Gin and tonics are one of my favorite cocktails, but I often like experimenting with different add-ins instead of the traditional lime wedge. The salt from the preserved lemon really brings out the natural botanical flavors in the gin.

¼ preserved lemon
2 fluid ounces gin
2 cups ice cubes, or as needed
4 fluid ounces tonic water (such as Fever Tree)
1 small sprig fresh rosemary

Steps:

  • Remove the pulp from the lemon with a sharp knife and discard, saving the peel. Lightly rinse peel with cool water. Slice off a thin sliver of peel and set aside for garnish.
  • Combine lemon peel and gin in a shaker. Muddle lemon until slightly crushed. Add 1 cup ice to the shaker, cover, and shake until chilled, 15 to 20 seconds.
  • Fill a rocks glass with ice and strain cocktail over the ice. Top with tonic water. Garnish with lemon sliver and rosemary sprig.

10 lemon verbena leaves
ice
1 ounce gin, preferably London dry, Boodles British Gin, Plymouth Gin, Tanqueray 10
1/2 ounce fresh lemon juice
3 ounces tonic water, well chilled
monin blueberry syrup
lemon slices or frozen blueberries

Steps:

  • In a cocktail shaker, muddle the leaves.
  • Add ice and the gin, lime juice and shake well.
  • Strain into an ice-filled balloon glass it will enhance all the aromas in the drink.
  • Wipe the rim with a slice of lemon, stir in the tonic, drizzle blueberry syrup for color and sweetness and garnish with the verbena leaf and lemon slice.

4 cubes ice
1 (1.5 fluid ounce) jigger gin (such as Citadelle®)
5 or 6 juniper berries
6 fluid ounces tonic water
1 twist lime peel

Steps:

  • Stir ice cubes in a glass and drain any water that accumulates. Add gin and juniper berries.
  • Twist lime peel to release lime essence into the glass. Add tonic water and stir. Garnish with the lime peel.
