2 POUND CAKES ONE LOAF BY FREDA
Who doesn't Enjoy Orange or Vanilla Flavors?? This isa Bonus Recipe, 2 Great Recipes for One or Two, or if You just want a smaller pound cake. Its made in a 2X4Foil pan the Disposable ones you can purchase @ the Dollar store. Cuts into about 7-8 Slices, and Freezes very well.

Steps:
- 1. Preheat Oven @ 350 degrees Coat with cooking spray a (2)2X4 tiny pans Disposable kind) set aside.
- 2. in a small bowl, sift flour & baking Powder. set aside. With Electric hand mixer, Cream Butter, gradually add sugar. Beat til Fluffy. Add; Eggs one at a time, Mix well after each egg. Add; Flavoring, (also food coloring is making orange)
- 3. Gradually add your Dry ingredients that you have set aside. Mix by Hand, till well blended. Pour into your prepared Loaf pan. Bake @ 350 for 30 minutes, or until golden brown. Cool, Cut into 7-8 slices. Freezes well. Serve with a dollop of Whipped cream
LITTLE DIXIE POUND CAKE
A tiny pound cake made in a mini-loaf pan, perfect for just the two of you (or just the one of you with the need for pound cake! ;o) Also great for gift baskets or dinners for shut-ins. From TOH.

Steps:
- Cream butter and sugar together.
- Beat in egg.
- Combine flour and baking soda.
- Alternately add flour mixture and buttermilk to creamed mixture; add extracts.
- Pour into greased 5-3/4" x 3" x 2" loaf pan.
- Bake at 350F for 35 min or until tester comes out clean.
- Cool for 10 min, remove to wire rack and cool.
LITTLE DEBBIE CAKES
I love those Little Debbie cakes that are in the shape of trees at Christmas. I found this recipe and it's the closest I've come to them. I used to eat them like crazy and it was costing me a fortune! Now, I can make a batch at home. There really is no serving size because it's whatever shape you want to cut them into or if you just make 2 round cakes.

Steps:
- Make the cake mix as directed on the box, but instead of making in cake pan, bake in a jelly roll pan to make the layers. Cut with cookie cutters when cool. Store the leftover crumbs in a zip top bag for other uses.
- While the cakes are baking, make the middle. Combine the first 3 ingredients and beat on high for 5 minutes, gradually adding the milk and vanilla. Beat 5 more minutes on high. Spread between two cut-outs.
- Stir together all the icing ingredients. Place the cut-outs on a wire rack above a pan or plate to catch the drippings. Spoon the icing over the cake and let it drizzle over the sides, making sure to coat all the surfaces.
- Decorate while still "wet" before it sets.
