From Gourmet magazine, July, 2001 by Melissa Roberts-Matar. "This lobster salad is wonderful on its own-but piled onto a hot dog bun it becomes a perfect lobster roll. The lobsters may be cooked and shelled 1 day ahead and chilled, covered. The salad can also be made a day ahead of serving. Keep covered and chilled.

4 (1 1/2 lb) live lobsters
1 large shallot, finely chopped
3 tablespoons lemon juice
1/3 cup mayonnaise
1/2 teaspoon salt
2 tablespoons fresh tarragon, finely chopped
1/4 teaspoon black pepper
hot dog bun, spit top (optional)

Steps:

  • Plunge 2 live lobsters headfirst into an 8 quart pot of boiling salted water.
  • Loosely cover pot and cook over moderately high heat for 9 minutes from the time they entered the water, then transfer with tongs to sink to cool.
  • Return water to a boil and repeat with the next 2 lobsters.
  • While the lobsters are cooking, combine shallot, lemon juice, and 1/2 teaspoons salt in in a large bowl and let stand at room temperature for 30 minutes.
  • When lobsters are cool, remove meat from lobster, discard tomalley, roe (if any) and shells.
  • Cut meat into 1/2 inch pieces.
  • Whisk mayonnaise, tarragon, and 1/4 teaspoons black pepper into shallot mixture.
  • Add lobster meat to the mayo blend and toss gently to coat.
  • If serving on hot dog buns, butter and grill or toast the buns if desired.
  • Enjoy this simple and delicious rite of summer!

1/3 cup mayonnaise
1 teaspoon lemon zest
1 lemon, juiced
Salt and freshly ground black pepper
1 stalk finely chopped celery
1 finely chopped shallot
1 tablespoon finely chopped fresh tarragon leaves
1 tablespoon finely chopped chives
3 lobster tails cooked (about 1 pound lobster meat), chopped
Lemon slices, for garnish
Dry rub, for garnish (recommended: Neelys)

Steps:

  • Combine mayonnaise, lemon zest, lemon juice, salt and pepper, celery, shallot, tarragon and chives in a bowl.
  • Add lobster meat to mayonnaise sauce and combine.
  • Rub the rim of 4 martini glasses with a lemon. Dip the rim in some dry rub. Divide the lobster salad between the 4 glasses. Garnish with dry rub and lemon slices.

1 pound cooked lobster meat, diced, from about 3 to 4 whole 1-pound lobsters
1 tablespoon fresh lemon juice
1/2 cup celery, thinly sliced
4 to 6 tablespoons mayonnaise , or more, to moisten
Kosher salt , to taste
Freshly ground black pepper, to taste
Mixed salad greens (or lettuce leaves)
Optional: 1 avocado (peeled, quartered, and brushed with lemon juice), sliced tomatoes, sliced cucumber

Steps:

  • Gather the ingredients.
  • Toss the cooked, diced lobster meat with lemon juice and the celery.

1/4 cup corn
1/4 cup tomatoes, seeded and diced
1/4 cup mayonnaise
1/2 tablespoon fresh tarragon, chopped (or 1/2 tsp dried tarragon)
1 teaspoon fresh lemon juice
salt, to taste
pepper, to taste
romaine lettuce

Steps:

1 egg
1 teaspoon Dijon mustard
1 1/2 tablespoons fresh lemon juice
1/2 teaspoon Worcestershire sauce
3/4 cup canola oil
2 tablespoons coarsely chopped fresh tarragon
1 teaspoon kosher salt
6 Lemon-Thyme Focaccia Rolls (see recipe), split
3 leaves romaine, halved and trimmed to fit the rolls
6 1-pound lobsters, steamed, tail and claw meat shelled and halved lengthwise
6 strips bacon, cooked until crisp, drained and halved crosswise

Steps:

  • To make the mayonnaise, place the egg, mustard, lemon juice and Worcestershire sauce in a blender and process to combine. With the machine running, add the oil in a slow steady stream, blending until mixture is emulsified. Add the tarragon and salt and blend until combined. (Mayonnaise can be made a few hours ahead, covered and refrigerated.)
  • Spread mayonnaise over the bottom of each roll. Top with a piece of lettuce, then the lobster meat and bacon. Cover with the roll tops and serve.

For the Homemade Tarragon Mayonnaise
1 large egg
1T fresh lemon juice
1/2 cup olive oil
1/2 cup vegetable oil
1T chopped fresh tarragon
1/2 t salt
pinch freshly ground white pepper
For the salad
6 large eggs, hard boiled, peeled and chopped
mayonnaise
1/4 cup minced shallots
1/4 t minced garlic
pinch cayenne (optional)
1 (1lb) lobster, cooked until tender, tail meat chopped, claw meat left whole
2 cups mesclun greens, washed and spun dry
1t olive oil
sea salt
freshly ground black pepper
1 firm, ripe Haas avocado, peeled and seed removed, rubbed with fresh lemon juice
8 pencil thin asparagus spears, blanched and shocked in ice water, blotted dry
Caviar, or salmon roe, for garnish
chopped fresh tarragon for garnish

Steps:

  • In a food processor or blender, blend the egg and lemon juice for 10 seconds. With the processor running, slowly pour in the oil through the feed tube and process until emulsified. Should the mixture become too thick, with the machine running add water 2t at a time. Add the tarragon, salt, and pepper, and pulse to blend. Transfer to an airtight container and refrigerate for at least 30 minutes before using. (The mayonnaise will keep tightly covered in the refrigerator for up to 24 hours.)Place eggs in medium bowl and add 1/4 cup of the mayonnaise, the shallots, garlic, and cayenne, and mash with a fork to blend. Ad the chopped lobster meat and the additional mayonnaise a little at a time to reach desired consistency. Adjust seasoning, to taste. Cover and refrigerate until ready to serve. In a large bowl, toss the mesclun with the olive oil, salt and pepper to taste. Arrange on a platter. With a sharp knife, cut each avocado half lengthwise almost all the way but not completely to the other end. Place each half seed side down on the lettuce and spread into a fan shape. Place the lobster-egg salad in the center of the 2 avocados and the asparagus spears around the sides of the plate. Top the avocados with a dollop of the mayonnaise, and a little caviar. Sprinkle with the tarragon and serve.
