2 tablespoons olive oil
4 6-ounce tilapia fillets
kosher salt and black pepper
2 red bell peppers, thinly sliced
1 onion, thinly sliced
0.5 cup pitted green olives
0.5 cup fresh flat-leaf parsley, chopped
2 tablespoons fresh lime juice

Steps:

  • Heat 1 tablespoon of the oil in a large nonstick skillet over medium-high heat.
  • Season the fish with ¼ teaspoon each salt and pepper and cook until opaque throughout, 4 to 5 minutes per side.
  • Meanwhile, heat the remaining tablespoon of oil in a second large skillet over medium-high heat.
  • Cook the peppers and onion, stirring often, until tender, 8 to 10 minutes.
  • Stir the olives, parsley, lime juice, and ¼ teaspoon each salt and pepper into the vegetables. Serve with the fish.

4 fresh or thawed talapia filets
2 Tbsp olive oil
2 Tbsp honey
2 Tbsp lime juice
1 tsp lime zest
2 clove garlic, crushed
1/2 tsp salt and pepper
1/3 c flour
2 Tbsp olive oil for frying
additional honey and lime zest mixed for drizzling

Steps:

  • 1. 60 minutes before cooking season tilapia filets with salt and pepper then lay in a baking dish or into a large ziplock bag.
  • 2. In a bowl combine olive oil, honey, lime juice, zest, crushed garlic and whisk until combined.
  • 3. Pour over tilapia and let marinate for an hour. Add flour a bit more salt, pepper and lime zest to a bowl and set aside.
  • 4. Heat a cast iron or a nonstick skillet over medium high heat and add olive oil.
  • 5. Dredge each piece tilapia through the flour until you have a very light coating.
  • 6. Make sure the pan is hot. Add tilapia to the oil and cook until flaky and crispy on each side about 3-4 minutes per side.
  • 7. Remove tilapia from pan and let drain on a paper towel for a few minutes. Serve with an additional drizzle of lime and honey.

3 tablespoons lime juice
2 cloves garlic, minced
1 pound tilapia fillets
salt and pepper to taste
1 butternut squash - peeled, seeded and sliced
1 bunch fresh asparagus spears, trimmed and chopped
poultry seasoning
½ cup mozzarella cheese

Steps:

  • In a large bowl, mix the honey, lime juice, and garlic. Season tilapia with salt and pepper, place in the bowl, and marinate 1 hour in the refrigerator.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • Arrange the squash and asparagus in the baking dish. Place tilapia on top of vegetables, and season with poultry seasoning. Discard remaining marinade.
  • Bake 20 minutes in the preheated oven, until vegetables are tender and fish is easily flaked. Sprinkle with mozzarella, and continue baking 5 minutes, or until cheese is lightly browned.
