BREAKFAST PIZZA RECIPE
Steps:
- Preheat the oven to 450F. Place a silicone liner on a large baking sheet or spray with oil if using parchment.
- In a medium bowl combine the flour, baking powder and salt and whisk well.
- Add the yogurt and mix with a fork or spatula until well combined, it will look like small crumbles.
- Lightly dust flour on a work surface and remove dough from the bowl, knead the dough a few times until dough is tacky, but not sticky, about 20 turns (it should not leave dough on your hand when you pull away).
- Divide into 4 equal balls about 3-3/8 oz each.
- Sprinkle a work surface and rolling pin with a little flour roll the dough out into thin ovals 7 to 8 inches in diameter and place on the prepared baking sheet.
- Top with spinach, mozzarella and tomatoes, leaving the center open for the egg. Gently break an egg the center of each dough and finish with bacon.
- Bake 10 to 12 minutes, until the crust is golden and the egg is set. Season with salt and pepper.

Steps:
- Mix together potatoes and onions in small bowl.
- Lightly spray 10-inch nonstick skillet with cooking spray and add potato-onion mixture. Flatten mixture with spatula and cook until lightly browned on bottom, 7 to 9 minutes. Flip and cook other side.
- Mix tomato paste and water with whisk or fork in small bowl. Spread evenly over potatoes. Sprinkle oregano over tomato mixture.
- Pour egg substitute evenly over surface and cover skillet. Cook 4 minutes.
- Sprinkle mozzarella and bacon bits evenly over surface. Cover and cook 1 minute.
- Remove from heat. Slide potatoes onto serving plate. Cut into 4 wedges with pizza cutter or serrated knife.

3 MEAT BREAKFAST PIZZA
We love pizza--even for breakfast. Feel free to add any of your favorite toppings too. This is very filling and great served with fresh fruit. Also super as a light lunch or supper. I will make a couple of these on the weekend and wrap individual wedges that the kids grab to pop in the micro and eat as they wait for the bus.

Steps:
- Preheat oven to 400°F.
- In saucepan add water and milk.
- Whisk in gravy mix, and bring to a boil.
- Simmer 2-3 minutes, stirring constantly til thick.
- Cool slightly.
- In large skillet, melt margarine.
- Beat eggs with milk and add to skillet.
- Scramble eggs in skillet until set and in small chunks.
- Place crust on pizza stone or cookie sheet.
- Spread gravy evenly over the top.
- Sprinkle meats over gravy.
- Sprinkle eggs over meats.
- Salt and pepper to taste.
- Sprinkle cheese over eggs evenly.
- Bake at 400°F for 10-15 minutes until bubbly and cheese is melted and browning.
- Cool slightly and cut into wedges.
