GARLIC PARMESAN ZUCCHINI CASSEROLE

This Garlic Parmesan Zucchini Casserole is an easy side dish recipe that pairs beautifully with just about any family meal!

4 cups grated zucchini ((I used about 3.5 medium zucchinis))
½ teaspoon salt
½ cup finely minced or grated onion
1 tablespoon minced garlic
2 eggs
½ cup grated Parmesan cheese, plus an additional 2 tablespoons
1 cup shredded mozzarella cheese
½ cup shredded cheddar cheese
½ cup Panko breadcrumbs
2 tablespoons melted butter

Steps:

  • Preheat oven to 375°F. Grease a 1 ½-quart baking dish; set aside.
  • Place zucchini in a colander, sprinkle with salt, and allow to sit for about 10 minutes (this will help draw out some of the water from the zucchini). After 10 minutes, squeeze out the moisture from the zucchini. TIP: In order to make sure that you get most of the water out of the zucchini (and avoid a runny casserole), wrap the zucchini in a dish towel. Squeeze it and wring it out multiple times while it's in the towel -- you will be shocked by how much liquid comes out!
  • In a large bowl, combine zucchini, onion, garlic, eggs, ½ cup Parmesan cheese, mozzarella cheese, and cheddar cheese. Gently press the mixture evenly into the prepared dish.
  • Bake uncovered for 20 minutes.
  • Meanwhile, in a small bowl, pour melted butter over breadcrumbs and 2 tablespoons of Parmesan cheese. Stir until completely combined.
  • After 20 minutes, remove zucchini from the oven. Sprinkle buttered breadcrumbs over the zucchini and return the dish to the oven. Continue baking for about 5-10 more minutes, or until the top is golden brown and crispy.

NOTE: I have a family of 5 and 4 of them are growing boys, you can modify this if its too much it makes a nice big pan

4 pound(s) hamburger
1 - onion, chopped
1 package(s) mushrooms, fresh
3 - zucchini, sliced thin
1 can(s) crushed tomatoes
1 can(s) diced tomatoes
1 can(s) water
4 - eggs
2 cup(s) minute rice
1 package(s) tex mex cheese ( or cheese of your choice
SPICES TO TASTE, I USED, BASIL, PARSLEY, GARLIC SALT, ONION POWDER, PEPPER

Steps:

  • Pre heat oven to 350.
  • In a large frying pan brown hamburger and onions and mushrooms and spices, when no longer pink, and well cook.
  • Transfer to a large bowl, add both cans tomatoes, eggs, rice, water, mix well, add a little cheese about 1/4 or more of the package.
  • In a well greased big casserole dish, arrange a layer of zucchini, pour meat mixture over top, top with remaining zucchini and cheese. Bake at 350 for about 45 min ~Enjoy~

LISA'S GRILLED ZUCCHINI

The extra-virgin olive oil from Countess Lisa-Contini Bonacossi's estate is a favorite of mine and an important element in Lisa 's great cooking. She has an easy going style, changing recipes according to what's in the garden and larder, and is hard to pin down about quantities. Lisa slices her zucchini with an electric meat slicer. I use the 3-mm. blade of my food processor to slice by hand, not with the machine. Can be prepared in 45 minutes or less.

Number Of Ingredients 6

4 medium zucchini (about 1 1/2 pounds total), trimmed
1 to 2 garlic cloves, minced
2 tablespoons chopped fresh flat-leafed parsley leaves
fine sea salt to taste
freshly ground black pepper to taste
3 to 4 tablespoons extra-virgin olive oil

Steps:

  • Slice zucchini lengthwise 1/8 inch thick with a mandoline or other hand-held slicing device. Heat a lightly oiled well seasoned cast-iron ridged grill pan over moderately high heat until hot and grill zucchini slices in batches until grill marks appear, 2 to 3 minutes on each side. Arrange zucchini slices as grilled in one layer on a platter and sprinkle with garlic and parsley. Season zucchini with salt and pepper and drizzle with oil.

1 teaspoon garlic powder
1-1/2 cups diced zucchini
1 can (14-1/2 ounces) diced tomatoes, drained
1/2 cup instant rice
1/2 cup water
1/4 cup chopped onion
1/4 cup reduced-sodium soy sauce
3/4 teaspoon dried basil

Steps:

  • Crumble beef into a 1-1/2-qt. microwave-safe dish; sprinkle with garlic powder. Cover and microwave on high for 1-1/2 minutes; stir. Heat 1-2 minutes longer or until no longer pink; drain. , Stir in the remaining ingredients. Cover and microwave on high for 15-20 minutes or until vegetables and rice are tender, stirring twice.
