"THE LADY & SONS" TEXAS SHEET CAKE



When I was growing up my mom made this cake but she called it Neighborhood Cake. It is such an easy & chocolaty good. I like it with nuts. It is great to take to a potluck or picnic. When it cools store it in the fridge. Personally I like it warm!!

1 c butter
1 c water
4 Tbsp cocoa powder
2 c flour
2 c sugar
1 tsp baking soda
1/2 tsp salt
2 eggs, slightly beaten
1/2 c sour cream
ICING
1/2 c butter
6 Tbsp milk
4 Tbsp cocoa powder
2 c powdered sugar
1 tsp vanilla extract
1 c chopped pecans (optional)

Steps:

  • 1. Preheat oven to 350F. for the cake, combine the butter, water, and cocoa in a sauce pan. Bring to a boil;set aside.In a mixing bowl, combine flour, sugar, salt & soda. Add all the chocolate mixture all at once; stirring to combine. Add in slightly beaten egg and sour cream together; pour in bowl and mix well. Pour batter into a lightly sprayed 18x12x1-inch pan and bake for 20 minutes.
  • 2. Icing:Just before the cake is done, make the icing. combine butter, milk & cocoa in a large sauce pan and bring to a boil. Add the powdered sugar and vanilla. Cool the cake slightly, then pour over cake. Sprinkle with pecans.

1 1/2 cups (3 sticks) unsalted butter, room temperature, plus more for baking sheet
3 cups cake flour (not self-rising), plus more for baking sheet
2 teaspoons baking powder
1 teaspoon salt
2 1/4 cups sugar
1/2 teaspoon pure vanilla extract
1 cup milk
8 egg whites

Steps:

  • Preheat oven to 350 degrees. Butter and flour a 12-by-18-by-1-inch rimmed baking sheet, tapping out any excess flour; set aside.
  • In a medium bowl, sift together flour, baking powder, and salt; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat butter and 2 cups sugar until light and fluffy, 3 to 4 minutes, scraping down sides of the bowl as needed. Beat in vanilla. With mixer on low speed, add flour mixture in three parts, alternating with the milk and beginning and ending with the flour; beat until just combined. Transfer mixture to a large bowl; set aside.
  • In the clean bowl of an electric mixer fitted with the whisk attachment, beat egg whites on low speed until foamy. With mixer running, gradually add remaining 1/4 cup sugar; beat on high speed until stiff, glossy peaks form, about 4 minutes. Do not overbeat. Gently fold a third of the egg-white mixture into the butter-flour mixture until combined. Gently fold in remaining egg-white mixture.
  • Transfer batter to prepared baking sheet and smooth batter evenly with a spatula or back of a spoon. Transfer to oven and bake until a cake tester inserted in the center comes out clean, about 35 minutes. Transfer to a wire rack and let cool 10 minutes. Invert cake onto rack, then reinvert and let cool completely.

  • Cream shortening and peanut butter with the sugar and brown sugar until smooth. Add the milk gradually and then the eggs and vanilla. Mix the flour with the salt and baking powder and slowing add to the creamed mixture, blending well. Pour into a lightly greased and floured 9 x 13 pan and bake at 350 for 25 to 30 minutes.

1/2 c cocoa
2 c flour
2 c sugar

4 tsp vanilla

1/4 c can milk (regular milk is fine)
1/4 c cocoa
3 c powdered sugar
dash salt
Mix all together & frost as desired.

  • Cream sugar and butter. Add eggs one at a time and mix each well. Sift together cocoa and flour. Add to egg mixture. Add vanilla and nuts. Pour in prepared 9x13 pan, bake 20-25 mins on 350. Check at 20 minutes.

2 cups all-purpose flour
2 cups white sugar
½ teaspoon baking soda
¼ teaspoon salt
1 cup water
¾ cup butter or margarine, softened
½ cup peanut butter
¼ cup vegetable oil
2 eggs
½ cup buttermilk
1 teaspoon vanilla extract
⅔ cup white sugar
⅓ cup evaporated milk
1 tablespoon butter or margarine
⅓ cup chunky peanut butter
⅓ cup miniature marshmallows
½ teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 10x15x1 inch jellyroll pan.
  • In a large bowl, stir together the flour, 2 cups sugar, baking soda and salt. Set aside. Combine the water and 3/4 cup of butter in a saucepan, and bring to a boil. Remove from the heat and stir in 1/2 cup peanut butter and vegetable oil until well blended. Stir this mixture into the dry ingredients.   • While the cake bakes, place 2/3 cup sugar, evaporated milk, and butter in a saucepan. Bring to a boil, stirring constantly. Cook stirring for 2 minutes. Remove from heat and stir in the peanut butter, marshmallows and vanilla until marshmallows are melted and the mixture is smooth.
  • Spoon the frosting over the warm cake and spread in an even layer. Allow to cool before cutting and serving.
