4 medium russet potatoes
2 tablespoons olive oil
10 ounces cremini mushrooms, trimmed and quartered
1 bunch broccoli, cut into small florets, stalks peeled and cut into 1/2-inch pieces
Salt and pepper
1/4 to 1/2 cup vegetable or chicken broth, hot
2/3 cup low-fat plain yogurt, room temperature

Steps:

  • Wrap each potato in foil and place in a 5-to-6-quart slow cooker. Cover and cook on low until potatoes are tender, 8 hours.
  • In a large skillet, heat oil over medium-high. Add mushrooms and cook 2 minutes, then add broccoli and season with salt and pepper. Cook, stirring frequently, until broccoli is crisp-tender, 8 minutes.
  • Split potatoes, scoop out flesh, and transfer to a medium bowl, reserving skins. Add broth and yogurt to bowl, then season with salt and pepper and stir until combined; divide among potato skins. Top each stuffed potato with broccoli mixture.

4 medium Russet Potatoes (cut into small cubes)
1/2 cup sour cream
1/4 cup Butter (softened and sliced)
1/2 cup cream cheese (half of an 8 oz block, softened)
2 cloves garlic (minced)
1/4 cup chicken broth
1 cup Shredded Cheddar Cheese
4 pieces bacon (cooked crisp and crumbled)

Steps:

  • Place your cubed potatoes in the bottom of a lightly greased 4 quart slow cooker
  • In a small bowl, mix together sour cream, cream cheese, butter and garlic with a fork until well combined
  • Pour chicken broth over potatoes
  • Spread cream cheese mixture over potatoes
  • Sprinkle cheese on top
  • Top with crumbled bacon
  • Cover and cook on low for 5-6 hours or on high for 2.5-3 hours

Sometimes magic happens when you least expect it. These Loaded Slow Cooker Potatoes are one of those instances.

10-12 red potatoes, halved
6 slices bacon, cooked and crumbled
8 oz shredded cheddar cheese (plus more for garnish), optional
1 tsp kosher salt
1/2 tsp garlic powder
1 large onion, minced
1/2 stick butter, cubed (soy based or tradition)
scallions
tin foil or slow cooker liner

Steps:

  • Line a large slow cooker with tin foil or slow cooker liner. This keeps the potatoes and cheese from burning and makes for easy clean up. Layer half of the potatoes, salt, bacon, onion, cheese, and butter in the slow cooker. Add a second layer. Cover and cook on low for about 8 hours.
  • When ready to eat, scoop out of slow cooker onto a serving plate and top with a little additional cheese and scallions. Check seasoning and adjust salt to taste.
  • Note: I usually make this without the cheese and it's delicious.

2 pounds baby potatoes, (cut in half (or cut in quarters if large))
2 teaspoons smoked paprika, (divided use)
2 teaspoons kosher salt, (divided use)
2 teaspoons ground black pepper, (divided use)
4 cloves garlic, minced (divided use)
3 cups shredded cheddar cheese, (divided use)
1 pound bacon, (cooked and crumbled)
1/2 cup sliced green onions (divided use)
sour cream and sliced green onions, (for serving)

Steps:

  • Spray a 6-quart oval slow cooker with neutral nonstick cooking spray or line with nonstick foil.
  • Layer half the potatoes in the bottom of the slow cooker. Season with half the smoked paprika, salt, pepper and minced garlic.
  • Top with half the shredded cheddar cheese, bacon and green onions. Repeat this process a second time. Note: bacon and green onions can be added to the top after potatoes have cooked rather than layering before cooking.
  • Cover and cook on low until potatoes are tender, 2 to 3 hours.
  • Serve with a drizzle of sour cream (or a side of ranch dressing) and more sliced green onions.

3 pounds cubed peeled potatoes (about 9 medium)
1 package (8 ounces) cream cheese, softened
1 cup sour cream
1/2 cup butter, cubed
1/4 cup 2% milk
1/2 pound bacon strips, cooked and crumbled
1-1/2 cups shredded cheddar cheese
1-1/2 cups shredded pepper jack cheese
4 green onions, thinly sliced
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
Salt and pepper to taste

Steps:

  • Place potatoes in a Dutch oven, adding water to cover. Bring to a boil; reduce heat and simmer, uncovered, until tender, 10-15 minutes. Drain; return to pan. Mash with cream cheese, sour cream, butter and milk. Stir in bacon, cheeses, onions and seasonings. Cover; refrigerate overnight., Transfer to a greased 3- or 4-quart slow cooker.
