LOADED TWICE-BAKED SWEET POTATOES

They say your greatest strength is also your biggest weakness; the same starchy sweetness that makes this tuber such a popular holiday side dish also can lead to palate fatigue. That's why I've enlisted bacon, lime, jalapeno, green onions, and sharp Cheddar to make these twice-baked sweet potatoes more addictive than in any Thanksgiving past. You can prep them ahead of time and then bake when you're ready to serve.

4 orange-fleshed sweet potatoes
½ tablespoon olive oil
1 (8 ounce) package bacon, diced
⅓ cup sliced green onions
¼ cup diced jalapeno peppers
salt to taste
freshly ground black pepper to taste
cayenne pepper to taste
½ cup shredded sharp white Cheddar cheese
2 tablespoons creme fraiche
2 teaspoons fresh lime juice
2 tablespoons shredded sharp white Cheddar cheese, or to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place sweet potatoes on a baking sheet. Prick with a knife and drizzle with olive oil; rub to coat. Space sweet potatoes evenly apart.
  • Bake in the preheated oven until completely tender, about 35 minutes.
  • Meanwhile, add bacon to a pan over medium heat. Cook and stir until bacon starts to get crispy and the fat turns foamy, 4 to 5 minutes. Add green onions and jalapeno; cook and stir for 1 minute. Remove from heat and set aside.
  • Let sweet potatoes cool until safe to handle. Leave the oven on. Cut off the top 1/3 of each potato, holding the knife at a 45-degree angle. Scoop out sweet potato flesh from both the top and bottom halves, leaving at least 1/4 inch flesh in the bottoms to make the shells.
  • Season the sweet potato flesh with salt, pepper, and cayenne. Add 1/2 cup cheese, creme fraiche, and lime juice. Mash with a potato masher. Add the bacon mixture and mix until combined. Spoon filling into the sweet potato shells. Lightly scatter remaining cheese on top.
  • Bake until heated through and tops have started to brown, 20 to 25 minutes.

To make a halved sweet potato into a more substantial side, load it with black beans and sharp Cheddar, then send it back into the oven until the cheese melts and sizzles. Pair it with something a bit lighter, like fish tacos or a green salad, or build it into its own meal by adding sliced avocado, torn cilantro, a squeeze of lime juice, or even a fried egg.

2 medium sweet potatoes (8 to 10 ounces each), scrubbed and dried
1 tablespoon olive oil
Kosher salt
1 cup cooked black beans (if canned, rinsed and drained)
1 cup shredded sharp Cheddar
Black pepper

Steps:

  • Heat the oven to 425 degrees and line a sheet pan with parchment paper. Halve sweet potatoes lengthwise, then brush all over with olive oil and sprinkle both sides with salt.
  • Place cut side down on prepared sheet and roast for 30 to 40 minutes, or until completely cooked through. Take sweet potatoes out of the oven, turn them over and let cool slightly. Use a fork to rough up the flesh and slightly flatten the potatoes. Season with salt and pepper.
  • Divide half the cheese among the potato halves. Spoon the black beans over them, then cover with the remaining cheese. Return the pan to the oven and bake for another 5 minutes, until the cheese has melted and the beans have warmed through. Season with salt and pepper. Serve warm.

4 large sweet potatoes (red-fleshed)
1/4 teaspoon salt
1 tablespoon packed brown sugar
1 tablespoon lime juice
1 1/2 teaspoons dark rum
2 teaspoons finely chopped gingerroot
1 tablespoon finely chopped seeded jalapeño chile
1/4 cup diced red onion
1 cup diced mango
2 tablespoons chopped fresh cilantro
2 cups oven-roasted pulled pork
1 tablespoon olive oil
1 1/2 teaspoons jerk seasoning
1/4 cup crumbled queso fresco cheese (1 oz)

Steps:

  • Heat oven to 400°F. Line rimmed cookie sheet with foil; spray with cooking spray. Place sweet potatoes on cookie sheet, and poke all over with fork. Bake 1 hour to 1 hour 15 minutes or until completely tender when pierced all the way through with knife. Cool about 10 minutes or until easy to handle.
  • Meanwhile, in small bowl, stir together brown sugar, lime juice, rum and gingerroot until brown sugar dissolves. Add jalapeño chile, onion and mango; toss to coat. Stir in cilantro; cover and refrigerate.
  • In medium microwavable bowl, mix pork, olive oil and jerk seasoning. Microwave uncovered on High 1 to 2 minutes or until steaming hot.
  • Cut open sweet potatoes. Using fork, mash up the flesh of each potato in their jackets. Divide salt among potatoes, and stir in with fork. Divide pork mixture, salsa, then cheese among the 4 potatoes.

1 boneless pork loin roast (2 to 3 pounds)
1/2 cup Dijon mustard, divided
1 tablespoon brown sugar
1 tablespoon garlic powder
1 teaspoon cayenne pepper

1 cup reduced-sodium beef broth
8 medium sweet potatoes (about 5 pounds)
3 cups coleslaw mix
1/2 cup fat-free plain Greek yogurt
1/2 cup reduced-fat mayonnaise
2 tablespoons cider vinegar
1/2 teaspoon celery seed
1/4 teaspoon garlic salt

Steps:

  • Place roast in a 3-qt. slow cooker. In a small bowl, mix 1/3 cup mustard, brown sugar, garlic powder, cayenne and 1/4 teaspoon salt; brush over pork. Add broth; cook, covered, on low until meat is tender, 6-8 hours., Meanwhile, preheat oven to 400°. Scrub potatoes; pierce several times with a fork. Bake until tender, 45-50 minutes., Place coleslaw mix in a large bowl. Steps:

  • Fill a large pot with 1" water. Place potatoes in a steamer basket and lower into pot. Cover pot and bring to a boil. Steam until potatoes are fork-tender, 25-30 minutes.
  • Place an oven rack about 8" from broiler; preheat broiler. Coat a rimmed baking sheet with 1 Tbsp. oil. Arrange potatoes skin side down on prepared pan. Score or lightly mash flesh with a fork; season all over with salt and pepper. Drizzle with remaining 2 Tbsp. oil, then top with cheese (taking care to keep it on the potatoes, not the pan). 5 medium sweet potatoes
1/2 cup butter (melted) or 1/2 cup margarine (melted)
3/4 cup brown sugar
1/4 teaspoon cinnamon
1 1/4 cups marshmallow cream

Steps:

  • Wash the sweet potatoes and puncture with a fork then wrap in aluminum foil.
  • Place on baking sheet and bake at 375 degrees for 1 hour.
  • When the potatoes are almost done, melt butter and mix with brown sugar and cinnamon.
  • Remove potatoes from oven and change oven temp to broil.
  • Unwrap potatoes leaving the foil under them to catch any drippings.
  • Slice potatoes down the middle and spoon butter mixture evenly into all 5 potatoes.
  • Top each potato with 1/4 cup marshmallow cream.
  • Place pan in broiler and broil for 1-3 minutes. (watch closely because they can burn easily if forgotten).

1/2 cup pepitas or pumpkin seeds
3 tablespoons brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
Pinch cayenne pepper
1/2 cup sour cream
1/4 cup fresh mint leaves, torn

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper.
  • Place the sweet potatoes on one of the prepared baking sheets. Bake until the sweet potatoes are soft to a light squeeze (with a mitt or towel), 45 minutes to an hour.
  • Meanwhile, toast the pepitas in a dry skillet, stirring occasionally, until fragrant, 2 to 3 minutes. Remove from the heat and set aside.
  • Add the brown sugar and spices to a medium skillet over medium-high heat and cook until the skillet is hot. Add 1 tablespoon water to the skillet and stir until the sugar is melted. 4 small sweet potatoes
1 teaspoon olive oil
1 red bell pepper, diced (1 cup)
3/4 cup chopped red onion
1 link gluten-free fully cooked chicken sausage with apples (from 12-oz package), diced
1 bunch (8 oz) fresh kale, ribs removed, leaves sliced (6 cups)
3/4 teaspoon hot paprika or paprika
1/8 teaspoon salt
3 tablespoons water
1/2 cup shredded reduced-fat Cheddar cheese (2 oz)
1/2 cup fat free plain yogurt

Steps:

  • Heat oven to 400° F. Pierce sweet potatoes with fork to allow steam to escape. Place on ungreased cookie sheet. Bake 50 to 60 minutes or until tender.
  • Meanwhile, in 12-inch nonstick skillet, heat oil over medium heat. Cook bell pepper and onion in oil about 5 minutes, stirring occasionally, until softened. Add sausage; cook and stir until sausage begins to brown. Add kale, paprika and salt; cook and stir about 3 minutes or until kale is wilted. Add water; stir about 1 minute or until water is absorbed. Remove from heat; set aside.
  • Remove sweet potatoes from oven. Let stand about 5 minutes for easier handling. Heat oven to broil. Cut sweet potatoes in half lengthwise. Carefully scoop out insides of sweet potatoes into skillet with sausage mixture, leaving 1/4-inch shell. Stir sausage mixture. Place shells on ungreased cookie sheet. Spoon sweet potato mixture into shells; dividing evenly. Sprinkle each with 1 tablespoon cheese.
  • Broil 4 to 6 inches from heat 30 to 60 seconds or until cheese is melted. Serve with yogurt.
