CHUNKY SALMON CHOWDER
Creamy and chunky with tender salmon and veggies, this is a home-style Salmon Chowder that everyone will love! And, it's on the table in under 30!

Steps:
- Sautee the onions, carrots (omit if strict keto), celery, and garlic in a heavy-bottomed pan over medium-high heat in the oil until translucent, about 4-6 minutes.
- Add the chicken stock and bring to a simmer. Simmer for about 10-12 minutes or until veggies are tender.
- Chunk the salmon and add it to the simmering pot.
- Add the cream and dill and season with salt and pepper. Add more to suit your taste.
- Serve with some of the chopped parsley on top.

EASY CREAMY SALMON SOUP- LOW CARB
This is an easy and delicious low carb soup.

- 1. Place spinach in a strainer, and using a clean kitchen towel (or paper towels) squeeze excess liquid out of the spinach. Season the salmon steaks with salt and pepper, and cook. I used the microwave to save time, but you can bake them. Allow to cool and then flake them using a fork.
- 2. In a medium-sized saucepan over medium low to medium heat, melt the butter. Add the onion and celery, and cook until softened, about 5-7 minutes.
- 3. Add the half and half, cream, flaked salmon, drained spinach, salt, thyme, and nutmeg to saucepan. Increase heat to medium, and cook just until heated through, about 6-7 minutes. Serve and enjoy!

- In a large saucepan, saute celery, onion, green pepper and garlic in butter until the vegetables are tender. Add broth, potatoes, carrots, salt, pepper and dill; bring to a boil. , Reduce heat; cover and simmer for 40 minutes or until the vegetables are nearly tender. Stir in the corn, cream and salmon. Simmer for 15 minutes or until heated through. If desired, garnish with bacon, chives and cracked black pepper.
