Found on www.AmishDining.com. A recipe seldom gets any easier than this one. Kids could make this with just a bit of supervision. My mother used to make something like this that had these same ingredients. This is much like her's, and since she was not a dessert maker, I am sure she would have opted for a simple recipe. Other flavors of gelatin work too, like Cherry and Strawberry which are perfect for Valentine's Day. NOTE: Times do not include the 2-3 hours for chilling time. Servings are approximate.

1 (3 ounce) package lime gelatin, dry
2 cups cottage cheese
1 cup crushed pineapple, drained
2 cups whipped topping, thawed
1 cup walnuts, chopped

Steps:

  • In a 4-6 quart bowl, pour dry gelatin over cottage cheese, pineapple, whipped topping and nuts; stir together well.
  • ***Chill 2 to 3 hours***.

Great dessert for any occasion which can be made with different flavors of Jello.

CRUST:
1/4 cup(s) butter, melted
1/4 cup(s) shortening, melted
1 cup(s) all purpose flour
1/4 cup(s) sugar
3/4 cup(s) pecans or walnuts, chopped
CREAM CHEESE LAYER:
8 ounce(s) cream cheese, softened
1 cup(s) powdered sugar
1 cup(s) cool whip
1 teaspoon(s) imitation vanilla
JELLO LAYER:
6 ounce(s) lime jello
2 cup(s) boiling water
2 cup(s) crushed pineapple with juice
TOPPING:
1 cup(s) cool whip

Steps:

  • Preheat oven to 350 degrees. Spray bottom of a 9 x 9" glass baking pan with cooking spray with flour. Mix butter, shortening, flour, sugar and nuts. Press mixture into baking dish. Bake 20-25 minutes or until lightly browned. Cool completely.
  • With electric mixer, beat cream cheese; gradually add powdered sugar and mix until smooth. Stir in Cool Whip and vanilla. Spread over cooled crust; spreading to edges of pan to prevent Jello mixture from seeping through and making crust soggy.
  • Dissolve jello in boiling water, stir in pineapple; set aside. Place bowl of jello mixture in a larger bowl containing ice cubes and cold water to slightly thicken jello. Spoon jello mixture over cream cheese mixture. Refrigerate until set.
  • Before serving, spread with Cool Whip. Store in refrigerator.
