6 tablespoons unsalted butter, softened
1/2 cup granulated sugar
1 large egg
1 tablespoon vanilla extract
3/4 cup all-purpose flour
1/8 teaspoon fine salt
1/4 teaspoon baking soda
6 tablespoons whole milk
1/2 teaspoon apple cider vinegar*
8 tablespoons (1 stick) unsalted butter, at room temperature
2 cups powdered sugar
2 teaspoons vanilla extract
1 tablespoon heavy cream

Steps:

  • Preheat the oven to 350, and spray a 6" round cake pan with 2" sides with cooking spray. Line the bottom of the pan with a round of parchment paper.
  • In a medium-size bowl, beat together the butter and sugar with an electric mixer. Beat very well, about 1-2 minutes.
  • Add the egg and vanilla, and beat until well-combined, about 15 seconds.
  • In a small bowl, whisk together the flour, salt and baking soda. Add half of the this to the batter and beat for just a few seconds before stirring in half of the milk and vinegar. Continue beating. Add the remaining dry ingredients and beat, and then stir in the remaining milk.
  • Scrape the batter into the prepared pan, smooth out the top, and bake on a small sheet pan for 37-39 minutes, until a cake tester comes out clean.
  • Let the cake cool on a wire rack in the pan. Carefully remove it from the pan, pulling away the parchment paper once it has cooled.
  • To make the buttercream, beat the butter in a medium-size bowl with an electric mixer until light and fluffy. Add the powdered sugar, vanilla and heavy cream, and beat until light and fluffy. If the mixture seems too stiff, add a splash more heavy cream.
  • Use a little more than half of the buttercream to frost the cake. If you made the cake ahead of time and frozen it, it's best to apply a crumb coat of buttercream before applying a second layer.
  • Place the remaining 1/4 of the buttercream in a piping bag fitted with a 1M tip, and pipe roses along the outside edge of the cake. To make a rose, pipe a spiral shape, starting inside of moving around the center.

2/3 cup butter (room temperature-a temperature of 65 F to 68 F is ideal)
1 1/2 cups granulated sugar
2 eggs (room temperature)
2 cups all-purpose flour (divided)
3/4 teaspoon baking powder
3/4 teaspoon salt
2/3 cup whole milk
1 teaspoon pure vanilla extract

Steps:

  • Gather the ingredients.
  • Preheat the oven to 325 F. Grease and flour a 9 x 5 x 3-inch loaf pan.
  • Cut the butter into several smaller pieces.
  • Put the butter pieces and sugar in a large mixing bowl. With an electric mixer on medium-high speed, cream the butter and sugar for about 5 to 7 minutes, until light and fluffy.
  • Add the eggs, one at a time, beating well after each addition.
  • In a separate bowl, combine the flour, baking powder, and salt; whisk or stir to blend thoroughly. Set aside.
  • In a 1 cup measure, combine the 2/3 cup of milk and the vanilla. Set aside.
  • Add about one-third of the flour mixture to the creamed mixture and beat until just barely blended.
  • Add half of the milk and blend well.
  • Add another one-third of the flour and beat until just barely blended. Beat in the remaining milk until smooth and blended. Add the remaining flour mixture and beat just until blended.
  • Scrape the batter into the prepared loaf pan and spread evenly.
  • Bake for about 1 hour and 15 minutes, or until a wooden pick or cake tester inserted in center comes out clean.
  • Serve and enjoy.

LITTLE VANILLA POUND CAKE FOR 2

This is my favorite little vanilla pound cake. It's perfect for 2 people. It makes a great base for strawberry shortcakes! Top it with whipped cream and drizzle with chocolate... yum. I have done a bunch of diferent things with this perfect little cake. It has a wonderful texture and melts in your mouth. You can easily double this but don't double the baking soda, just leave it at 1/8 teaspoon.

1/2 cup flour
1/2 cup sugar
4 tablespoons sour cream
1/8 teaspoon baking soda
1 large egg, room temp
1/2 teaspoon vanilla extract (or almond if you like)
3 tablespoons butter, room temp

Steps:

  • Preheat oven to 350. Grease and flour pan very well. I designed this to go in a petit loaf pan that measures about 5x3x2 but you can use 2 mini Bundts, 4 cupcake cups, 2 jumbo muffin cups or whatever small pan you like. When doubled it works nicely with the 6 cup Bundt pan, a 5 inch springform, 4 mini Bundts or a 7x4x3 loaf pan.
  • Whisk together flour and sugar in small mixing bowl.
  • In another small bowl, whisk together sour cream and baking soda. Add egg and vanilla ex, gently whisk to combine.
  • Add the butter and 1/2 of the sour cream mixture to the flour mixture and mix with electric mixer until moistened. Beat on low for about 45 seconds.
  • Add remaining sour cream mixture and beat on medium until well blended, 30 seconds. Don't over mix or you'll ruin the texture.
  • Pour into prepared pan and bake until browned well and toothpick inserted in center comes out clean, about 25-30 minutes for the petit loaf pan. When doubled bake 40 minutes in the small loaf pan. Baking times vary slightly depending on which pan you use. The important thing is that the cake is browned and toothpick comes out clean when inserted in center.
  • Cool in pan 10 minutes on rack. Remove from pan and cool completely.

⅛ cup powdered sugar, or as needed
1 cup unsalted butter, softened
2 ½ cups white sugar
6 large eggs, at room temperature

1 cup heavy whipping cream, at room temperature

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease a fluted tube pan (such as Bundt®) with canola oil and dust with powdered sugar.

200g unsalted butter , softened
200g caster sugar
3 eggs , beaten
200g self-raising flour
1 tsp baking powder
3 tbsp whole milk
1 tbsp vanilla paste / ½ vanilla pod seeds
125g icing sugar
1 tbsp vanilla paste / ½ vanilla pod seeds

Steps:

  • Pre-heat oven to 180C/160C fan/gas 4 and line a 900g loaf tin with parchment paper (mine was 19cm x 9cm x 6cm). Put all of the ingredients except those for the icing into a large bowl and beat together, either using an electric hand whisk or a wooden spoon until smooth and combined. Pour the mix into the loaf tin and spread evenly with the back of spoon. Bake for 40 - 45 mins.
  • Once out of the oven, leave to cool and make the icing. Combine the icing sugar and vanilla paste with three tbsp of water - you may need more but add it gradually to get a thick icing. Spread it over the top of the cake; it's fine if it drips down the edges. Allow to set and then slice.
