12 ounces powdered sugar
1 1/4 ounce cocoa powder
2 tablespoons all-purpose flour
3 egg whites
8 ounces chopped pecans

Steps:

  • Preheat oven to 300 degrees F. Line cookie sheet with parchment paper. Place sugar, cocoa and flour in mixer bowl and beat until well blended. Beat in egg whites, 1 at a time, scraping bowl as necessary. Beat at high speed for 1 minute. Beat in pecans. Drop by tablespoonsful onto sheets, leaving 2 inches between cookies for spreading. Bake 1 sheet at a time for 15 minutes, turning sheet around halfway through baking time. Remove from oven; cool on paper. Place cookies on paper in freezer; freeze for 1 hour. Remove from freezer, peel paper off cookies. Store in an airtight container. These don't keep very long, so eat quickly -- as if that's a problem.

These are so fudgy and chewy they almost melt in your mouth. I was looking for a low-fat chocolate cookie but never expected to find something this good. These make me feel like I'm in chocaholic's heaven! I found these online, but they're originally from a Karo pamphlet.

Number Of Ingredients 7

1 1/2 cups flour
1/2 cup sugar
1/2 cup unsweetened cocoa
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup Karo syrup (light or dark)
3 egg whites (or 1/4 cup plus 2 tbsp egg beaters)

Steps:

  • Spray cookie sheets with cooking spray.
  • In large bowl, combine flour, sugar, cocoa, baking soda and salt (I like to sift them together to destroy any lumps in the cocoa).
  • Stir in corn syrup and egg white until blended (dough will be thick and slightly sticky).
  • Drop by rounded teaspoon onto prepared cookie sheets.
  • Bake at 350 degrees for 7 to 9 minutes or just until set (cookies will be soft when pressed).
  • Do not overbake.
  • Cool on wire rack.

1 1/2 cups flour
1/2 cup unsweetened cocoa
1 egg white
1 teaspoon vanilla extract

3/4 cup dried tart cherry (or raisins)

Steps:

  • Preheat oven to 350.
  • In large bowl, combine low fat sweetened condensed milk, flour, cocoa, egg white and vanilla.
  • Stir in chocolate chips and cherries.
  • Spray baking sheets with cooking spray.

3 egg whites
1 pinch salt
1 cup sugar (scant)
3 tablespoons cocoa, sifted (not Dutch)
1/2 teaspoon vanilla extract
1/2 ounce semisweet chocolate, finely chopped

Steps:

  • Preheat oven to 275 degrees F and place oven racks in the middle positions.
  • Line one or two sheet pans with foil or kitchen parchment. Set aside.
  • Beat the egg whites with the salt to a soft peak stage (when the tops of the peaks fall over when whip is removed).
  • Add the sugar slowly, beating until the mixture is very thick.
  • Stir in the cocoa powder, vanilla, and chopped chocolate.
  • Place walnut-size mounds of the batter on the sheet pans and bake in the preheated oven for 30 minutes until dry on the surface but still soft inside.
  • Slide the foil or parchment with its cookies onto a cooling rack and cool for 5 minutes.
  • Peel the foil or parchment off the still-warm cookies and cool them completely on rack.

You would never believe that a cookie without butter and whole eggs could be this good. I have made these several times and each time I get a "mmmm...these are really good mom!" I came across this Chocolate Chip Cookie (CCC) recipe in Cooking Light. being an AVID CCC lover I knew I had to try. These were almost as good as the original Tollhouse recipe and without the worry of added fats (ie butter, whole eggs) I feel better about eating these. The result is a thick, chewy Chocolate Chip Cookie. Oh - the original recipe didn't call for butter extract - that was my own addition...I've also skipped the chilling and everything worked out just fine! The original recipe called for corn syrup - but honey works just as well and is not nearly as bad for you as HFCS...**UPDATE** I also wanted to add that recently we have been using organic virgin coconut oil instead of canola and it gives it the yummiest, most subtle "something" flavor. We also like to use these for ice cream sandwiches - because there is no butter the cookies dont get rock hard and they keep their nice chewy consistency. 2 1/2 tablespoons light corn syrup or 2 1/2 tablespoons honey
3/4 cup brown sugar
1/2 cup granulated sugar
1 1/2 teaspoons vanilla extract
1 teaspoon butter flavor extract
3 large egg whites
1 1/4 cups all-purpose flour
1 1/4 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup semi-sweet chocolate chips
cooking spray (optional)

Steps:

  • Combine oil and syrup in large bowl, stir with whisk, add sugars and stir until well blended, add vanilla, butter flavoring and egg whites.
  • Lightly spoon flours into dry measuring cups and combine flours, baking soda and salt in a small bowl - add to sugar mixture, stirring until well combined.
  • Add chips - cover and chill 1 hour.
  • Preheat oven to 375°.
  • Drop dough by level tablespoons, 2-inches apart on cookie sheets coated with cooking spray.
  • Bake for 8 minutes, remove and cool on pan for 2 minutes; remove and cool on wire racks.
  • I use Silpat liners - thus not needing cooking spray - I recommend everyone buy some Silpat liners (I've given them away to almost everyone I know!).

Steps:

  • Preheat oven to 350°F Grease two cookies sheets.
  • Beat egg whites until frothy.
  • Sift sugar, cocoa and flour into the whites.
  • Add water.
  • Continue beating on high for a few minutes until the mixture thickens.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, cream the butter with the brown and white sugars. Stir in the vanilla, egg white, and water. Sift together the flour, baking soda, and salt; stir into the creamed mixture. Mix in the chocolate chips.

1 (2 1/2 ounce) container prune baby food
1 cup white sugar
1 egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
7 tablespoons unsweetened cocoa
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup maraschino cherry (drained)
1/2 cup chopped walnuts (optional)

Steps:

  • Preheat oven to 350.
  • Mix prunes & sugar until smooth. Blend in egg & vanilla. In separate bowl combine dry ingredients. Add dry ingredients to the sugar mixture. Mix in cherries & walnuts (note: I use a stand mixer & don't bother to chop the cherries. If you stir by hand you may want to chop the cherries before mixing).
  • Drop by spoonful onto baking sheet. Cook for 8-10 minutes. These should be a bit soft in the middle so they turn out brownie-like in consistency.
