HOMEMADE CHILI LIME BAKED TORTILLA CHIPS



Homemade Chili Lime Baked Tortilla Chips image

Number Of Ingredients 7

3 tablespoons vegetable oil
2 tablespoons lime juice
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
Ten 5- to 6-inch white corn tortillas
1 teaspoon kosher salt

Steps:

  • Preheat the oven to 375 degrees F.
  • Add the vegetable oil, lime juice, chili powder, smoked paprika and cayenne pepper to a small bowl and whisk to combine.
  • Arrange the tortillas on a clean work surface. Using a pastry brush or a silicone brush, lightly brush the tortillas with the lime spice mixture. Be sure to just lightly coat the tortillas in the mixture; do not oversaturate them. Flip over the tortillas and lightly coat the other side as well.
  • Stack the tortillas and cut them in half, then cut each half into 3 chip-size wedges (6 wedges per tortilla). Transfer the wedges to 2 rimmed baking sheets and arrange them in an even layer, making sure not to overlap any. Sprinkle the salt evenly over the wedges on both baking sheets.
  • Bake until the chips are golden and crispy, about 15 minutes. Transfer the chips to a wire rack to cool slightly before serving.

LIME TORTILLA CHIPS AND ROASTED SALSA

4 tablespoons extra-virgin olive oil
4 slicing tomatoes, quartered (about 3 pounds)
2 cloves garlic
1 jalapeno
1 white onion, quartered
Kosher salt and freshly ground pepper
1/4 cup packed fresh cilantro leaves
3 tablespoons white distilled vinegar
1/2 teaspoon sugar
Juice of 2 limes
One 12-ounce bag corn tortilla chips
Zest of 2 limes
Juice of 1 lime

Steps:

  • For the roasted salsa: Position a rack on the top of the oven and preheat to 400 degrees F. In a large bowl, combine 3 tablespoons of the olive oil, the tomatoes, garlic, jalapeno, onions and sprinkle with salt and pepper. Place the vegetables on a baking sheet and roast until soft, 20 to 25 minutes. Add the roasted vegetables to a food processor with the remaining 1 tablespoon olive oil, the cilantro, vinegar, sugar and lime juice. Pulse until chunky. Sprinkle with salt and pepper.
  • Meanwhile, for the lime tortilla chips: Place the chips on a parchment-lined baking sheet and bake, about 5 minutes. Drizzle with the lime zest, lime juice and toss. Serve with the roasted salsa.

LIME TORTILLA CHIPS

1/4 cup freshly squeezed lime juice
2 teaspoons kosher salt
10 fresh corn tortillas, cut into quarters
2 quarts peanut oil

Steps:

  • In a small mixing bowl, combine the lime juice and salt. One at a time, dip the chips into the mixture and arrange on a cooling rack set inside a sheet pan. Allow to dry for 1 hour or until there are no visible signs of moisture on the chips.
  • Place the oil into a 5-quart pot or Dutch oven and heat to 365 to 375 degrees F. Gently lower the chips, 5 to 6 at a time, into the oil and fry for 20 to 30 seconds. Using a slotted spoon or spider, remove the chips to a newspaper-lined sheet pan. Allow to cool 3 to 4 minutes before serving.
  • *If you prefer plain tortilla chips simply stack the fresh tortillas, cut into quarters and fry according to the instructions above. If you are making chips from the Good Eats recipe in this episode, the cooking time will be 1 to 1 1/2 minutes.

BAKED LIME TORTILLA CHIPS

Got this from another recipe site and needed to have this here for reference. I bake these all of the time as they are healthy and cheap to make!

2 teaspoon(s) coarse sea salt
1 - lime, juiced
9 - whole small white corn tortilla shells
6 tablespoon(s) warmed bacon fat or olive oil

Steps:

  • Preheat oven to 350. Place salt in small bowl and juice from lime (about 1/4 cup).
  • Brush both sides of the whole tortillas with the bacon fat. Cut into fourths (or how small you want them). Place on metal pan and brush with the lime/salt mixture. Don't overlap the tortillas. Bake 10-14 minutes, turning over halfway through. Repeat with the remaining tortillas.
  • You can season to your own liking, using more or less salt in the lime mixture (if any at all). I have also used olive oil instead of the bacon grease and it works just fine.

SMOKY LIME TORTILLA CHIPS

1/2 teaspoon smoked salt
1/4 teaspoon ground chipotle
Zest and juice of 1 lime
6 cups tortilla chips

Steps:

  • In a small bowl, stir together the smoked paprika, smoked salt, chipotle and lime zest.
  • Spread half of the tortilla chips in a single layer on a platter. Sprinkle with half of the lime juice, followed by half of the spice mixture. Top with a second layer of tortilla chips and repeat with the remaining lime juice and spices. Serve.
