2 cups dry lima beans
1 medium onion, chopped
1 teaspoon salt
1/2 teaspoon black pepper
1 cup chopped ham or a ham bone
Dumplings
1 egg
salt
flour
1 tablespoon water

Steps:

  • Wash beans, cover with water, soak overnight. Add more water when preparing to cook. Add salt. Cook until beans are almost tender. Add onion, pepper and ham. Cook until done. For Dumplings: Mix egg with salt and water. Add flour until mixture is quite stiff. Drop by teaspoonfuls into bubbling soup. Cook one minute.

Dad's Lima Bean Soup with Ham Bone image

This was one of my father's favorite dishes, a staple of Depression-era cooking when fresh meat was scarce and soup stretched everything. Simmered until thick, with chunks of ham - even lima-bean-haters enjoy this hearty soup.

1 (16 ounce) package dried lima beans
1 ham bone with some meat
8 cups water, or more as needed
1 tablespoon olive oil
4 stalks celery, diced
1 onion, diced
½ pound diced cooked ham
4 carrots, peeled and sliced
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried parsley

Steps:

  • Place beans in a large pot; cover with 2 inches water. Bring to a boil. Remove from heat, cover, and let stand for 1 to 2 hours. Drain and rinse. Transfer beans to another container.
  • Combine ham bone and 8 cups water in a large saucepan. Simmer over medium-low heat until remaining meat falls off the bone, about 2 hours. Remove and discard bone. Use a slotted spoon to transfer meat to a bowl.
  • Heat oil in a skillet over medium heat. Add celery and onion; cook and stir until onion is translucent, 7 to 10 minutes. Add cooked ham bone meat, lima beans, and diced ham. Reduce heat and simmer, adding additional water as needed, until soup is thickened to desired consistency, about 90 minutes.
  • Stir carrots, salt, pepper, and parsley into the soup. Let simmer until carrots are soft, about 30 minutes more.

3 cups water
1 can (15-1/2 ounces) kidney beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1 can (14-1/2 ounces) Mexican stewed tomatoes
1 can (4 ounces) chopped green chilies
2 cups frozen corn, thawed
1 cup chopped onion
1 cup chopped carrots
3 beef bouillon cubes
3 garlic cloves, minced
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
DUMPLINGS:
1/2 cup all-purpose flour
1/4 cup yellow cornmeal
1 teaspoon baking powder
Dash each salt and pepper
1 egg white, beaten
3 tablespoons milk
1 tablespoon canola oil

Steps:

  • In a large saucepan over medium heat, combine the first 13 ingredients; bring to a boil. Reduce heat; cover and simmer for 1 hour or until vegetables are tender. , For dumplings, combine flour, cornmeal, baking powder, salt and pepper. Combine egg white, milk and oil; stir into dry ingredients. Drop into eight mounds onto boiling soup. Reduce heat; cover and simmer for 15-20 minutes (do not lift the cover).

Mom's recipe. The cooking time depends on if you're using fresh or frozen lima beans. Fresh take an hour or more. Frozen take much less. (Check the package.)

1 lb fresh or 20 oz. frozen lima beans
fresh ham pieces, optional
1 1/2 c water, or so
3 c milk
2 Tbsp butter
salt & pepper, to taste
1 good shake of onion flakes
DUMPLINGS
2 c bisquick mix
2/3 c milk

Steps:

  • 1. Cook lima beans with salt & pepper and ham pieces in water until done. Stir often. When finished, leave (or add) about 1 inch of water covering the beans.
  • 2. Add butter and milk. Continue cooking about 5 more minutes, until everything is boiling again. Stir well.
  • 3. While you're waiting, mix the Bisquick & milk together to make the dumplings. Drop spoonfuls of dumpling batter onto the boiling beans.
  • 4. Cook for 10 minutes UNCOVERED, then 10 minutes COVERED.
  • 5. Serve hot with cornbread or bread & butter.

1 large celery stalk, finely chopped
1 large carrot, unpeeled, finely chopped
1 large onion, finely chopped
3 garlic cloves, finely chopped
2 tablespoons extra virgin olive oil
Salt to taste
1/2 pound dried lima beans, soaked overnight and drained
1/2 cup pearl barley
1 pound meaty lamb neck or beef shin bones
3/4 ounce dried porcini mushrooms
4 thyme sprigs
1 bay leaf
Freshly ground black pepper to taste
1 tablespoon minced shallot
1 tablespoon chopped parsley

Steps:

  • In a soup pot, combine celery, carrot, onion, garlic, olive oil and salt. Cover and cook over low heat, stirring occasionally, until soft, about 10 minutes. Add lima beans, barley, 8 cups water, bones, porcini, thyme and bay leaf, and bring to a boil. Reduce heat to medium-low and simmer, uncovered, until beans are tender, about 1 1/2 hours.
  • Discard thyme sprigs and bay leaf. Remove bones, remove meat from bones, chop meat and return meat to soup. Taste and add salt if needed. Ladle soup into bowls and season with pepper. Garnish with shallot and parsley, and serve.

4 cans trappy's butter beans
2 cups chicken broth
Family pac mary b's frozen dumplings
2 cups butter, melted
2 tsp salt
1 tsp pepper

Steps:

  • 1. In a large pot add 4 cans butter beans, 2 cups butter, and 2 cups chicken broth bring to a rolling boil.
  • 2. Reduce heat to medium and Slowly drop in dumplings one at a time stir occasionally.
  • 3. Once all dumplings have been added reduce heat to simmer and cover for 45 minutes stirring occasionally . After 45 minutes turn the heat off and enjoy!

SLIPPERY DUMPLINGS

I like to put these in lima bean soup and vegetable soup. They can also be used in chicken and dumpling recipes. They are also much cheaper to use than the Auntie Anne's dumplings. If you want to, you can freeze the uncooked dumplings for future use. I add the dumplings, in the last 15 minutes of cooking time when making a soup. Otherwise they cook too long.

1 teaspoon baking powder
1 teaspoon salt
1 1/2 teaspoons shortening

Steps:

  • Place dry ingredients in a bowl.
  • Mix dry ingredients.
  • Cut shortening into dry ingredients.
  • Add water slowly, just enough to make a stiff dough.
  • If the dough is tacky, add a small amount of flour until it is stiff.
  • Roll dough out very thinly, about 1/2 centimeter thick.
  • With a sharp knife cut the dough into small squares, about 1 1/2 inch wide by 2 inches high.

1 pound dried lima beans
1 large meaty ham bone or 2 ham hocks
2-1/2 quarts water
5 celery ribs, cut into chunks
5 medium carrots, cut into chunks
1 garlic clove, minced
2 tablespoons butter
2 tablespoons all-purpose flour
2 teaspoons salt
1/2 teaspoon pepper
Pinch paprika
1 cup cold water
1 can (14-1/2 ounces) stewed tomatoes

Steps:

  • Place beans in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour. Drain and discard liquid; return beans to pan. , Add ham bone and 2-1/2 qt. water; bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours. , Debone ham and cut meat into chunks; return to pan. Add celery and carrots. Cover and simmer for 1 hour or until beans are tender. , In a small skillet, saute garlic in butter for 1 minute. Stir in the flour, salt, pepper and paprika. Add cold water; bring to a boil. Reduce heat; cook and stir for 2 minutes or until thickened. Add to the soup with tomatoes; simmer for 10 minutes or until heated through.
