2 cups broccoli floret
1 clove garlic, minced
1 cup grated parmesan cheese
1 egg
2 tablespoons olive oil, divided
2 boneless, skinless chicken breasts, cubed
salt, to taste
pepper, to taste
1 cup pesto
1 ½ cups cherry tomato, halved
1 tablespoon fresh basil, chopped

Steps:

  • Preheat oven to 375˚F (190˚C).
  • In a food processor add the broccoli, Parmesan, 1 clove of garlic, 1egg and 1 tablespoon of olive oil. Pulse until mixture forms a dough like texture, about 2 minutes.
  • Place 1 tablespoon of the broccoli mixture and press into a well greased muffin tin. Form the mixture into a cup, making the bottom and sides ½-inches (1 cm) thick.
  • Bake for about 30 minutes until the edges are golden and crispy and the bottom is firm.
  • Cool the broccoli cups. Once cooled, remove from the muffin tin.
  • Heat 1 tablespoon olive oil in a large skillet medium heat. Add the chicken and season with salt and pepper, and cook until golden on all sides.
  • Add the pesto and stir to combine. Remove from the heat.
  • Fill the broccoli Parmesan cups with the pesto chicken. Top with slices of tomatoes and basil.
  • Broccoli Parmesan Cups can be stored up to 3 days and can be reheated in the oven.

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Spray a large baking sheet with cooking spray.

¼ cup dry bread crumbs
¼ cup grated Parmesan cheese
¼ teaspoon dried thyme
¼ teaspoon dried rosemary
¼ teaspoon dried oregano
¼ teaspoon garlic powder
sea salt and ground black pepper to taste
2 egg whites
4 skinless, boneless chicken breast halves
1 cup light spaghetti sauce
cooking spray
4 slices light provolone cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix bread crumbs, Parmesan cheese, thyme, rosemary, oregano, garlic powder, salt, and pepper in a small dish.
  • Whisk egg whites together in a shallow bowl. Coat each chicken breast in egg whites and roll in the bread crumb mixture.
  • Spray a large skillet with cooking spray; set over medium-high heat. Cook chicken until coating starts to brown, about 3 minutes per side.

8 - chicken wings
1 teaspoon(s) garlic powder
1/2 teaspoon(s) ground cumin
1/2 teaspoon(s) oregano
1 teaspoon(s) salt
GARLIC PARMESAN SAUCE
1/4 cup(s) unsalted butter, melted
1 clove(s) garlic minced (or garlic powder to taste)
1/4 teaspoon(s) salt
1/2 teaspoon(s) onion powder
dash - black pepper
4 tablespoon(s) parmesan cheese, grated

Steps:

  • Cut the chicken wings at the joints and discard the tip. Season the chicken with garlic powder, cumin, oregano and salt. Fry the wings in oil til crisp and done.
  • Note: if baking these wings, bake at 400 degrees for 40 minutes. Turn at the 30 minute mark.
  • In a bowl, mix the melted butter with the garlic powder, salt, onion powder and black pepper.
  • Pour butter mixture over the chicken pieces and mix in. Sprinkle the parmesan cheese over the chicken. Serve immediately.

1 1/2 lbs thin sliced chicken cutlets
1 (24 ounce) jar victoria caponata
1 (8 ounce) bag finely shredded mozzarella cheese
2 tablespoons dried basil
nonstick cooking spray
lemon juice

Steps:

  • Preheat oven to 400°F.
  • As written by Lv2Sun, in a small bowl combine the mayo, eggs and cream.
  • Be sure that the mayo is blended well and doesn't clump.
  • Crush bags of pork rinds and then, in a separate bowl, combine them with cheese, parsley and garlic salt.
  • Take each cutlet and dip in the egg mixture and then rind mixture.
  • Place the cutlets in a sprayed glass dish.
  • Drizzle with lemon juice.
  • Top the cutlets liberally with the sauce and then with the cheese.
  • (Note, the victorias caponata only has 4 total carbs per serving and is just delicious!).
  • Bake at 400°F for 20 minutes.
  • You can place under the broiler for 2-3 minutes if you like the bubbly look.
  • Tastes fabulous.
  • You can't tell that it is low carb!

Steps:

  • 1. Preheat oven to 350°F.
