16 ounces frozen chopped spinach, thawed and well drained
1 1⁄2 cups ricotta cheese
1 ⁄2 cup mozzarella cheese, shredded
1 ⁄4 cup Parmesan cheese, grated
6 large eggs, beaten until frothy
1 teaspoon Dijon mustard
1 ⁄2 teaspoon Italian seasoning
1 ⁄4 teaspoon garlic powder
1 ⁄4 teaspoon kosher salt
1 ⁄8 teaspoon black pepper

Steps:

  • Preheat the oven to 350°F. Spray a 1 1⁄2 quart casserole dish with cooking oil and layer the bottom evenly with the drained spinach. In a bowl, mix the remaining ingredients until combined. Pour mixture into the spinach lined dish. Bake for 35 to 40 minutes, until slightly browned around the edges and center is firm to touch. Serve warm, garnished with fresh basil and diced tomatoes, if desired. HINTS: Try adding 1⁄4 cup diced bell peppers to the casserole before baking for extra color and flavor!

2 tablespoons margarine
2 tablespoons minced garlic
5 skinless, boneless chicken breasts, chopped
1 pinch garlic powder, or to taste
1 pinch dried basil, or to taste
1 pinch dried oregano, or to taste
salt and ground black pepper to taste
1 (16 ounce) container ricotta cheese
2 cups shredded mozzarella cheese, divided
1 cup shredded Parmesan cheese
½ cup milk
1 large egg
1 (28 ounce) jar vodka marinara sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt margarine in a roasting pan with minced garlic in the preheated oven. Add chicken, garlic powder, basil, oregano, salt, and pepper; mix well.
  • Bake in the preheated oven until chicken is no longer pink, 20 to 25 minutes. Remove from the oven but leave the oven on.
  • Mix ricotta, 1 cup mozzarella cheese, Parmesan cheese, milk, and egg together in a bowl. Spread evenly over the top of the chicken. Pour vodka marinara sauce over top and spread evenly.
  • Return to the oven and bake for 20 minutes. Sprinkle remaining mozzarella cheese on top. Continue to bake until melted, about 10 minutes.
