½ cup vegetable oil
1 ½ cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
½ cup unsweetened cocoa powder
1 ½ teaspoons baking soda
1 teaspoon salt
2 cups shredded zucchini
½ cup chopped walnuts
6 tablespoons unsweetened cocoa powder
¼ cup margarine
2 cups confectioners' sugar
¼ cup milk
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, mix together the oil, sugar and 2 teaspoons vanilla until well blended. Combine the flour, 1/2 cup cocoa, baking soda and salt; stir into the sugar mixture. Fold in the zucchini and walnuts. Spread evenly into the prepared pan.
  • Bake for 25 to 30 minutes in the preheated oven, until brownies spring back when gently touched.
  • Make frosting while brownies cool. Melt together the 6 tablespoons of cocoa and margarine; set aside to cool.
  • Meanwhile, blend together the confectioners' sugar, milk and 1/2 teaspoon vanilla. Stir in the cocoa mixture. Spread over cooled brownies before cutting into squares.

1/2 cup sugar
1/2 cup Splenda granular (or similar)
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/4 teaspoon baking powder
3 tablespoons unsweetened cocoa powder
1 cup zucchini, unpeeled and grated
1/4 cup nonfat sour cream
1 egg white, whipped

Steps:

  • Preheat oven at 350°.
  • Prepare pan a 8 x 4x 2-inch loaf pan with cooking spray and flour; set aside.
  • In a mixing bowl, combine flour, sugar, cinnamon, baking soda, nutmeg, baking powder & cocoa.
  • In another mixing bowl, combine zucchini, sour cream & egg white.
  • Mix dry ingredients with wet ingredients just until moistened.
  • Pour batter into prepared pan.

2 2 small or medium bananas mashed
1 1/2 c cup sugar
2 tsp vanilla extract
1/2 c cocoa powder
1 1/2 tsp baking soda
1/2 tsp salt
2 c finely shredded zucchini
2 c all purpose flour
1/2 c walnut pieces

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Grease and flour an 9x13 inch baking pan.
  • 3. In a large bowl, mix together the applesauce, mashed bananas and sugar.
  • 4. vanilla and cocoa and mix together.
  • 5. Then add baking soda, salt, and zucchini and mix together. Add flour and walnuts and mix together.
  • 6. Spread evenly into a prepared pan. Bake for 25 minutes until brownies spring back when gently touched.

I changed the original recipe ingredients to make them a little healthier. they are chewy and chocolately, with a hint of Zucchini. I use Splenda for the sugar substitute. I don't use any other kind and have no knowledge of how much to use of other substitutes.

1 cup sugar
1 cup sugar substitute
1 teaspoon salt
3/4 cup applesauce
1/4 cup water
2 teaspoons vanilla
1 1/2 teaspoons baking soda
1/4 cup cocoa
1 cup white flour
1 cup whole wheat flour

Steps:

  • Cream together the zucchini, sugar, salt, applesauce, water, and vanilla. Mix in the remaining ingredients. Pour into a greased and floured 9 x 13 pan and bake at 350 degrees for 20 minutes, or until a toothpick inserted in the middle comes out clean.
