1 box Betty Crocker™ Super Moist™ yellow cake mix
1/2 cup vegetable oil
1/2 cup chopped walnuts, if desired
1 can (11 oz) mandarin orange segments, drained (reserve 1/3 cup liquid)
4 eggs
1 can (20 oz) crushed pineapple, undrained
1 box (4-serving size) vanilla instant pudding and pie filling mix
1/2 to 1 teaspoon grated orange peel, if desired
1 cup Cool Whip frozen whipped topping, thawed

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease or lightly spray bottom only of 13x9-inch pan.
  • In large bowl, beat cake mix, oil, walnuts, orange segments, reserved 1/3 cup orange liquid, and eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes. Pour into pan.
  • Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
  • To make pineapple frosting, stir together pineapple, dry pudding mix and orange peel. Gently stir in whipped topping. Spread on cake. Store tightly covered in refrigerator.

This recipe is from Betty Crocker. I made it for the first time for Easter 2013. My husband could not stay away from it, and he normally can bypass desserts! It is moist and densely good with a frosting that is not too sweet.

1/2 cup(s) vegetable oil

1-11 oz can(s) mandarin oranges, undrained
4 - eggs
1-20 oz can(s) crushed pineapple, undrained
1 box(es) (4 serving-size) instant vanilla pudding
1/2 - 1 teaspoon(s) grated orange peel (optional)
1 cup(s) thawed cool whip

Steps:

  • Preheat oven to 350 degrees. Grease the bottom of a 9 x 13 pan.
  • In a large mixing bowl beat the cake mix, oil, walnuts, oranges and eggs on low speed for 30 seconds. Beat at medium speed for 2 minutes. Pour into pan.
  • Bake for 30 - 35 minutes or until a toothpick inserted into the center of the cake comes out clean. Cool completely, at least 1 hour.
