PASTA WITH MEAT SAUCE

Steps:
- Heat a large saucepan over medium heat and add the oil. When hot, add the meat and cook, without stirring, until browned, 3 to 5 minutes. Break it up with a wooden spoon, then add the onion and garlic and cook, stirring, until starting to soften, about 2 minutes. Add the tomato paste and cook for 2 to 3 minutes. Add the wine and bring to a simmer. Add the crushed tomatoes and oregano and season with salt and pepper. Simmer until thickened and the flavors come together, about 1 hour.
- About 20 minutes before the sauce is done, bring a large pot of water to a boil and salt liberally. Drop in the pasta, give it a stir and cook until al dente according to the package instructions. Drain the pasta and add it to the sauce. Remove from the heat, toss in the cheese and serve.

- 1. Cook beef and garlic in dutch oven until no longer pink. Drain beef mixture. Stir in tomatoes and next 4 ingredients; simmer 30 minutes. Set meat sauce aside.
- 2. Cook pasta according to package directions. Drain.
- 3. Place pasta in a 13 x 9 baking dish coated with cooking spray. Stir together sour cream, cream cheese and chopped onions. Spread over linguine.
- 4. Top with meat sauce. Bake at 350 for 20-25 minutes or until thoroughly heated. Sprinkle with mozzarella cheese and bake 5 minutes.

- Mix first nine ingredients by hand using a light touch.
- Shape into 1 1/2" meatballs.
- Brown slowly in a small amount of olive oil in a Dutch oven.
- Turn carefully to brown all sides.
- Meanwhile make sauce.
- Mix tomato paste, tomato sauce and water.
- When last side of meatballs are nearly brown, add tomato sauce mix to the pan.
- Add garlic, carrot, salt, pepper and wine.
- Stir, being careful not to break up meatballs, cover and simmer for at least an hour.
- Add fresh chopped basil and oregano to taste during the last ten minutes.

- Bring some water to boil in a covered pot for linguine.
- Slice a little off the bottom of the fennel, and trim the leaves and stems. Remove tough outer layer, and cut the fennel in quarters. Steam over hot water for about 7 minutes, until the fennel is tender.
- Heat a large nonstick pan until it is very hot. Reduce the heat to medium high, and brown the meat, stirring often to keep it from sticking to the pan and to break it up into little pieces.
- Chop the whole onion; push the beef to the side, and add the oil to the pan. Add the onion, and saute until it softens and begins to brown.
- Mince the garlic, and add to to the onion along with the caraway seeds, coriander, hot-pepper flakes, cloves and fennel, and stir well. Stir in the tomato puree with the bay leaf. Simmer over low heat until pasta is cooked.
- Cook the pasta according to package directions; drain, and serve with sauce after seasoning it with pepper.

- 1. Saute onions in small amount of olive oil until light brown. If using fresh garlic, dice up two cloves and put in with onions.
- 2. Once onions are soft and light brown, mix in meat, and sprinkle with Mrs Dash salt/pepper. Saute until brown.
- 3. Add in can of crushed tomatoes and can of tomato sauce and stir.
- 4. Simmer for 45 minutes at least. Taste and add more seasoning if needed.
- 5. Boil water for pasta and cook pasta for 8 to 10 minutes. We like our pasta al dente (not too soft). Taste as you go.
- 6.When ready - strain - make sure all the water is gone. Put a little sauce on pasta so it does not stick. Keep the rest of the sauce in the bowl so you can each have as much as you want. A salad is a great side dish -- add grated parmesan if you like.
