CRUSTLESS BACON, SPINACH & SWISS QUICHE - LOW CARB
I've read through a lot of recipes to come up with my version of this quiche. I wanted to make one that is crustless and low carb, and this one is a WINNER! But once I start eating it, I just don't want to stop! I thought I could make it ahead so I could have a quick breakfast on work mornings, but this rarely lasts out the day it was made!

Steps:
- On a foil lined pan, cook bacon in 350 degree F. oven until crisp.
- While bacon cooks, chop onion and shred cheese.
- Heat 1 tablespoon butter and 1 teaspoon oil in skillet over medium heat. Add chopped onion, and stir to coat.
- When onion turns glossy, add thawed spinach, and stir to mix. Heat about 5 minutes, then remove from heat to cool.
- Remove bacon from oven, and place on a paper-towel lined plate to drain.
- Stir together eggs, salt, pepper & heavy whipping cream in a medium bowl.
- Add in cheese, onion/spinach mixture, and bacon. Stir thoroughly to mix.
- Butter a glass pie plate or quiche dish, pour mix in, and pat evenly with a fork.
- Bake in 350 degrees F. oven 25-30 minutes, or until a knife inserted in the center comes out clean.
- Let rest 5 minutes before cutting & serving.
- I bet you can't eat just ONE slice!

LOW-CARB CRUSTLESS HAM & BROCCOLI QUICHE
A friend who is low-carbing it gave me this recipe. I think she got it from a low-carb website; I'm not sure. Use your imagination to come up with filling ingredients - this is simply my favorite variation.

Steps:
- Heat olive oil in a medium sized heavy skillet.
- Saute green onions until soft and add the shredded ham and stir until slightly browned.
- In a large bowl, beat the eggs and heavy cream together by hand; stir in the onions& ham, broccoli,cheese and seasonings.
- Pour into a buttered deep-dish pie plate.
- Bake at 375degrees for 45-50 minutes, or until a knife inserted in the center comes out clean.
- NOTE: You will have to tent the quiche with aluminum foil to prevent over-browning.
- Start checking it halfway through the cooking time.
- Let stand 10 minutes and cut into wedges to serve.

- Preheat oven to 375°F.
- Lightly spray or butter an 8-inch deep-dish pie plate or a 7" X11" casserole dish.
- * Optional: in a saucepan, heat 2 tablespoons Olive Oil on medium-high heat, and add 6 oz. uncooked Spinach, and sauté until wilted, about 2-3 minutes. Set aside.
- In a large bowl, whisk eggs until well blended.
- Add half and half, cottage cheese, salt and pepper and mix well.
- Whisk in well-drained chilies and cheese (and wilted Spinach if desired).
- Pour into prepared dish and bake until top is golden and quiche is set in center, 25 to 30 minutes.
- Cool for at least 5 minutes before cutting into wedges.

- Preheat oven to 350°. Spray muffin pan with nonstick cooking spray.
- Cook bacon in large skillet on medium-high heat until crisp. Drain, cool and crumble.
- In same skillet, cook and stir onion in remaining bacon fat 5 minutes or until tender. Ad spinach, pepper, nutmeg and salt. Cook and stir over medium heat about 3 minutes or until liquid evaporates. Return bacon to skillet and remove from heat.
- Combine ricotta, mozzarella and Parmesan cheeses in large bowl; mix in eggs. Add cooked spinach mixture and combine well.
- Divide mixture evenly to fill 10 muffin cps. Bake 40 minutes or until filling is set. Let stand 10 minutes. Run thin knife around edges to release. Serve hot or refrigerate and serve cold.
LOW-CARB CRUSTLESS QUICHE
DD gave me this idea when she made a crustless quiche using real eggs, cream and a variety of veggies. I substituted egg beaters and my own variety of fresh veggies. It made a hit with DH and me at breakfast this morning.

Steps:
- Chop and slice the veggies.
- Grate the cheese Combine all the ingredients in a bowl and stir.
- Spray an 8" round cake pan with cooking spray.
- Pour the quiche in the cake pan.
- Put in a preheated 350º oven and bake for 20-25 minutes.
- Quiche is done when a toothpick inserted in the center comes out clean.
- Enjoy!
CRUSTLESS TOMATO AND BASIL QUICHE (LOW CARB)
I got this from the Low Sodium Cooking newsletter. This tastes best with fresh garden tomatoes. A great recipe to use up some of the summer garden produce. I used leeks and cheddar cheese because I had those on hand and it still tasted wonderful! You could add a baked crust if you want to, but it's not necessary.

- Preheat oven to 400°F.
- Spray 9" pie pan with cooking spray and layer 1/2 cup of cheese on the bottom.
- Heat olive oil in a large skillet over medium heat and saute onion until soft; layer over cheese in pie pan.
- Sprinkle tomato slices with flour and basil, then saute 1 minute on each side; layer over onions in pie pan.
- In a small bowl, whisk together eggs and milk, season with pepper and pour over the onion/tomato layers in the pie pan.
- Sprinkle top of quiche with remaining 1/2 cup of cheese and bake at 400° F for 10 minutes.
- Reduce heat to 350° F and bake for 15 to 20 minutes, or until filling is puffed and golden brown. Serve warm.

- Preheat oven to 350°F. Prepare a pie plate with oil. Set aside.
- In a small skillet saute the dice onion in the butter until soft; about 6 minutes.
- In a large bowl whisk together the eggs and cream. Add the pumpkin, diced ham, sauteed onion, chopped parsley and cheese. Season with salt and freshly ground black pepper (about 1/4 tsp each) and the cayenne pepper (optional).
- Pour into prepared pie plate and bake for 30-35 minutes until puffed and set in the center. Transfer to a wire rack to cool. Enjoy warm or cold.
