Wonderfully tangy, barely sweetened with raw honey, this easy tomato salad dressing is perfect drizzled over fresh greens, mixed into pasta salad, or used as a marinade for steak or chicken! Nothing mixes together more quickly than a homemade vinaigrette! Enjoy! Makes about 3 cups.

1/2 cup pure water
1/2 cup apple cider vinegar
1-1/2 cups extra virgin olive oil
4 tablespoons tomato paste
2 tablespoons raw honey (or to taste)
1 teaspoon ground black pepper
2-1/2 teaspoons sea salt
1 teaspoon prepared mustard

Steps:

  • Blend all ingredients thoroughly in high-powered blender such as the Vitamix.
  • Pour into glass jar or dressing container.
  • Refrigerate.

Number Of Ingredients 7

1 cup garlic-infused olive oil
1/2 cup white balsamic vinegar (reduced by 1/3)
3 cloves garlic, sliced
2 large tomatoes, peeled, chopped and divided
3 tablespoons chopped fresh tarragon, divided
Kosher salt and freshly cracked black pepper
Tomato slices, for serving

Steps:

  • In a non-reactive bowl, whisk together the oil and vinegar until completely combined. Add the garlic, half the tomatoes and half the tarragon. Season with salt and pepper and stir to coat. Cover and chill 6 hours.
  • Strain the mixture through a fine sieve and discard the solids. Stir in the remaining tomatoes and tarragon. Serve over slices of fresh tomato.
  • BYOC: Use your favorite herb here and tailor this dressing to the meal or your family's favorite flavors... fresh thyme oregano, basil, chervil, parsley, anything goes! 4 plum tomatoes, halved lengthwise
1 tablespoon red-wine or Sherry vinegar
1 1/2 teaspoons honey, or to taste
1 teaspoon freshly grated lemon zest
1/2 cup water

Steps:

  • Preheat oven to 450°F.
  • In a shallow baking pan arrange tomatoes in one layer, cut sides up, and season with salt and pepper. Roast tomatoes in middle of oven about 35 minutes, or until very soft and skin is dark brown, and cool to room temperature.
  • In a blender purée tomatoes with vinegar, honey, zest, water, and salt and pepper to taste. Dressing keeps, covered and chilled, 1 week. Serve dressing with crisp lettuce or steamed vegetables.

3 large or 5 medium fresh tomatoes, thickly sliced
1/3 cup olive oil
1/4 cup red wine vinegar
1 teaspoon salt, optional
1/4 teaspoon pepper
1/2 garlic clove, minced
2 tablespoons chopped onion
1 tablespoon minced fresh parsley
1 tablespoon minced fresh basil or 1 teaspoon dried basil

Steps:

  • Arrange tomatoes in a large shallow dish. Combine remaining ingredients in a jar; cover tightly and shake well. Pour over tomato slices. Cover and refrigerate for several hours.

Amazingly Sweet Slow-Roasted Tomatoes image

These don't look like they are going to taste as amazing as they do, and I know it might be asking a lot to have the oven on for 2 hours on a hot summer day. But it's on low and the end result will be worth it. Lean over the plate when you bite into the tomatoes, as the juice may squirt. You can eat these as a snack or a side dish, or put them through a food mill for an incredibly sweet sauce.

Yield Serves 4 as a snack, side dish or sauce.

Number Of Ingredients 4

1 pound small plum tomatoes, halved lengthwise
Coarse salt to taste
A tiny amount of sugar
1 tablespoon extra virgin olive oil

Steps:

  • Preheat the oven to 300 degrees. Put the halved tomatoes in a bowl and toss with the olive oil. Oil a rack that will fit on top of a baking sheet. Place foil on the baking sheet and oil the foil, and place the rack on top. Place the tomatoes, cut side up, on the rack. Sprinkle with coarse salt and a tiny amount of sugar. Place in the oven and roast for 2 hours. Remove from the heat and allow to cool for about 30 minutes. The tomatoes will look a little dry on the surfaces and the skin will be tough. But when you bite into the tomatoes you'll experience a rush of incredibly sweet juice and pulp. If you want to use these for a sauce, put through the fine blade of a food mill.
