turn heat to high. Bring mixture to a boil, stirring often.

2 teaspoons vegetable oil
1 (16 ounce) bag fresh mixed cut vegetables (broccoli, carrot, snap pea and celery blend)
1/3 cup bottled stir-fry sauce
2 teaspoons cornstarch
1 lb frozen raw shelled and deveined large shrimp
1 (8 ounce) can pineapple chunks in juice

Steps:

  • Prepare rice as label directs.
  • Meanwhile, in nonstick 12-inch skillet, heat oil over medium-high heat until hot.
  • Add vegetables and cook, stirring constantly, until evenly coated with oil. Cover skillet and cook 3 to 4 minutes longer or until vegetables are tender-crisp, stirring occasionally.

My SIL is a newlywed, and she's turning into quite a good cook -- we have even started sharing recipes. This is HER stir fry sauce, and I love its basic goodness. You can add ingredients (I'll add a few spoonfuls of black bean sauce sometimes, for example) or change them around (I often use brown sugar instead of white, and sometimes I use rice wine vinegar instead of the white). I keep losing the piece of paper I have this scribbled on, so it's time to bring it to Zaar!

4 tablespoons vinegar
4 tablespoons sugar
1 tablespoon light soy sauce
1 tablespoon dry sherry or 1 tablespoon shaoxing wine
3 tablespoons tomato sauce or 3 tablespoons ketchup
1/2 teaspoon msg (optional)
2 teaspoons cornflour
1 (225 g) can pineapple chunks in syrup
1 medium carrot, grated
3 spring onions, sliced

Steps:

  • Mix cornflour and juice from pineapple.
  • Mix all other ingredients except vegetables.
  • If using as a stir fry sauce, cook your meat and then add mixed sauces.
  • Stir through to coat meat.
  • Add cornflour and pineapple mix, stirring continually. Allow sauce to boil.
  • Add vegetables and pineapple, stir fry for about 30 seconds and serve with rice.
  • This sauce can also be used as a dipping sauce, or for pouring over deep fried battered chicken, fish or meat.
  • Simply pour the mixed sauces into a pan. Bring to boil.
  • Add the cornflour and pineapple mix, stirring continually. Allow to boil.
  • Add vegetables and pineapple.
  • Serve poured over you favourite meat, or use as a dipping sauce for finger foods.
