I have recently gone vegan, which I love, but I missed one of my favorite things, mashed potatoes. I decided to create a simple vegan and soy-free recipe for the non-chef - me! So here it is - a nice base recipe if you are lactose intolerant (like my son) and/or vegan. Hope you like!

6 baby red potatoes, halved, or more to taste
¼ cup unsweetened almond milk, or more to taste
½ lemon, juiced, or more to taste
1 tablespoon soy-free buttery spread (such as Earth Balance®), melted, or more to taste
1 teaspoon minced garlic, or more to taste
½ teaspoon salt, or to taste

Steps:

  • Bring a large pot of water to a boil. Add potatoes. Reduce heat to medium-low and simmer until potatoes fall apart with pierced with a fork, about 15 minutes. Drain.
  • Place potatoes in a deep bowl; mix lightly. Add almond milk, lemon juice, buttery spread, garlic, and salt. Mash to desired consistency.

6 cups quartered peeled potatoes (about 2 lbs.)
1/2 cup nonfat milk
1 (8 ounce) package philadelphia fat free cream cheese, softened
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon pepper
paprika

Steps:

  • PLACE potatoes and enough water to cover in 3-quart saucepan. Bring to boil. Reduce heat to medium; cook 20 to 25 minutes or until tender. Drain.
  • MASH potatoes, gradually stirring in milk, cream cheese, onion powder, salt and pepper until light and fluffy. Sprinkle with paprika. Serve immediately.

LOW FAT YOGURT MASHED POTATOES

This is one I came up with as a variation of mashed potatoes with sour cream. By substituting fat free or low fat plain yogurt you can reduce the fat in this favourite without compromising on flavour.

4 large potatoes
1/4 cup low-fat plain yogurt or 1/4 cup plain fat-free yogurt
1/4 onion, finely minced
salt & freshly ground black pepper
1 teaspoon dried parsley or 2 tablespoons fresh parsley, finely chopped

Steps:

  • Boil the potatoes in water till tender. Mince the onions finely.
  • Peel them when hot.
  • Mash the potatoes with a ricer/fork.
  • Let them cool a bit.
  • Add the salt and pepper, onions, then add the yogurt and the parsley.

3 potatoes
1 1/2 medium onions
1/2 tablespoon olive oil
1/2 cup yogurt
1/4 teaspoon Worcestershire sauce
salt
pepper

Steps:

  • Peel and cube potaoes.
  • chop the onions.
  • a microwave add a little water, cover and cook until the potatoes are soft. or.
  • In a pot cover the potatoes with water, add a little salt and cook until the potatoes are soft, drain the water.
  • With a minimum of olive oil sauté the onions until soft.
  • While the potatoes are hot, add the onion including the oil to the potatoes.
  • Add the yougert
  • Use a riser or food processor to mash the potatoes.
  • Add more yougert or low fat milk if required.

8 Tbsp cream cheese
1/3 c 2% milk
1/3 c chives, chopped or 2t dried
salt and pepper, to taste

Steps:

  • 1. In medium saucepan over high heat, boil potatoes in 2 inches of water about 12 minutes, or until tender; drain thoroughly.
  • 2. Shake potatoes in pan 1 to 2 minutes over low heat to dry thoroughly.
  • 3. Mash potatoes with electric mixer or potato masher.
  • 4. Mix in cheese until melted.
  • 5. Mix in milk and chives.
  • 6. Season with salt and pepper. (Do not over beat).

Low-Fat Mashed Potatoes with Gravy image

Try these low-fat potatoes and gravy with your next meal -- you'll be pleasantly surprised.

2 lb russet potatoes, peeled and cut into chunks
1/2 c fat-free milk
2 Tbsp butter, melted
1/2 tsp salt
1/4 tsp pepper (or more to taste - i like more pepper)
FOR THE GRAVY
4 c fat-free, reduced sodium beef or chicken broth
3 Tbsp cornstarch
1/4 c water
1/2 tsp dried thyme
1/4 tsp pepper

Steps:

  • 1. In a large stockpot, add potatoes to salted water and bring to a boil over high heat. Reduce the heat to medium and simmer for approx. 15 minutes or until potatoes are fork tender. Drain thoroughly and return to the pot.
  • 2. Mash potatoes with a masher or electric mixer until all lumps are gone. Add the milk, butter, salt & pepper. Mix thoroughly until smooth and fluffy.
  • 3. For the gravy: Bring the broth to a boil in a medium saucepan. Boil for approx 10 minutes, or until reduced by one third.
  • 4. In a small bowl, combine the cornstarch and water and mix well. Gradually add the cornstarch mixture to the hot broth, stirring constantly. Reduce heat to low and continue cooking, stirring constantly for 4-5 minutes or until thickened. Add the thyme and pepper - adjust seasoning as needed. Stir well.
  • 5. To serve, top each serving of mashed potatoes with gravy or serve the potatoes with the gravy on the side.
