2 (15 ounce) cans French style green beans, drained well
4 ounces mushroom stems and pieces, drained
1/2 medium yellow onion, sliced, sep into rings
2 stalks celery, sliced small
2 tablespoons butter
1/4 cup heavy cream
1/4 cup mayonnaise
1 cup diced cheese (cheddar, jack, pepper jack, cream - your choice)
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder

Steps:

  • Melt the butter in a skillet and saute the onions, celery and mushrooms until soft (about 7 to 8 minutes).
  • Mix the mayonnaise and cream.
  • Mix everything together in a casserole and bake at 350°F, covered, for 30 minutes.
  • Uncover and brown, if desired.

Everyone loves this. . .even veggie haters. It is a good way to sneak in a veggie on the kids or veggie resistant hubby!

Number Of Ingredients 6

3 can(s) french cut green beans
3 lb lean ground beef, pork, chicken or turkey
1 small onion, chopped
1 jar(s) 26 oounce jar of low carb spaghetti sauce (your favorite)
3 c mozzarella cheese, shredded
grated parmesan cheese

Steps:

  • 1. Preheat oven to 375
  • 2. Place green beans into a colander, set aside to drain.
  • 3. Spray skillet with non stick spray, saute chopped onion until translucent (about 5 minutes) And hamburger and cook until browned.
  • 4. Stir in spaghetti sauce, simmer five minutes, uncovered.
  • 5. While meat is simmering, take paper towels and press the excess water out of the green beans. Get the green beans as dry as possible. (Divide into 3 portions)
  • 6. Spray an 11x13 baking dish with non stick spray.
  • 7. Layer 1/3 of the green beans into the casserole dish. Layer 1/3 of the meat sauce. Layer 1/3 of the mozzarella cheese.
  • 8. Repeat layers two more times, finishing off with the mozzarella cheese.
  • 9. Top with a generous sprinkle of Parmesan cheese.
  • 10. Bake 30 minutes until lightly brown and bubbly.
  • 11. Remove from oven and let rest for five minutes before serving.
  • 12. OPTIONS: You can use taco meat filling instead of spaghetti sauce mixture and cheddar instead of the mozzarella for an enchilada casserole. You can use diced or shredded chicken and Alfredo sauce instead of the spaghetti sauce. (using Alfredo sauce will usually lower the carbs considerably)

My Low Carb Green Bean Casserole image

I came up with this after several tries (experiments?)in an effort to reduce carbs. The traditional version has a very high carb count and lots of flavor. The carbs have been reduced here, but I think the flavor remains. I used bacon, which keeps the salty and crunch of french fried onions. I used Bertolli's Alfredo Sauce w/Portobellos instead of cream of mushroom soup, which keeps the mushrooms we love, but omits needless carbs! I used whole milk- yes whole- because it keeps it creamy and the fat adds flavor. My family loved this version and it's my husband's new favorite at the holidays. And, he's a difficult man to please! Plus it ended up being lower in calories than the traditional version! How great is that? -low carb, less calories.

4 (14 ounce) cans cut green beans
3/4 cup whole milk
1 cup bertolli's mushroom alfredo sauce
6 slices cooked bacon, crumbled
1 teaspoon soy sauce
salt, to taste
pepper

Steps:

  • Note: Recipezaar didn't recognize Bertolli's Alfredo Sauce w/Portobellos in the ingredient list so I had to list it as Bertolli's Mushroom Alfredo Sauce.
  • Heat oven to 325°F Mix green beans, milk, alfredo sauce, soy sauce and salt/pepper to taste in 1.5 qt casserole dish. Sprinkle crumbled bacon over top of mixture. Bake 25 minutes or until hot and bubbly.
  • Makes approx 5 servings (3/4 cup each).
  • Nutritional Information according to my calculations:172 calories,8 g fat,6.4g net carbohydrates, 8g protein.

This luxurious, flavorful, rich casserole is great for the holidays or as an occasional treat... unless you are following a low-carb diet - then it's a weekly must! A favorite with both sides of my family and always gone at potlucks, it is my go-to 'take a dish' that everyone requests!

½ pound sugar-free bacon
2 tablespoons butter
2 stalks celery, finely diced
½ green bell pepper, finely diced
½ medium onion, diced
¼ cup mayonnaise
¼ cup heavy whipping cream
¾ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon garlic powder
2 (15 ounce) cans green beans, drained
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Cook bacon in a skillet over medium heat until crispy, 5 to 10 minutes. Transfer to a plate lined with a paper towel until cool; crumble bacon into a bowl.
  • Melt butter in another skillet over medium heat. Add celery and bell pepper; cook until beginning to get soft, about 3 minutes. Add onion and cover the skillet. Cook over low heat until very soft, 5 to 10 minutes more.
  • Combine mayonnaise and cream in a large bowl. Add salt, black pepper, and garlic powder and stir to mix. Add crumbled bacon, green beans, and Cheddar cheese and toss to distribute sauce. Pour mixture into a 2-quart casserole dish.
  • Bake in the preheated oven until bubbly around the edges, about 30 minutes. Cover with a lid or aluminum foil if the top begins to get too brown.
