1 cup Velveeta cheese, cubed
1 cup swiss cheese, grated
1 (10 1/2 ounce) can Campbell's cream of shrimp soup
1 cup milk
1/2 teaspoon cayenne
1/2 teaspoon paprika
1 broiled lobster tail
cooked shrimp
crusty bread
1 diced roasted red pepper (optional)

Steps:

  • Combine everything but the lobster tail, shrimp, crusty bread in a medium saucepan and heat over low heat until melted.
  • stir occasionally.
  • When melted, stir in the lobster meat or shrimp meat.
  • Garnish with red pepper if desired and serve with the crusty bread.

1 can Campbell's condensed cream of shrimp soup
1 cup milk
1/2 teaspoon cayenne
1/2 teaspoon paprika
1 broiled lobster tail (or 1 1/2 cups imitation lobster chunks)
Finely-chopped red bell pepper (optional)
French bread for serving

Steps:

  • Combine everything except the lobster in a medium saucepan and heat over low heat until melted, stirring occasionally. When melted, stir in the lobster meat. Garnish with red pepper if desired and serve with French bread. This recipe yields 4 servings.

I am not a huge fan of Velveeta cheese, but I do love it in this dish. It is very rich so a little goes a long way and it is best if served warm. I usually substitute the lobster meat for lump crab meat.

16 ounces Velveeta cheese
1/2 cup milk
1/2 teaspoon cayenne pepper
1/2 teaspoon paprika
1/4 lb broil lobster tails or 1/4 lb broiled crawfish tail meat
1/2 cup chopped sweet red pepper
2 tablespoons fresh parsley, chopped
1 loaf round sourdough French bread

Steps:

  • Take the cap off the bread and hollow it out being careful to do it in chunks you can serve with the fondue.
  • Spray the inside of the bowl and extra pieces of bread with light olive oil and broil till golden.
  • Combine all other ingredients except red pepper and parsley in a sauce pan (if you are subbing with crab don't add here or it will lose it's lumps).
  • Heat on medium low till cheese is melted.
  • Stir in pepper (and crab if using).
  • Pour as much as will fit into bread bowl.
  • Garnish with parsley and serve hot with fondue forks.
  • You will need a bread knife to cut the bread bowl up into chunks toward the end.

1 tbspn unsalted butter
2 tbspn finely chopped shallots
3 tbspn all purpose flour
1/2 cup dry white wine
2 tbspn dry sherry
1/2 cup chicken stock
1/2 cup cream
1 pound gruyere cheese
8 ounces chopped cooked lobster
1 tbspn chipped fresh parsley
1/8 tspn salt
Pepper to taste

Steps:

  • In a medium heavy-bottomed saucepan, melt the butter over medium heat. Add the shallots and cook stirring often until softened, about 2 minutes. Whisk in the flour and reduce the heat to low. Stir and cook, without browning the flour, for 1 minute. Whisk in the wine and sherry, then the chicken stock and heavy cream. Increase the heat to high and bring to a simmer for 5 minutes. A handful at a time, stir the cheese into the saucepan, stirring the first batch until melted before adding another. Stir in the lobster and parsley and season with salt and pepper. Transfer to a cheese fondue pot and keep warm over a dondue burner.

5 slices swiss cheese, tore up into smaller pieces
1/4 cup hot sauce (like Texas Pete)

parsley

Steps:

  • Heat oven to 350 degrees. Make the bread into a bowl by cutting the all the way around at an angle. put in oven for 7-8 minutes or until bread is slightly brown and crusty. Cut top of bread into chunks.
  • In a saucepan combine all ingredients (except bread). Melt together over med heat until cheese is all melted. (Sauce will seem thin at first but thickens as it cools).
  • Put bread on a cookie sheet or a serving platter and pour cheese mixture into "bread bowl". Don't worry if cheese overflows. Place bread chunks around the bread bowl and enjoy!
