COCONUT WATER-LIME RICE PILAF

A wonderful, coconut water and rice side dish for baked coconut shrimp.

3 tablespoons butter, divided
1 cup uncooked jasmine rice
2 cups coconut water
1 teaspoon salt
2 limes, juiced, divided
½ cup shredded carrots
2 tablespoons chopped green onions
2 tablespoons chopped fresh cilantro
1 lime, quartered

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 1-quart covered baking dish with 1 tablespoon butter.
  • Melt remaining 2 tablespoons butter in a large, deep skillet over medium-high heat. Stir in jasmine rice and cook until slightly golden, 3 to 4 minutes. Pour in coconut water. Season with salt. Mix in juice of 1 lime. Reduce to a simmer and stir occasionally until liquid begins to be absorbed, about 5 minutes. Transfer to the prepared baking dish.
  • Bake, covered, in the preheated oven until the coconut water is completely absorbed, about 20 minutes.
  • Remove the cover and add carrots, green onions, cilantro, and remaining lime juice. Fluff with a fork; cover and let stand for 5 minutes. Serve with lime wedges.

2/3 cup chilled heavy cream
1/4 cup sugar
3 (2- by 1 1/4-inch) fresh or frozen makrut lime leaves
1 1/2 teaspoons finely grated fresh lime zest
3/4 teaspoon unflavored gelatin (from a 1/4-ounce envelope)
1 tablespoon water
1/2 teaspoon fresh lime juice
1 cup plain whole-milk yogurt
For honeydew water
3 cups (1-inch) pieces honeydew flesh (2 pounds)
2 tablespoons Midori (melon liqueur)
1 tablespoon fresh lime juice
1 teaspoon unflavored gelatin
1 tablespoon water
2 tablespoons sugar
Garnish: 4 fresh green shiso leaves
Accompaniment: chile lime tuiles

Steps:

  • Make mousse:
  • Stir together 1/3 cup cream, sugar, lime leaves, zest, and a pinch of salt in a small heavy saucepan and bring to a bare simmer over moderately low heat, stirring until sugar is dissolved. Remove from heat and let steep, covered, 25 minutes.
  • Sprinkle gelatin over water and lime juice in a bowl and let soften 1 minute. Return cream mixture to a simmer, then pour through a very fine sieve into gelatin, pressing on and discarding solids. Stir until gelatin is dissolved, about 1 minute. Gradually add yogurt, whisking, and chill, covered, 30 minutes. (Mixture will not be gelled.)
  • Beat remaining 1/3 cup cream in a chilled bowl with whisk until it just holds soft peaks. Fold into yogurt mixture and chill, covered, at least 8 hours. (Mousse will be softly set.)
  • Make honeydew water:
  • Blend honeydew, Midori, lime juice, and a pinch of salt in a blender at high speed until smooth, about 1 minute. Pour through a fine sieve lined with dampened cheesecloth into a bowl. Let drain, undisturbed, 30 minutes, then discard foam remaining in cheesecloth.
  • Sprinkle gelatin over water in a small saucepan and let soften 1 minute. Add 2 tablespoons melon juice and sugar, then cook over low heat, stirring, until gelatin and sugar are dissolved, 1 to 2 minutes. Gradually whisk in 1 1/8 cups melon juice (reserve remainder for another use if desired), then transfer to a bowl and chill, covered, at least 8 hours. (Honeydew water will be barely set.)
  • Assemble dessert:
  • Spoon honeydew water onto 4 dessert plates and top with shiso leaves. Spoon mousse onto leaves.

FALOODEH (PERSIAN LIME AND ROSE WATER GRANITA WITH RICE NOODLES)



Faloodeh (Persian Lime and Rose Water Granita With Rice Noodles) image

Faloodeh is an ancient Persian dessert, a sort of granita threaded with rice noodles and spiked with rose water and lime. Though you may typically cook noodles until al dente, you'll need to really cook them through here before adding them to the syrup so that they soak up enough liquid to become as crunchy as possible as they freeze. In Iran, most ice cream shops sell just two items: traditional saffron ice cream and faloodeh, which is typically topped with bottled lime juice that tastes mostly of citric acid. Faloodeh has been my favorite since childhood, but now I prefer it with the juice of freshly squeezed limes. It's incredibly refreshing and the ideal end to a rich meal filled with complex flavors.

1 cup granulated sugar
Fine sea salt
1/3 cup lime juice, plus wedges, for serving (about 3 to 4 limes)
2 tablespoons rose water
4 ounces very thin rice noodles or rice vermicelli

Steps:

  • Place 1/2 cup water in a small saucepan and set over low heat. Add about half the sugar and stir to dissolve completely. Add 1/8 teaspoon salt and the rest of the sugar and continue stirring until completely dissolved. Take off the heat and let cool to room temperature.
  • In a freezer-safe bowl or dish, stir together 4 cups water, cooled syrup, lime juice and rose water, then place in freezer until ice crystals begin to form on the edges of the mixture, about 1 hour.
  • In a medium pot, bring 4 quarts water to a boil. Add the noodles and cook thoroughly until there is no bite left, about 8 minutes or as instructed on the package. Drain and rinse immediately with cold water. Use scissors to cut noodles into 1-inch pieces, then stir them into the partly frozen syrup mixture. It's important that the mixture has begun to freeze before adding the noodles so that they don't all sink to the bottom of the dish, so if your syrup mixture needs more time, freeze for another hour before adding noodles.
  • Every hour for the next several hours, scrape the granita thoroughly with a fork to prevent huge icy chunks from forming. The mixture should be light and airy, punctuated with crunchy noodles.
  • To serve, scrape and serve bowlfuls of faloodeh with lime wedges.

I'm just beginning to explore the fascinating world of traditional Indian beverages. One of the most refreshing I've discovered to date is panakam, typically made during the Hindi festival Sri Rama Navami. If you can imagine a frosty cold, light, bright ginger beer, you'll have an idea of its taste. I make my version sparkling, and because the traditional jaggery is sometimes hard to come by (and slow to dissolve), I use whatever full-flavored, fine-grain, natural cane sugar I have on hand-muscovado works nicely. This version is also dialed back as far as sweetness goes; some versions I've come across use double or even triple the amount of sugar. Feel free to adjust the sweetness to your liking.

WATER SPINACH STIR-FRIED WITH SHRIMP SAUCE AND LIME

2 teaspoons fine shrimp sauce
1 teaspoon fish sauce
1 1/2 tablespoons water
2 tablespoons canola or other neutral oil
3 cloves garlic, finely chopped
Trimmed, cut, and blanched water spinach (opposite)
2 limes, cut into wedges

Steps:

  • To make the flavoring sauce, in a small bowl, combine the shrimp sauce, fish sauce, and water and stir to mix well. Set aside.
  • In a wok or large skillet, heat the oil over medium-high heat until hot but not smoking. Add the garlic and stir-fry for 15 seconds, or until fragrant Add the water spinach and stir-fry for about 3 minutes, or until heated through. Add the flavoring sauce and toss with the greens to distribute evenly. Remove from the heat and squeeze half of the lime wedges over the water spinach. Stir gently and transfer to a serving plate. Serve with the remaining lime wedges for diners who enjoy a tangier dish.
  • To minimize waste, select freshly cut bunches with stems no wider than 1/4 inch. Once home, trim the ends (like a bunch of flowers), wrap the bottom 3 to 4 inches of stems in damp paper towels, and store in a plastic bag in the refrigerator to keep crisp. Cook the greens within a couple days.

1 cup crumbled graham cracker
3/4 cup ground almonds
1/4 cup sugar
1 teaspoon ground cinnamon

3 (8 ounce) packages cream cheese
3/4 cup sugar
3 eggs
1 1/2 teaspoons vanilla
1 lb fresh blueberries (about 3 cups)

1 -2 teaspoon freshly grated lime zest
1/2 cup fresh lime juice
1 tablespoon cornstarch
1/2-1 teaspoon rose water (the greater amount creates a more pronounced rose flavor)

Steps:

  • Crust:.
  • Preheat oven to 350°F.
  • In a bowl, mix graham cracker crumbs, ground almonds, sugar, spices and butter. Press mixture into bottom and only 1/2- to 1-inch up sides of a 9-inch spring form pan, packing it tightly and evenly.
  • Bake until golden brown, about 8-12 minutes. Remove from the oven and allow to cool.
  • Cheesecake:.
  • In a large bowl, beat the cream cheese and sugar with an electric mixer until smooth, about 2 minutes. Blend in the eggs and vanilla to a creamy consistency. Pour into the cooled crust.
  • Bake at 350°F for 25-30 minutes, just until the outer edges begin to puff only slightly. The center will not appear set. The cheesecake will continue to cook after it is out of the oven. (You know you over-baked the cheesecake if it has a grainy texture after chilling. It should be completely smooth and creamy.).
  • Remove from the oven and let cool for at least 30 minutes.
  • Blueberry, Lime and Rose Water Topping:.
  • In a large saucepan, combine the blueberries, sugar, lime zest, lime juice and cornstarch, and mix well.
  • Bring to a full simmer to activate the cornstarch. When the liquid turns glossy, remove from the heat. Stir in rose water. Cool for 10-15 minutes.
  • Top the cooled cheesecake evenly with the sauce, let cool thoroughly.
  • Cover and refrigerate for at least 6 hours or overnight.

LIME WATER "CHICKEN HOUSE" SWEET PICKLES



Lime Water

This recipe is for the best sweet pickle you ever ate. They have a completely different appearance. The old timers called it "Chicken House Pickles". Hydrated lime is what I used. I use to get it at the feed store. Hydrated lime was mixed as a white wash that was painted inside chicken houses, to refresh and destroy bugs. It was also called Lime Water Pickles. I even used zucchini(peeled, seeded, and cut into thin chunks) and used a few drops of green food coloring. I have also used watermelon rind. These sweet pickles are a lot easier to make, than the "7 day" sweet pickles that 9 times out of 10 turned into shriveled looking pickles and had to be made into sweet relish.

7 pound(s) cucumbers, washed and sliced thin
- zucchini, pealed, seeded & cut into thin chunks
2 cup(s) hydrated lime (white)
2 gallon cold water
SYRUP
2 quart(s) white vinegar
10 1/2 cup(s) sugar
3 tablespoon(s) salt (non iodized)
1 teaspoon(s) celery seed
1 teaspoon(s) whole cloves (or 1/2 teaspoon ground cloves)
1 teaspoon(s) mixed pickling spice
- green food coloring

Steps:

  • In a large non metal container, add sliced cucumbers. (best to slice thin) Cover with the hydrated lime. Wonders of the new age... Pickling lime at Ace hardware (this is food grade hyd. lime) Add 2 gal cold water and let stand 24 hours. Drain, rinse well, several times with cold water. I halved this recipe and used my large crock pot ceramic insert. Juuuust enough room.
  • Cover with cold water and let stand for 3 hours. Drain well.
  • Mix together all the ingredients together, for the syrup. Add a few drops of green food coloring if you are using zucchini. Do not boil or heat. Pour over drained cukes and let stand over night.
  • In the morning, boil very gently for 45 minutes. Pack into jars while hot and seal. Process in a water bath. Water Bath : pints @ 10 min.. This makes 10 pints of zucchini pickles with a little left over which I put into a container and set in refrigerator. These are ready to eat.

CHIA LIME WATER

1/4 cup chia seeds, available in health food stores
Several sprigs of sage for garnish (optional)

Steps:

  • Stir together the water, lime juice and sugar until the sugar is dissolved. Stir in the chia seeds and garnish with the optional sage sprigs. Serve in tall glasses over ice.
