GRILLED JALAPENO AND LIME SHRIMP SKEWER
With juicy citrus flavor and a bit of heat from the jalapenos, you're going to fall in love with this shrimp recipe. It's delicious and super easy to prepare!

Steps:
- 1. For Marinade: Process all ingredients in food processor until smooth, about 15 seconds. Reserve 2 tablespoons marinade; transfer remaining marinade to medium bowl.
- 2. For Shrimp: Pat shrimp dry with paper towels. To butterfly shrimp, use paring knife to make shallow cut down outside curve of shrimp. Add shrimp to bowl with marinade and toss to coat. Cover and refrigerate for at least 30 minutes up to 1 hour.
- 3. Prepare your grill, clean and oil so the shrimp want stick. Thread marinated shrimp on skewers. (Alternate direction of each shrimp as you pack them tightly on skewer to allow about a dozen shrimp to fit snugly on each skewer.)
- 4. Sprinkle 1 side of skewered shrimp with sugar. Grill shrimp, sugared side down, over hot side of grill, until lightly charred, 3 to 4 minutes. Flip skewers and move to cool side of grill and cook, covered until other side of shrimp is no longer translucent, 1 to 2 minutes. Remove and toss with reserved marinade. Sprinkle with cilantro and serve.
COCONUT LIME SHRIMP W/ MANGO JALAPENO DIPPING SAUCE
I was looking for recipes to use up the jalapeños I'm growing, plus the mangoes, shrimp, and limes that I had on hand. I found this one, hope you enjoy it as much as we did. We did fry them, but they can also be baked in a 475°F oven and still come out crispy.

Steps:
- Make the sauce first.
- In a food processor or blender, mix all ingredients until blended.
- For shrimp.
- Crush Tortilla Chips until coarsely ground and mix with shredded coconut.you can use a processor if you have one.
- Place mixture on plate and set aside.
- In a bowl, whisk flour, beer and lime juice until blended and lump free.
- Butterfly each shrimp by cutting down it's center.
- In a skillet, heat canola oil.
- Dip shrimp in beer batter and press each side in coconut mixture until heavily coated.
- Place shrimp in hot oil and cook for 3-5 minutes on each side.
- Cook in batches if the shrimp are very large.
- Remove shrimp from oil and drain on paper towel to remove excess oil.
- Or bake--.
- Spray a pan with non stick spray, place in 475°F oven and bake for 6 minutes per side.
- Fried or bakes, serve them with the mango jalapeño dipping sauce.
SHRIMP WITH JALAPENO, TEQUILA AND LIME
I first had this at a little neighborhood restaurant next door to a bed and breakfast I stayed at in San Francisco. Unfortunately both are now gone. This serves 4 as an appetizer or 2 as an entree.

Steps:
- 1. Heat oil in a large non-stick skillet over medium-high heat. Add garlic and saute until fragrant, about 1 minute. Add jalapeno and cook 1 minute more.
- 2. Add shrimp and saute until just turning pink.
- 3. Add tequila, triple sec and lime juice and cook shrimp until just done. Do not overcook.
- 4. Spoon onto individual plates and garnish with chopped cilantro, lime wedges and sprinkle with a little margarita salt.

Heat all burners on high for 15 minutes. Scrape cooking grate clean. Meanwhile, thread marinated shrimp on skewers according to photo 2. Sprinkle one side of shrimp with sugar. Grill shrimp, sugared side down, with lid down, until lightly charred, 3 to 4 minutes. Turn all burners off, flip skewers, close lid, and cook until other side of shrimp is no longer translucent, 1 to 2 minutes. Using tongs, slide shrimp into medium bowl and toss with reserved marinade. Sprinkle with cilantro and serve.
LIME JALAPEÑO SHRIMP
Steps:
- Make a marinade: combine jalapeño, olive oil, lime juice and rind, cumin, garlic, cayenne, and salt in a blender and process until smooth. Reserve 2 tbs. Transfer to a medium bowl and toss with shrimp. Let sit in refrigerator for 1 hour. Hear grill to high heat. Add sugar to shrimp, them place on grill, cook for 3 minutes per side. remove shrimp to a bowl and toss with reserved marinade and cilantro. Serve
