Once Fall turns to Winter, I love curling up with a hot bowl of soup and a good book with the snow falling outside. This soup is a twist on the traditional chicken noodle but simple & easy. If you plan on stretching this beyond one meal, add the lime juice to your bowl rather than in the entire pot. Edited to add: I made this over the holidays and for spice, used a can of diced tomatoes with Southwest seasoning and a can of Rotel with cilantro and lime. Very spicy!

Number Of Ingredients 8

1/2 cup chopped onion
4 ounces green chilies (I usually buy canned)
5 cups chicken broth (if you want it thicker, reduce to 4 cups)
2 cups cooked long-grain rice (I use wild rice)
10 ounces whole or diced tomatoes and green chilies, undrained
5 ounces chicken breasts, cubes (about 2 large)
1 tablespoon lime juice
low-fat tortilla chips

Steps:

  • In a large saucepan, cook onions and chilies until tender.
  • Add broth, rice, tomatoes, and chicken cubes. Mix well. Bring to a boil.
  • Reduce heat. Cover and simmer for 20 minutes.
  • Stir in lime juice.
  • Top each serving with tortilla chips.

1 lb chicken breast
1 large onion
3 garlic cloves
1 bell pepper
1 poblano pepper
1 jalapeno pepper
1 tablespoon vegetable oil
1 lb baby carrots
8 ounces fresh mushrooms
10 ounces frozen spinach, defrosted
5 (15 ounce) cans chicken broth
1 (28 ounce) can diced tomatoes
5 tablespoons cumin
4 tablespoons chili powder
salt
pepper
fresh cilantro
lime

Steps:

  • Soften onion,garlic,pablono and jalepeno in oil over medium heat.
  • Add chopped up chicken.Stir and cook for a minute or two.
  • Add cumin,chili powder,salt and pepper.Stir and cook for a couple minutes.
  • Add drained tomatoes,mushrooms,carrots,spinach and chicken broth.
  • Bring to soft boil and simmer for 45 minutes.
  • Garnish with crumbled tortilla chips,cilantro,lime juice,a little lowfat shreaded cheese and lowfat sour cream.

1 14.5oz can petite diced tomatoes
1 14.5oz chicken broth
1 10oz can red enchilada sauce
2 cups water
1 can black beans, drained and rinsed
1 4oz can diced green chilies
1/2 medium onion, chopped
2 cloves garlic, minced
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon dried cilantro
1/4 teaspoon hot pepper flakes
1 bay leaf
Salt & pepper
1 10oz package frozen corn
2 small cooked chicken breasts, shredded
Tortilla chips & shredded cheese

Steps:

  • 1. Place ingredients from tomatoes through frozen corn in a large crock pot and cook on low for 6-8 hours. Add shredded chicken for last 30 minutes of cooking. 2. Crumble several tortilla chips in the bottom of a bowl. Top with soup, more crumbled tortilla chips and cheese. Enjoy! It doesn't get much easier, tastier and soul warming than this! You literally drop everything into the crock pot, come back 7.5 hours later and are completely ready to eat!
