ONE-POT SAUSAGE AND SHRIMP JAMBALAYA



One-Pot Sausage and Shrimp Jambalaya image

Number Of Ingredients 13

2 tablespoons vegetable or olive oil
1 pound cajun or andouille sausage, sliced into 1/4-inch rounds
1 large onion, diced
1 large bell pepper, seeded and diced
2 ribs celery, diced
3 cloves garlic, minced
4 cups chicken broth
1 (15-ounce) can Red Gold Crushed Tomatoes
1 (14.5-ounce) can Red Gold Diced Tomatoes
1 teaspoon Creole seasoning (or more)
2 cups parboiled or converted rice
sliced green onions for garnish, optional
1 pound large shimp, peeled and deveined

Steps:

  • Heat the oil in a stock pot or large dutch oven of medium-high heat. Add the sliced sausage and cook, stirring frequently, until the sausage has browned. Use a slotted spoon to remove the sausage to a plate. Set aside.
  • Add the diced onion, bell pepper, and celery. Cook until the vegetables are tender - about 5 minutes. Add the garlic and cook for about 1 minute.
  • Add the broth, Red Gold Crushed Tomatoes, and Red Gold Diced Tomatoes. Add the Creole seasoning. Bring to a boil. Stir in the rice and browned sausage. Reduce the heat to a simmer and cover. Cook about 20 minutes, stirring occasionally, until the rice is tender to your liking. Taste and add additional Creole seasoning or salt and pepper to your taste. Add the shrimp and cover. Cook for an additional 3 to 5 minutes or until the shrimp are pink and cooked through. Allow to rest for about 5 minutes, then stir and serve topped with sliced green onions, if desired.

12 small pork sausage links, cut into 1-inch pieces
1 cup finely chopped onion
1 cup finely chopped green pepper
4 garlic cloves, minced
2 tablespoons canola oil
1-1/2 cups cubed cooked chicken
1-1/2 cups cubed fully cooked ham
1 can (28 ounces) diced tomatoes, undrained
1 cup uncooked long-grain rice
1 can (14-1/2 ounces) chicken broth
3 tablespoons minced fresh parsley
1 teaspoon salt
1/2 to 1 teaspoon pepper
1/2 to 3/4 teaspoon dried thyme

Steps:

  • In heavy skillet, saute the sausage, onion, green pepper and garlic in oil until vegetables are tender. Add chicken and ham; cook for 5 minutes. Stir in the remaining ingredients. , Transfer to a 2-qt. baking dish. Cover and bake at 350° for 1 hour or until rice is tender and liquid absorbed.

2 tablespoons butter
8 ounces andouille sausage, cut into 1/4-inch slices
2 tablespoons ground paprika
1 tablespoon ground cumin
½ teaspoon cayenne pepper
½ cup diced tomatoes
1 large green bell pepper, diced
2 stalks celery, sliced 1/4 inch thick
4 green onions, thinly sliced
1 teaspoon salt
1 bay leaf
1 cup uncooked brown rice
3 cups chicken stock
1 pound large shrimp, peeled and deveined
salt and ground black pepper to taste

Steps:

  • Place butter and sausage in a large stockpot over medium heat; cook and stir for 5-6 minutes until sausage begins to brown.
  • Stir in paprika, cumin and cayenne; cook for 1 minute.
  • Stir tomatoes, celery, green pepper, green onions, salt, and bay leaf into sausage mixture.
  • Add brown rice and stir to combine. Stir in chicken stock and turn heat to low. Cover and cook for until rice is just tender, about 45 minutes.
  • Stir in shrimp, replace lid and cook for 5 minutes. Season with salt and black pepper.

LUMBERJACK SAUSAGE JAMBALAYA



Lumberjack Sausage Jambalaya image

This is my husband's jambalaya recipe, off of the Lumberjack sausage package. It is delicious! The original recipe didn't include any meat except for the sausage, however good jambalaya needs some other meat too. We have used chicken, turkey, and pork chop leftovers, all with good results. It needs to be cooked in cast iron to taste right :-) You can also use packaged jambalaya vegetables instead of the onion and peppers if you can find them at the store.

1 lb sausage, cut into 2 in. pieces
1/2-1 lb cooked meat (chicken, turkey, etc)
3/4 cup uncooked rice
1 (10 1/2 ounce) can cream of celery soup
3/4 cup water
1 tablespoon butter
1 tablespoon Worcestershire sauce
1 small onion, chopped
1/2 red pepper, diced
1/4 cup green onion, diced
1 stalk celery, chopped
1/2 teaspoon dried red pepper, to taste

  • Brown onion, pepper, green onion, and celery for a few minutes in the butter.

PORK AND SAUSAGE JAMBALAYA

1 cup cooking oil
2 pounds ground pork
1 pound yellow onions, chopped
4 cups water
1 pound ground sausage
Pinch salt
Pinch black pepper
Pinch red pepper
Pinch garlic powder
Dash hot sauce
1 pound long grain rice (recommended: Mahatma brand)

Steps:

  • In an 8-quart cast iron pot, heat oil on medium to high heat. Add pork and cook until water evaporates and pork is starting to brown. Remove excess oil leaving just a small amount in bottom of pot. Add onions to oil and cook on medium to high heat until the onions and pork have fully browned. Add water and sausage to pot and bring to a boil. Add salt, black pepper, red pepper, garlic powder and hot sauce, to taste. Boil on medium heat 10 to 15 minutes.
  • Add rice and stir frequently to keep from sticking to pot. Stir for 7 to 8 minutes until rice has soaked up liquid. Put lid on pot and heat on low for 10 minutes. Lift lid and run spoon on side of pot 4 times to allow water to drain to bottom. Seal rice with back of spoon and replace lid. Cook for 15 minutes, then turn off the heat. Turn rice over with spoon to fluff and serve.

1/2 cup butter
2 yellow onions, chopped
4 stalks celery, chopped
5 green onions, chopped
1 large green bell pepper, chopped

1 serrano chili pepper, finely chopped with seeds
2 bay leaves
1 tablespoon creole seasoning
1 teaspoon ground cayenne pepper
1/2 teaspoon dried thyme, crumbled
1 1/2 lbs andouille sausages or 1 1/2 lbs smoked sausage, sliced into 1/2 inch slices,then cut into quartered wedges
2 (14 1/2 ounce) cans chicken broth
1 (14 1/2 ounce) can diced tomatoes with juice
3 cups long-grain rice

Steps:

  • Melt butter in large pot over medium-high heat.
  • Add the onions, green onions, bell pepper, garlic, serrano chile, bay leaves, Creole Seasoning, cayenne pepper and thyme.
  • Cover and cook until vegetables are tender, stirring occasionally, about 15 minutes.
  • Add sausage, broth, tomatoes and rice.
  • Bring mixture to simmer.
  • Reduce heat to low, cover and cook until rice is very tender, stirring occasionally, about 30 minutes to 45 minutes.

Steps:

  • Microwave jambalaya mix according to package directions. Meanwhile, saute sausage in a large nonstick skillet. Add onion and peppers; saute 4-5 minutes longer or until tender. Add tomatoes and heat through. Stir into jambalaya mixture.
