Time 20m

Number Of Ingredients 10

2 salmon filets, skinless
1/2 bag(s) (16 oz) frozen spinach, thawed
2 Tbsp celery (finely minced)
2 Tbsp onion, (finely minced)
1 Tbsp butter
1 1/2 c half and half
1 c heavy cream
1/4 tsp salt
1/4 tsp thyme, dried
pinch nutmeg

Steps:

  • 1. Place spinach in a strainer, and using a clean kitchen towel (or paper towels) squeeze excess liquid out of the spinach. Season the salmon steaks with salt and pepper, and cook. I used the microwave to save time, but you can bake them. Allow to cool and then flake them using a fork.
  • 2. In a medium-sized saucepan over medium low to medium heat, melt the butter. Add the onion and celery, and cook until softened, about 5-7 minutes.
  • 3. Add the half and half, cream, flaked salmon, drained spinach, salt, thyme, and nutmeg to saucepan. Increase heat to medium, and cook just until heated through, about 6-7 minutes. Serve and enjoy!

NORTHWEST SALMON CHOWDER

Northwest Salmon Chowder image

I've lived on a farm in the Yakima Valley all my life. I have a big garden, and by the end of fall, my cellar shelves are full of canned fruits and vegetables. This recipe uses some of the root vegetables I grow...along with the delicious salmon that is so plentiful here. -Josephine Parton, Granger, Washington
