This lime jello salad offers everything people adore (or cannot abide) about over-the-top congealed salads. Not everyone enjoys a congealed salad, not even when they harbor fond memories of a grandmother or other family members serving these molded creations on special occasions. That just means there's more for the rest of us.

Yield Makes 16 servings

Number Of Ingredients 12

1 (6-oz.) package lime gelatin
1 (6-oz.) package lemon gelatin
1 1/2 cups boiling water
1 1/2 cups ice water
1 cup well-drained crushed pineapple
2 cups cottage cheese
1 cup mayonnaise
1 (14-oz.) can sweetened condensed milk
3 tablespoons prepared horseradish
3 tablespoons fresh lemon juice
1/4 teaspoon salt
1 cup finely chopped nuts

Steps:

  • Dissolve gelatin in boiling water in a large bowl. Add ice water, and stir until ice melts and gelatin mixture cools. Stir in pineapple. Cover and chill 45 minutes or until slightly set. The mixture should be the consistency of uncooked egg whites.
  • Stir together cottage cheese, mayonnaise, sweetened condensed milk, horseradish, lemon juice, and salt in a medium bowl; stir into gelatin mixture. Fold in nuts.
  • Pour into mold, if desired. Cover and chill overnight.

2 cups boiling water
1 quart lime sherbet
1 carton (8 ounces) frozen whipped topping, thawed

Steps:

  • In a large bowl, dissolve gelatin in boiling water. Beat in sherbet until melted. Add whipped topping; beat well. , Pour into an 8-cup ring mold coated with cooking spray. Refrigerate for 4 hours or until set. Unmold onto a serving platter.

I recall my grandmother making a lime gelatin salad when I was a child and went searching...and oh, boy did I ever find one! Even better than my grandmothers!! This is so rich and delicious -- I ate it for breakfast with the tiny bit of leftovers from the holiday meal!

1 c boiling water
1 pkg lime flavored gelatin (6 oz.)
1 can(s) crushed pineapple in juice (drain & reserve juice)
1 pkg cream cheese (8 oz.), softened
2 c heavy whipping cream
1 c chopped pecans

Steps:

  • 1. In a large bowl, pour 1 cup boiling water over gelatin mix. Stir until COMPLETELY dissolved then stir in 1/2 cup reserved pineapple juice. Refrigerate until thickened but not set, about 1 hour. Meanwhile, place crushed pineapple and remaining juice in a small saucepan. Bring to a boil, reduce heat, and simmer for about 5 minutes. Remove from heat and cool to room temperature. With an electric hand mixer, blend softened cream cheese into lime gelatin mixture until smooth. Stir in cooled pineapple. In your stand mixer bowl, beat whipping cream until soft peaks form. Fold into gelatin/cream cheese/pineapple mixture, until combined. Fold in chopped pecans. Pour mixture into Jell-O mold (5-6 cup capacity) or a pretty glass serving or trifle bowl. Refrigerate for at least 4 hours or until set.

Found on www.AmishDining.com. A recipe seldom gets any easier than this one. Kids could make this with just a bit of supervision. My mother used to make something like this that had these same ingredients. This is much like her's, and since she was not a dessert maker, I am sure she would have opted for a simple recipe. Other flavors of gelatin work too, like Cherry and Strawberry which are perfect for Valentine's Day. NOTE: Times do not include the 2-3 hours for chilling time. Servings are approximate.

1 cup lemon-lime soda
1/2 cup chopped pecans
1 carton (8 ounces) frozen whipped topping, thawed, divided

  • Dissolve gelatin in water. In a bowl, beat cream cheese until fluffy. Stir in gelatin mixture and beat until smooth. Stir in vanilla, oranges, pineapple, soda and pecans. 1 cup boiling water

1 (8 ounce) can crushed pineapple, with juice

1 cup lemon-lime flavored carbonated beverage
½ cup chopped pecans

Steps:

  • In a large bowl, dissolve the gelatin and sugar in the boiling water. Add the cream cheese and whisk until the melted into small chunks. Add pineapple with juice, soda and nuts and stir until evenly combined. Chill until set.

3 ounces vanilla pudding mix
5 ounces lime jello
4 cups of water
1/2 of a 20 ounce can crushed pineapple, drained
1/2 cup coconut flakes
1 8 ounce container Cool Whip

Steps:

  • Bring 4 cups of water to a boil.
  • Remove from heat and quickly mix in the jello and pudding mix.
  • Pour into a glass dish and add pineapple evenly throughout. I have used various sizes of glass dishes, they all work.
  • Cover and place in the fridge for at least four hours.
  • Remove from fridge and move the jello to a large bowl - mash around until it's broken up.
  • Mix in Cool Whip and coconut flakes.
  • Keep refrigerated until ready to serve.
