1 (32 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)
4 slices bacon
2 tablespoons butter
1 shallot, minced
2 tablespoons all-purpose flour
1 ½ cups whole milk
2 tablespoons sour cream
1 pinch ground black pepper
1 pinch nutmeg
1 ½ cups shredded sharp Cheddar cheese, divided
3 green onions, sliced
2 tablespoons sour cream, or to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Arrange potato nuggets in a single layer on a baking sheet.
  • Bake in the preheated oven until lightly golden, 20 to 25 minutes.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and chop coarsely.
  • Melt butter in a saucepan over medium heat; add shallot and cook until fragrant. Stir in flour and cook until light golden, about 2 minutes. Whisk in milk and 2 tablespoons sour cream; stir until smooth and thick, about 5 minutes. Season with black pepper and nutmeg. Stir in 1 cup Cheddar cheese until fully melted.
  • Transfer potatoes to a 9x13-inch baking dish. Sprinkle bacon on top. Pour cheese sauce over the potatoes. Sprinkle remaining 1/2 cup Cheddar cheese on top.
  • Bake in the preheated oven just until cheese melts, about 7 minutes. Remove from the oven; top with green onions and 2 tablespoons sour cream.

1 pkg. (32 oz.) ORE-IDA TATER TOTS
1 container (8 oz.) BREAKSTONE'S or KNUDSEN Sour Cream
1/4 cup KRAFT Classic Ranch Dressing
3 Tbsp. chopped fresh chives, divided
1 pkg. (8 oz.) KRAFT Shredded Cheddar Cheese
4 slices OSCAR MAYER Bacon, cooked, crumbled

Steps:

  • Heat oven to 425ºF.
  • Bake TATER TOTS as directed on package.
  • Meanwhile, mix sour cream, dressing and 2 Tbsp. chives until blended.
  • Spread TATER TOTS onto platter; top with sour cream mixture, cheese and bacon. Sprinkle with remaining chives.

1 32 oz package frozen tater tots
1 8 oz sour cream
1 cup mayonnaise
1 1.0 oz packet dry Ranch dressing mix
1 cup queso blanco (warmed)
2 cups shredded queso quesadilla, monterey jack or colby-jack cheese ((Use your favorite))
8 slices bacon (cooked and crumbled)
4 medium green onion (thinly sliced)

Steps:

  • Preheat oven to 425°F. Spray a rimmed baking sheet with cooking spray. Arrange tater tots on pan and bake for 25 minutes or per package directions.
  • Meanwhile, in a small bowl whisk together sour cream, mayo and ranch dressing mix. Keep chilled until assembling. (This can be done one day in advance for a timesaver)
  • To assemble: Arrange tater tots on a serving platter or serve on pan. Drizzle with warm queso. Top with shredded cheese, 1/2 ranch seasoned sour cream, crumbled bacon and green onion.
  • Serve immediately with remaining ranch sour cream on the side.

I'm from New England, where lobster is a tradition. My favorite way to use it: Combine a fancy ingredient like lobster with a humble ingredient like a tot. The avocado crema and hot sauce really make this dish, though.

2 teaspoons salt
1 ½ pounds lobster tails, thawed
cooking spray
1 (32 ounce) package frozen bite-sized potato nuggets (such as Tater Tots®)
1 tablespoon vegetable oil
½ cup butter
1 avocado, diced
¼ cup sour cream
1 lime, juiced
¼ teaspoon salt
¼ teaspoon black pepper
2 teaspoons Sriracha sauce
2 tablespoons chopped fresh chives

Steps:

  • Bring 9 cups water and salt to a boil in a Dutch oven or large pot. Add lobster; simmer, uncovered, until shells turn bright red and meat is tender, 8 to 12 minutes. Drain. Cut tails lengthwise with kitchen shears through the center of the shells. Remove meat and chop into bite-sized pieces.
  • Meanwhile, preheat an outdoor grill to high heat (450 to 650 degrees F (230 to 340 C)). Lightly coat a 10x15-inch baking pan with cooking spray.
  • Toss tots with oil on the prepared baking pan, then spread into a single layer. Transfer pan to grill; cook for 10 minutes, then toss to turn. Continue grilling, tossing occasionally, until tots are browned on all sides, about 15 minutes more.
  • Melt butter in Dutch oven over medium heat. Add lobster and bring to a simmer to heat through, 3 to 5 minutes.
  • Blend avocado, sour cream, and lime juice in a blender until smooth. Season with salt and pepper.
  • Transfer tots to a serving platter, and top with lobster and melted butter. Top with avocado sauce, Sriracha, and chives.
