This is one of my favorite cream soups.

Number Of Ingredients 10

2 medium leeks,cut in half and sliced thin,just the white part
5 medium shallots chopped medium
1/3 c garlic,minced
1 bunch green onions, chopped
1/2 c chives, dried
5 medium onions, yellow
3 qt chicken stock
1 qt heavy cream
salt and pepper to taste
1/3 c diced red peppers for garnish

Steps:

  • 1. Saute 1,2,3,4,6,Do not brown.Heat chicken stock to a simmer and add the sauted ingredients.Simmer for 15 minutes and add heavy cream.Then add the scallions and chives.
  • 2. Then add one cup of blond roux and stir until you get a med consistance.Simmer about 15 more minutes. Add salt and pepper to taste.
  • 3. Laddel into cups or bowls and garnish with diced red peppers and serve.

CHRISTMAS BELLS/STRAWBERRY LILIES

Another pretty holiday cookie. These are easy and tasty.

1/4 c sugar
1 c butter, softened
1/2 pkg cream cheese (4 oz)
1 tsp vanilla
2 c flour
1/4 tsp salt
1/2 c strawberry jam
powdered sugar

Steps:

  • 1. Combine sugar, butter, cream cheese and vanilla. Beat at medium speed for about 1 minute, scraping sides of bowl often, until well mixed.
  • 2. Reduce to low speed and add flour and salt. Make sure it is blended well, and then divide dough into four equal sections. Wrap each section individually with plastic wrap and refrigerate at least 2 hours, until firm.
  • 3. Heat oven to 375* On lightly floured surface, roll out dough one section at a time, keeping other sections refrigerated, to 1/8" thickness. Cut out with 2-inch round cookie cutter. Place 1 inch apart on cookie sheets. Spoon 1/4 teaspoon of jam onto center of unbaked circle. With thin spatula, fold cookie over to form bell or lily shape and gently press narrow end to seal. The jam will show at the top and the cookie will be cone-shaped. Repeat with remaining dough and jam.
  • 4. Bake for 7-11 minutes or until edges are very lightly browned. Cool completely and sprinkle with powdered sugar.
  • 5. This recipe is delicious with peach or apricot jam too, although not very Christmasy! Enjoy.

This recipe comes from my dear friend Pat! I can remember her making these at Easter and still does to this day! They are easy, fun to make and pretty!

3 eggs
3/4 cup sugar
1 cup flour
1 teaspoon vanilla
1 teaspoon baking powder
1 pinch salt

Steps:

  • Beat egg;.
  • Add rest of ingredients and beat well.
  • Drop by teaspoon full on to lightly greased baking sheets.
  • Bake for 5 minutes at 375 degrees until golden brown.
  • As soon as you remove the round sponge cake from oven, while still warm, fold over into a cone shape and hold in place with a wooden toothpick.
  • When completely cooled, fill centers with whipped cream (can use a cake decorating bag and tip or put whip cream in a ziploc bag and cut corner off to squeeze into cone).
  • Cut a thin strip of peach and insert into whipped cream at wide part of cone to look like a lily.

CREAM CHEESE LILIES



Cream Cheese Lilies image

When I was 10 yrs old, my best friends' mom used to make these. They never made it to the cookie jar! Been my favorite for the last 47 years. They just melt in your mouth...literally!

Number Of Ingredients 5

9 ounce(s) cream cheese, room temperature
2 cup(s) butter, softened
4 cup(s) all purpose flour
- strawberry, apricot, or raspberry jam
- powdered sugar

Steps:

  • Cream the cheese and butter. Add flour. Mix thoroughly. Roll to 1/5" thick on board dusted with powdered sugar. Cut into 2" circles with cookie cutter. Fold bottom right edge of cookie toward center. Do the same with bottom left edge of cookie, overlapping the 2 edges. This will form a lily shape; round on top, pointed at the bottom, sort of like a fan. Bake 6-7 minutes @ 375* on an ungreased sheet. These will puff up significantly while baking. Do NOT let them brown on the bottom! Remove to a wire rack, let cool. Fill the fan end of the cookie with your flavor choice of jam and dust with powdered sugar. Then just let them melt in your mouth. They do not freeze well, but they'll be gone before you know it anyway! To store...non air tight container. do not fill with jam or dust with powdered sugar until you are ready to eat.

1 large onion, coursely chopped
1 large leek, coursely chopped
6 shallots, coursely chopped
4-6 garlic cloves, smashed with side of knife
6 green onions, coursely chopped
1/4 cup (1/2 stick) butter
3 cups chicken stock
3 cups beef stock
1 cup half and half
Pale dry sherry to taste
1/2 cup chopped chives

Steps:

  • In a large pot, sweat the onion, leek, shallots, garlic and green onions in the butter keeping the heat on low, placing a piece of parchment paper directly on top of the ingredients, and covering pot tightly for 20 minutes or so. This step allows the ingredients to release their moisture and flavor without their liquids evaporating. Add the stock and cook for 10 minutes. Remove from the heat and add the half and half and sherry and puree in a food procesor or blender. Garnish with chopped chives.
