This is a delicious and healthy bread based on a recipe that came in the Recipe Booklet accompanying my Christmas present: the Cuisinart Convection Bread Maker! I cannot guarantee that this will work in a non-convection bread machine. This is for the large 2 pounder; the medium 1.5 pounder ingredients are in parens. Make sure that all ingredients are at room temperature, unless noted otherwise.

1 1/2 cups water, 80 - 90 F (1.25 cups)
2 1/2 tablespoons heavy cream, 90 F (2 tablespoons)
1 1/4 tablespoons molasses (1 tablespoon)
3/4 teaspoon salt (1/2 teaspoon)
1 1/4 cups whole wheat flour (1 cup)
2/3 cup vital wheat gluten (1/2 cup)
2/3 cup barley flour (1/2 cup)
2/3 cup oat flour (1/2 cup)
2/3 cup almond flour (1/2 cup)
2 1/2 tablespoons soy protein (2 tablespoons)
1/3 cup sunflower seeds (1/4 cup)
1/3 cup pumpkin seeds (1/4/ cup)
1/3 cup walnuts, chopped (1/4 cup)
1/3 cup pecans, chopped (1/4 cup)
2 1/4 teaspoons instant yeast (2.25 teaspoons) or 2 1/4 teaspoons bread machine yeast (2.25 teaspoons)

Steps:

  • Place ingredients into machine in the order recommended by its manufacturer.
  • Select the Low Carb setting.
  • Select Medium crust (or to taste).
  • Select dough size.
  • Press Start.
  • When cycle is completed, transfer bread to wire rack to cool.
  • Bread slices best when allowed to cool.

Yield 1 loaf (1-1/2 pounds, 16 slices).

Number Of Ingredients 8

1/2 cup plus 2 tablespoons water (70° to 80°)
1/2 cup warm buttermilk (70° to 80°)
1 teaspoon lemon juice
2 tablespoons butter
2 tablespoons brown sugar
1 teaspoon salt
3 cups bread flour
2-1/4 teaspoons active dry yeast

Steps:

  • In bread machine pan, place all ingredients in order suggested by manufacturer. Select basil bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).

This is a based on a recipe in my Cuisinart Convection Bread Maker Recipe Booklet using the low-carb cycle. This is so delicious and healthy! Love it! The default instructions are for the 2 pound large loaf; I've listed quantities for the 1 1/2 pound medium loaf in parens. I cannot vouch that this recipe will work in a bread machine without the low-carb cycle.

1 3/4 cups buttermilk, 80 -90 F (1 3/4 cups)
1 1/4 tablespoons honey (1 tablespoon)
3/4 teaspoon salt (1/2 teaspoon)
1 1/4 cups whole wheat flour (1 cup)
2/3 cup vital wheat gluten (1/2 cup)
2/3 cup barley flour (1/2 cup)
2/3 cup almond flour (1/2 cup)
2 1/2 tablespoons soy protein (2 tablespoons)
2 1/2 tablespoons flax seeds (2 tablespoons)
2 1/4 teaspoons active instant yeast (2 1/4 teaspoons) or 2 1/4 teaspoons bread machine yeast (2 1/4 teaspoons)

Steps:

  • Place ingredients, in the order listed, in the bread pan fitted with the kneading paddle. Place the breadpan in the Cuisinart Convection Bread Maker. presss Menu and select Low Carb.
  • Choose medium crust setting, or to taste. Select dough size.
  • Press Start to mix, knead, rise and bake. When cycle is complete, remove bread to wire rack to cool. Bread slices best when allowed to cool.
