This no-bake Greek yogurt cheesecake is perfect for parties or as a post-dinner dessert.

½ cup butter
9 whole graham crackers
¼ cup packed dark brown sugar
¼ teaspoon sea salt
2 ½ teaspoons unflavored gelatin
1 tablespoon cold water
3 (8 ounce) packages cream cheese, at room temperature
2 cups whole-milk Greek yogurt, at room temperature
½ pinch white sugar
1 tablespoon lemon juice
1 teaspoon lemon zest
1 pinch sea salt
1 teaspoon vanilla extract
4 cups fresh blueberries
3 tablespoons packed dark brown sugar
2 tablespoons poppy seeds
2 tablespoons lemon juice
1 teaspoon lemon zest

Steps:

  • Heat butter in a small saucepan over medium-low heat until it smells nutty and brown bits form on the bottom, 15 to 17 minutes. Don't crank up the heat to try to get there faster; you'll just end up with burned butter.
  • Meanwhile, pulse together graham crackers, brown sugar, and salt in a food processor until fine crumbs form. Carefully pour butter into crumb mixture while food processor is running. Press combined mixture into bottom and sides of a 10-inch tart pan with a removable bottom. Chill for 1 hour or freeze for 20 minutes until set.
  • Stir together gelatin and cold water in a small bowl. Let stand for 5 minutes, then microwave until gelatin dissolves, about 10 seconds.
  • Beat cream cheese in a bowl with an electric mixer for 30 seconds. Add yogurt, white sugar, lemon juice, lemon zest, salt, and vanilla. Beat until smooth, then beat in gelatin. Pour mixture into the chilled crust. Chill until set, about 2 hours.
  • Stir together blueberries, brown sugar, poppy seeds, lemon juice, and lemon zest. Scatter topping over cheesecake.

9 whole low-fat cinnamon graham crackers, broken in half
2 tablespoons unsalted butter, melted
2 8-ounce packages Neufchatel cream cheese, softened
2 8-ounce packages fat-free cream cheese, softened
1 1/2 cups sugar
1 cup reduced-fat sour cream
2 large eggs plus 3 egg whites
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
1 teaspoon finely grated lemon zest

Steps:

  • Preheat the oven to 350 degrees F. Wrap the outside of a 9-inch springform pan with foil to prevent leaks. Coat the inside of the pan with cooking spray.
  • Pulse the graham crackers in a food processor until crumbled. Add 1 to 2 tablespoons water and the butter; pulse until moistened. Press the crumbs onto the bottom of the prepared pan. Bake until browned, about 8 minutes. Let cool, about 10 minutes.
  • Meanwhile, beat both cream cheeses and the sugar with an electric mixer on medium-high speed until smooth, about 5 minutes. Beat in the sour cream on low. Lightly whisk the 3 egg whites in a bowl, then add to the cheese mixture along with the 2 whole eggs, flour, vanilla and lemon zest. Beat on medium speed until fluffy, about 3 minutes. Pour over the crust.
  • Place the cheesecake in a roasting pan and add enough warm water to come one-quarter of the way up the sides of the springform. Bake until the cake is set but the center still jiggles, about 1 hour 10 minutes. Turn off the oven; keep the cheesecake inside with the door closed for 20 minutes.
  • Remove the cake from the water bath and transfer to a rack. Run a knife around the edge, then cool completely. Chill until firm, at least 8 hours. Top as desired.

3/4 cup egg substitute
1 cup fat-free sour cream
1 cup reduced-sugar cherry pie filling

Steps:

  • In a bowl, beat cream cheese, 2/3 cup sugar and 1/2 teaspoon vanilla until fluffy. Gradually add egg substitute; beat until smooth. Pour into a 9-in. pie plate that has been coated with cooking spray. Bake at 350° for 30-35 minutes or until puffy and light brown around the edges. 32 ounces low-fat plain yogurt
2 (8 ounce) packages fat free cream cheese
1 cup sugar
4 egg whites, lightly beaten
2 tablespoons flour
2 teaspoons vanilla extract

Steps:

  • Using layered cheesecloth, strain the whey from the yogurt overnight to make yogurt cheese.
  • Preheat the oven to 300°F and place an oven safe dish containing warm water on the lowest rack.
  • In a large mixing bowl, cream together the cream cheese and sugar.
  • Fold in yogurt cheese, egg whites, flour and vanilla until well combined.
  • Pour into a non-stick spring form pan and bake on the highest oven rack for one hour.
