6 large Egg yolks
1/3 cup Besti Powdered Monk Fruit Allulose Blend ((or 1/2 cup if you want it very sweet))
1 1/2 cups Unsweetened almond milk ((or coconut milk beverage for nut-free))
1 1/2 cups Heavy cream ((or coconut cream for dairy-free))
1/2 tsp Nutmeg
1/2 tsp Cinnamon
1 cup Bourbon ((optional))
1 tsp Vanilla extract

Steps:

  • Use a hand mixer to beat the yolks, until light yellow in color. Add Besti a little bit at a time, beating constantly, until dissolved. Set aside.
  • In a medium saucepan, combine the almond milk, cream, cinnamon, and nutmeg. Bring the mixture to a gentle boil, stirring occasionally. Remove from heat immediately once it starts to boil. Stir in the vanilla.
  • While whisking constantly, pour the hot milk mixture into the bowl with the yolks in a thin stream. This is called tempering.
  • Pour the mixture back into the saucepan. Heat over medium-low heat, whisking constantly, until the mixture thickens slightly or reaches 160 degrees F (71 degrees C). Do not let it boil. It will thicken more as it cools.
  • If you want to add bourbon, add it now. (This is not required, but your eggnog will keep for longer if you do.)
  • Pour the sugar-free eggnog into a bowl, bottle, or pitcher, cover, and refrigerate for at least 3-4 hours, until cold, or longer until ready to serve.
  • Serve with sugar-free whipped cream, cinnamon and nutmeg for garnish.

2 cups nonfat milk
2 large strips orange and/or lemon zest
1 vanilla bean
2 large eggs plus 1 egg yolk
1/3 cup sugar
1 teaspoon cornstarch
White rum or bourbon (optional)
Freshly grated nutmeg, for garnish

Steps:

  • Combine 1 1/2 cups milk and the citrus zest in a medium saucepan. Split the vanilla bean lengthwise and scrape out the seeds; add the seeds and pod to the saucepan and bring to a simmer over medium heat. Meanwhile, whisk the eggs, egg yolk, sugar and cornstarch in a medium bowl until light yellow.
  • Gradually pour the hot milk mixture into the egg mixture, whisking constantly, then pour back into the pan. Place over medium heat and stir constantly with a wooden spoon in a figure-eight motion until the eggnog begins to thicken, about 8 minutes. Remove from the heat and immediately stir in the remaining 1/2 cup milk to stop the cooking. Transfer the eggnog to a large bowl and place over a larger bowl of ice to cool, then chill until ready to serve.
  • Remove the zest and vanilla pod. Spike the eggnog with liquor, if desired, and garnish with nutmeg.

4 cups skim milk
1/2-1 cup Egg Beaters egg substitute
1/4 cup Splenda granular
3 tablespoons sugar-free instant vanilla pudding mix
2 teaspoons vanilla extract
1/2 teaspoon rum extract
1/2 teaspoon brandy extract
1/2 teaspoon ground nutmeg

Steps:

  • Place all of the ingredients in a blender, and blend for 30-60 seconds, or until smooth. Chill for several hours.
  • Shake or stir eggnog well to blend before serving. Serve in glasses or mugs with an additional sprinkle of nutmeg.
  • NOTES: You can use 6 packets of Equal instead of the Splenda Granular. If you'd rather not use artificial sweeteners, then substitute the Splenda with 1/4 cup sugar, and use 1/2 cup regular instant vanilla pudding instead of the 3 Tbsps sugar-free pudding.

1 (1 ounce) package sugar-free instant vanilla pudding mix
7 cups nonfat milk, divided or 7 cups low-fat milk
1 pinch nutmeg (optional)
2 teaspoons vanilla or 2 teaspoons rum extract
sugar substitute (to taste)
1 cup fat-free evaporated milk

Steps:

  • In a bowl combine the pudding mix with 2 cups fat-free milk, tiny pinch nutmeg (if using) vanilla or rum extract and sugar substitute (to taste) mix on low speed using an electric mixture until thickened (adjust the sugar substitute to taste if needed).
  • Pour into a large container with a tight-fitting lid; add in 3 cups milk, cover with lid and shake vigorously.
  • Add in evaporated milk with remaining 2 cups milk and shake well again.

1 cup Splenda granular, no calorie artificial sweetener
1 tablespoon arrowroot or 1 tablespoon cornstarch
1 teaspoon ground nutmeg
7 egg yolks
4 cups milk
2 cups fat-free half-and-half
2 tablespoons vanilla extract

Steps:

  • Note - if you wish to use rum, use 1 cup (235 mL) dark rum in place of the 2 tablespoons of vanilla extract.
  • Mix together first 3 ingredients in a large heavy saucepan. Set aside.
  • Whisk egg yolks; add to SPLENDA® Granulated mixture whisking until blended. Gradually whisk in milk.
  • Cook over low heat, whisking constantly until the temperature reaches 175°, approximately (5 to 8 minutes). Remove from heat and whisk in half and half; cool.
  • Cover and chill 3 hours or up to 3 days. Stir in rum or vanilla just before serving.
  • 15 servings. Prep time : 20 minutes, cooking time: 5-10 minutes.

Steps:

  • In a large mixing bowl, mix together sugar free vanilla pudding mix, nonfat milk, sweetener, ground cinnamon, dash of nutmeg , and rum extract. Mix these very well with a wire whisk for at least 2 minutes. If this is too thick, add more milk and sweetener.
