This is a compilation of a couple of different recipes I found on the web. My husband loves sweet potatoes with LOTS of marshmallows and wanted a casserole like one of his aunts used to make. After a few trials, this was the final incarnation. It is now a Thanksgiving staple for both his and my family's dinners.

1 (40 ounce) can bruce cut yams, drained
1/2 cup brown sugar
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 egg, beaten
4 tablespoons melted butter
1 (16 ounce) bag miniature marshmallows

Steps:

  • Spray 1 quart baking dish with Pam.
  • Heat oven to 350 degrees.
  • Mash yams in a large bowl and add brown sugar, salt, cinnamon, egg, and melted butter.
  • Mix well.
  • Place 1/2 mixture in baking dish.
  • Top with a layer of marshmallows, then add remaining mixture.
  • Bake for 30 minutes.
  • Remove from oven and top with remaining marshmallows.
  • Turn oven to broil and move casserole to the upper middle rack. Broil for approximately 5 minutes or until marshmallows are lightly browned.

This is a light, healthy, but flavorful version of everyone's favorite! This is to be made the day before, so the flavors have a chance to be brought out. Enjoy! I know we did. Prep time doesn't include overnight refrigeration or preparing the sweet potatoes for mashing.

4 cups mashed sweet potatoes or 4 cups mashed yams
4 1/2-5 tablespoons light brown sugar
1/3 cup evaporated skim milk (you may have to use more or less to reach desired consistency)
2 tablespoons margarine, at room temperature
8 teaspoons freshly squeezed orange juice
1/2 teaspoon freshly grated orange rind
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 pinch ground allspice
1 pinch ground cloves
2 1/2-3 cups miniature marshmallows

Steps:

  • Bake, peel, and mash the sweet potatoes with a potato masher. To get four cups, its about 3 1/2-4 pounds of sweet potato.
  • In a large bowl, beat together the potatoes (cooled until just warm), sugar, milk, margarine, orange juice, vanilla, salt, orange zest, and spices and beat until completely smooth. Add more or less evaporated milk until desired consistency has been reached.
  • Spoon the mixture into a lightly greased casserole dish and refrigerate overnight.
  • The next day, bring sweet potato dish to room temperature, and bake (covered with a clear lid) for 35 to 45 minutes.
  • In the last 5 minute of baking, spread an even layer of marshmallows over top of the casserole.
  • WATCH CAREFULLY! Broil (uncovered) until the marshmallows are just turning a darker brown and they are starting to puff.
  • SERVE!

5 sweet potatoes, sliced
¼ cup reduced fat margarine
½ cup packed brown sugar
3 tablespoons orange juice
1 pinch ground cinnamon
1 (10.5 ounce) package miniature marshmallows

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil, and cook until tender, about 15 minutes. Remove from heat, drain, and mash.
  • Place mashed sweet potatoes in large bowl, and use an electric mixer to blend with the margarine, brown sugar, orange juice, and cinnamon. Spread evenly into a 9x13 inch baking dish. Top with miniature marshmallows.
  • Bake for 25 to 30 minutes in the preheated oven, or until heated through, and marshmallows are puffed and golden brown.

6 large sweet potatoes
3 tablespoons packed light-brown sugar
3 tablespoons packed dark-brown sugar
2 large eggs, beaten
1/4 cup freshly squeezed orange juice
2 tablespoons unsalted butter, melted
1 teaspoon pure vanilla extract
1/2 teaspoon coarse salt
3 tablespoons unsalted butter, slightly softened
1/4 cup packed light-brown sugar
1/4 cup packed dark-brown sugar
3/4 cup chopped pecans

Steps:

  • Preheat oven to 375 degrees.
  • Make the sweet potatoes: Place sweet potatoes on a baking sheet and roast until very tender, about 1 hour and 20 minutes. Remove from oven and let cool slightly. Reduce oven temperature to 350 degrees.
  • When potatoes are cool enough to handle, cut in half, scoop flesh into a bowl and mash until smooth. You should have 4 to 5 cups of mashed sweet potato. Stir in brown sugars, eggs, orange juice, butter, vanilla, and salt; transfer to an 8-inch square baking dish.
  • Make the topping: In a small bowl, mix together butter, brown sugar, and pecans. Sprinkle over sweet potato mixture. Transfer to oven and bake until nuts are toasted and casserole has puffed, about 30 minutes. Serve.

This version of the classic Thanksgiving side dish forgoes the traditional marshmallow topping for a generous sprinkle of brown sugar, butter and pecans. You get crunchy, soft and sweet all in one glorious bite.

1/4 cup orange juice
1/4 cup heavy cream or whole milk

3 tablespoons unsalted butter, softened slightly
1/2 cup dark brown sugar
3/4 cup chopped pecans

Steps:

  • To make the casserole, heat oven to 375 degrees. Bake sweet potatoes until very tender, about 1 hour 20 minutes. Remove and let cool. Reduce heat to 350 degrees.
