Easy, No Fuss Thanksgiving Turkey image

Foolproof Thanksgiving Turkey recipe that packs all of the flavor and juiciness you expect from the perfect roasted turkey, with none of the stress! Step by step for how to cook the perfect turkey.

1 12-20 pound turkey
1 onion (, peeled and quartered)
1 lemon (, quartered)
1 apple ((your favorite kind), quartered)
.75 ounce container fresh rosemary (*)
.75 ounce container fresh thyme (*)
.75 ounce container fresh sage (*)
1 cup unsalted butter (, softened)
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
6-8 cloves garlic (, minced)
fresh chopped herbs

Steps:

  • If the turkey is frozen: Thaw in the fridge, 24 hours for every 5 pounds of Turkey. I like to give myself 1 extra day, just to be safe.
  • Remove the thawed turkey from the fridge 1 hour before roasting, to let it come to room temperature.
  • Adjust your oven rack so the turkey will sit in the center of the oven. Preheat oven to 325 degrees F.
  • Make the herb butter by combining room temperature butter, minced garlic, salt, pepper, one tablespoon fresh chopped rosemary, one tablespoon fresh chopped thyme, and half a tablespoon of fresh chopped sage. (You'll use the remaining fresh herbs for stuffing inside the cavity of the turkey)
  • Remove turkey from packaging and remove the neck and giblets from the inside the cavities of the bird. (Reserve them for gravy, if you want, or discard them). Pat the turkey very dry with paper towels.
  • Season the cavity of the turkey with salt and pepper. Stuff it with the quartered lemon, onion and apple and leftover herbs.
  • Use your fingers to loosen and lift the skin above the breasts (on the top of the turkey) and smooth a few tablespoons of the herb butter underneath.
  • Tuck the wings of the turkey underneath the turkey and set the turkey on a roasting rack inside a roasting pan*.
  • Microwave the remaining herb butter mixture for 30 seconds (it doesn't need to be completely melted--just really softened). Use a basting brush to brush the remaining herb butter all over the outside of the turkey, legs and wings.
  • Roast at 325 degrees F for about 13-15 minutes per pound, or until internal temperature (inserted on middle of thigh and breast) reaches about 165 degrees.
  • (I remove the turkey from the oven once it reaches 160 degrees. Then, I tent it with foil, and let it rest on the counter. It will continue cooking under the foil, to reach 165 degrees F.)
  • ***Check the turkey about halfway through cooking, and once the skin gets golden brown, cover the top of the turkey with tinfoil, to protect the breast meat from overcooking. Alternately, you could start cooking the turkey with it tented in foil, then during the last hour or so of cooking you can take the foil off to let the turkey brown.

This recipe for a white-sauce based lasagna is a great way to use up leftover turkey. For a little added spice dry a half teaspoon of dried mustard in the white sauce. Oven ready lasagna noodles make this recipe quick to prepare.

1 onion, chopped
2 stalks celery, chopped
½ teaspoon minced garlic
1 tablespoon vegetable oil
2 cups cooked and chopped turkey
1 cup cooked chopped broccoli
2 tablespoons butter
¼ cup all-purpose flour
salt to taste
ground black pepper to taste
1 ½ cups milk
1 (16 ounce) package instant lasagna noodles
1 cup shredded mozzarella cheese

Steps:

  • In a medium skillet saute the chopped onions, celery and garlic in oil until soft and tender. Add chopped turkey and broccoli. Set aside.
  • To make white sauce: In a small saucepan over low heat melt butter or margarine. Remove from heat and add flour, salt, and pepper; and blend well. Return to low heat, whisk in milk and cook until thick.
  • To assemble, in the bottom of a casserole dish place a thin layer of white sauce, then a layer of noodles. Next, place a layer of the turkey mixture, followed by sauce, and then 1/2 cup of the shredded mozzarella cheese. Repeat layering process with turkey mixture and sauce. Top with the remaining 1/2 cup of mozzarella cheese.
  • Bake in a preheated 350 degree (175 degree C) oven for 45-60 minutes until bubbly and heated through. Let stand 10 to 15 minutes before serving.

I read a lot of recipes before making my first turkey, and there were just too many to choose from, so I decided to wing it. Nobody was more shocked than I was to see how gorgeous, moist and flavorful it turned out, considering how very few ingredients and work was involved. Yes, the name is a double-entendre (there was a theme to my first Thanksgiving dinner!) I used a semi-sweet red wine, but you can go with whatever vintage you prefer if you want something more bitter. The drippings from the pan are practically a gravy on their own.

3 cups water
½ cup margarine
2 (6 ounce) packages stuffing mix for turkey
1 (18 pound) whole turkey, thawed if frozen
2 cups red wine
1 teaspoon salt
1 egg, beaten

Steps:

  • Preheat an oven to 390 degrees F (200 degrees C).
  • Bring the water to a boil in a large saucepan, and stir in the margarine until melted. Mix in the stuffing mix until thoroughly moistened, remove from heat, and allow the stuffing to stand for 5 minutes. Fluff with a fork.
  • Remove neck and giblets from the turkey, if present, and place the turkey into a large roasting pan with a lid. Lightly stuff the cavity of the turkey with the stuffing. Pour the red wine all over the turkey, and sprinkle the bird with salt. Brush the egg over the top of the turkey. Cover the roasting pan.
  • Roast in the preheated oven for 2 hours. Remove lid, baste the turkey with the pan drippings, and cover the breast of the turkey with a piece of aluminum foil. Return to oven, and roast an additional 30 minutes; baste once more, and roast until the turkey is browned and an instant-read meat thermometer inserted into the thickest part of a thigh reads 165 degrees F (75 degrees C), about 2 more hours.
  • Transfer the turkey to a platter, and allow to stand for 30 minutes. To serve, remove stuffing to a serving dish before carving.
