This is a cool, delicious, crunchy, savory and sweet broccoli slaw that will satisfy. Try this instead of coleslaw. Tastes just as good if not better the next day.

⅓ cup cider vinegar
⅔ cup white sugar
2 (3 ounce) packages chicken ramen noodles, broken
10 ounces broccoli coleslaw mix
¾ cup sliced almonds
¾ cup golden raisins
½ cup sliced green onions
½ cup chopped green bell pepper

Steps:

  • Whisk olive oil, vinegar, sugar, and ramen noodle seasoning packets together in a bowl.
  • Combine broccoli coleslaw mix, broken ramen noodles, almonds, raisins, green onions, and green bell pepper together in a bowl; fold in dressing. Refrigerate at least 2 hours. Stir again before serving.

You can also add diced apples or crumbled bacon. This is also a great dish to make ahead of time. I'd say it's at its best after at least a day.

Sweet and Crunchy Broccoli Salad image

4 cups chopped broccoli in 1/2-inch pieces (from about 2 heads)
8 ounces pancetta, cut into 1/3-inch dice
1/2 cup mascarpone
1/4 cup mayonnaise
2 tablespoons apple cider vinegar
1/2 teaspoon kosher salt
1/2 cup dried cranberries
1/2 cup walnuts, toasted, chopped
1/2 cup crumbled aged gorgonzola

Steps:

  • Bring a large pot of salted water to a boil. Set up a bowl of ice water alongside. Add the broccoli to the pot and blanch for 1 to 2 minutes, just until bright green and crisp. With a slotted spoon, remove the broccoli to the ice water to shock. Drain well.
  • Place the pancetta in a medium skillet over medium heat. Cook, stirring often, until crispy and browned, about 10 minutes. Drain on paper towels, reserving 1 tablespoon of the fat.
  • Meanwhile, in a large bowl, use a rubber spatula to mix together the mascarpone, mayonnaise, cider vinegar and salt. Add the broccoli, pancetta, reserved fat, cranberries, walnuts and gorgonzola. Toss well to coat and combine.

1 lb bacon
1/2 cup raw sunflower seeds
1/2 cup raisins (golden are good)
1 cup mayonnaise (greek yogurt would probably be good)
3 tablespoons raw sugar
2 tablespoons cider vinegar
black pepper

Steps:

  • Fry and crumble bacon. Drain. Mix mayo, sugar & vinegar. Pour over slaw; mix in bacon, sunflower seeds and raisins. Chill and enjoy!

1 tablespoon plus 1/2 cup olive oil, divided
1/2 cup slivered almonds
1/2 cup sunflower kernels
2 packages (14 ounces each) coleslaw mix
12 green onions, chopped (about 1-1/2 cups)
1 medium sweet red pepper, chopped
1/3 cup cider vinegar
1/4 cup sugar
1/8 teaspoon pepper
2 packages (3 ounces each) chicken ramen noodles

Steps:

  • In a large skillet, heat 1 tablespoon oil over medium heat. Add almonds and sunflower kernels; cook until toasted, about 4 minutes. Cool., In a large bowl, combine coleslaw mix, onions and red pepper. In a small bowl, whisk vinegar, sugar, pepper, contents of ramen seasoning packets and remaining oil. 1 gala apple (diced)
½ cup Craisins
⅓ cup chopped walnuts

8 bacon strips (cooked and crumbled)
½ cup light mayonnaise
½ cup plain greek yogurt
2 Tablespoons red wine vinegar
1 Tablespoon lemon juice ((fresh is best))
1 Tablespoon sugar

Steps:

  • In a large bowl, mix together broccoli, carrots, onion, apple, Craisins, walnuts, cheese, and bacon.
  • In a smaller bowl, combine dressing ingredients.
