Cold, sweet, refreshing--what more could you want in a lovely adult beverage? Its bright, lemon flavor is perfect for brunch, or an afternoon on the patio!

1 ⅓ cups Prosecco (Italian sparkling white wine)
1 cup limoncello liqueur
1 (12 fluid ounce) can club soda, or as needed
¼ cup coarse sugar, or as needed
1 lemon slice
4 lemon slices, for garnish
fresh mint leaves for garnish

Steps:

  • Chill Prosecco, limoncello, and soda water. Place glasses in the refrigerator for about 30 minutes before using.
  • Pour sugar onto a small plate or saucer and spread out. Run lemon slice around the edge of each glass. Turn a glass upside down and place into the sugar, coating just the rim of each glass.
  • Fill each glass about 1/2 full with ice.
  • Pour 1/4 cup limoncello over the ice in each glass, and top with 1/3 cup Prosecco. Add chilled soda water to taste and gently stir.
  • Garnish with lemon slices and fresh mint sprigs. Serve ice cold.

A nice, refreshing simple drink from "Everyday Italian" with Giada De Laurentiis. Adapted because her version featured a homemade lime-based limoncello.

2 cups limoncello (Italian lemon liqueur)
coarsely crushed ice cube
1 cup fresh mint leaves
1 cup club soda
muddle stick (or handle of wooden spoon)
1 lime, for garnish (optional)

Steps:

  • Coarsely crush the ice cubes, then fill 4 tall skinny drink glasses halfway full with the ice.
  • Add 1/4 cup mint leaves to each glass and, using a muddle stick or the handle of a wooden spoon, crush the mint leaves together with the ice (this is called "muddling").
  • Add 1/2 cup limoncello to each glass, and stir.
  • Add 1/4 cup of club soda to the top of each drink, and serve.
  • Note: on the show, Giada made her own limoncello from limes rather than from lemon, vodka, and simple syrup, with a week or marinating; if you can find a lime-based limoncello in the store, wonderful (we've only made it ourselves at home) - but otherwise you can use conventional limoncello.
  • Also, you could quarter a lime and put each quarter on the edge of the glasses, so that guests could add a squeeze of lime juice into their spritzer.

1 cup sugar
1 cup water
2 limes, zested and juiced, plus lime wedges for rimming the glasses and garnish
1 (1/2-inch) slice fresh ginger
Kosher salt or sugar, for rimming glasses (optional)
24 ounces sparkling water

Steps:

  • For the simple syrup: Heat the sugar, water, lime zest, and ginger in a medium saucepan over medium-high heat to boiling. Simmer for 3 to 4 minutes, and then remove from the heat. Add the lime juice and let the flavors infuse the syrup for at least 15 minutes while it cools. Strain the syrup, if you wish, and keep in the refrigerator until ready to use.
  • For the drink: Rub a lime wedge around the lip of the glasses to moisten and then dip in salt or sugar to decorate the glasses, if desired. Pour 1 or 2 tablespoons of the lime syrup into each glass and top with sparkling water. Garnish with a wedge of lime.
  • Cook's Note: Sparkling wine can be used instead of water, if desired.

2 lbs limes (about 10 large)
1 (750 ml) bottle 100 proof vodka
2 1/2 cups sugar
2 1/2 cups water
ice cube
1 cup fresh mint leaves
1 cup club soda

Steps:

  • To make limoncello:
  • Using a vegetable peeler, remove the peel from the limes in long strips (reserve the limes for another use).
  • Place the lime peels in a 1-quart jar.
  • Pour the vodka over the peels and screw on the lid.
  • Steep the lime peels in the vodka for 1 week at room temperature.
  • Stir the sugar and water in a large saucepan over medium heat until the sugar dissolves, about 5 minutes.
  • Cool completely, then stir in the vodka mixture.
  • Strain the liquids into bottles, pressing on the peels to extract as much liquid as possible.
  • Seal the bottles and refrigerate until cold, at least 4 hours and up to 1 month.
  • To make spritzers:
  • Fill 4 tall glasses halfway with ice.
  • Add the mint leaves.
  • Using the handle of a wooden spoon, coarsely crush the mint leaves into the ice.
  • Pour some limoncello over, and stir to blend.
  • Add a splash of club soda and serve.
