This is a great meal that we eat here often in the winter time. With some dark bread and maybe a salad it is a really hearty meal, though we have been known to eat just this for dinner. The recipe is adapted from Amy Dacyczyn's "The Complete Tightwad Gazette"

3 cups chicken broth or 3 cups vegetable broth
3/4 cup lentils
1/2 cup brown rice
3/4 cup chopped onion
1 teaspoon italian seasoning
1/4 teaspoon garlic powder (I use more)
1 cup grated cheese (cheddar or a blend is preferable)

Steps:

  • Preheat the oven to 300 degrees.
  • Mix all ingredients except the cheese in a baking dish (I use an 11 x 7).
  • Cover with foil and bake for 1 hour 10 minutes.
  • Then remove the foil, add the cheese, and bake for an additional 20 minutes.

1 pound Italian sausage
1 onion, chopped
1 green bell pepper, chopped
½ cup dry lentils
½ cup uncooked rice
1 ⅔ cups chicken broth

Steps:

  • In a large saucepan over medium heat, brown the sausage until no pink shows. Stir in the onion and green pepper, and saute until the onions are tender. Stir in the lentils, rice and chicken broth. Reduce heat, cover, and simmer for 40 to 60 minutes.

2 Tablespoons Olive Oil
1 Large Onion chopped
4 Cloves Garlic minced
1 4oz can green chilies
1/4 cup shredded basil leaves
1 tablespoon chopped fresh oregano (or 1 teaspoon dry)
1 tablespoon fresh thyme leaves (or 1 teaspoon dry)
1 cup pearl barley
1/2 cup long grain brown rice
1 cup lentils
3 1/2 cups chicken or vegetable broth or water
1/2 cup white wine
salt and pepper to taste
4 oz feta cheese (I usually double the amount of cheese)

Steps:

  • 1) Preheat the oven to 350 degrees 2) In a heavy 3 quart casserole, heat the oil over medium heat. Add onion and garlic and saute for 3 min until wilted. Stir in chilies, basil, oregano, and thyme. Add the barley and rice until coated with the oil. Add the lentils, broth, wine, salt, pepper, and half the cheese. Stir well, cover the pot, and bake for 1.5 hours. Stir half way through baking. 3) Uncover pot, sprinkle the top with remaining cheese and bake for another 5-10 minutes.

1/2 cup raisins
2 1/2 cups water
2 tablespoons soy sauce
2 teaspoons curry powder
2 tablespoons slivered almonds, if desired

Steps:

  • Heat oven to 375°F. In ungreased 2- or 2 1/2-quart casserole, mix all ingredients except almonds.

2 teaspoons vegetable oil
2 -3 garlic cloves, smashed
1 cup chopped onion
3/4 cup chopped green pepper
3 3/4 cups vegetable stock
3/4 cup brown rice
1/2 cup green lentil
1 teaspoon dried basil
1 teaspoon chili powder
1 (19 ounce) can red kidney beans, rinsed and drained
1 cup canned corn kernels or 1 cup frozen corn kernels, drained
1 cup mild salsa or 1 cup hot salsa

Steps:

  • In a non stick saucepan, heat oil over medium high heat.
  • Add garlic, onions and green pepper, cook for 3 minutes.

1-2 cloves garlic, chopped
2 large carrots, diced
1 1/2 teaspoons dried thyme
1 teaspoon garam masala (spice)
1 teaspoon sea salt
2 cups frozen chopped spinach
2 T. red wine vinegar
3/4 green lentils
1/2 cup brown basmati rice
4 cups water

Steps:

  • 1. Preheat oven to 350 2. In an oven-proof pot, heat olive oil over medium heat. Add chopped red onion and garlic. Saute for about 3 minutes, stirring frequently. Add the diced carrots, dried thyme, garam masala, and sea salt. Stir to coat with olive oil. Saute for a few minutes more and then add chopped spinach and stir. 3. Wait until the spinach has thawed and the mixture is sizzling again. Add brown rice vinegar and stir to remove any brown bits. Quickly add the lentils, brown rice, and water; mix well. 4. Place a cover on the pot (lid, foil) and put into preheated oven. Bake for 1 hour and 25 minutes.

I saw this in the "8 Week Cholesterol Cure" and thought it sounded good, but was skeptical of it passing the 'husband and kid test.' To my amazement, they loved it and left nary a scrap in the pot. A nice blend of sweet and savory.

1 tablespoon olive oil
1 small onion, minced
2 cloves garlic, finely chopped
1 teaspoon ground cinnamon
1 teaspoon sugar
1/2 cup dried lentils
1/2 cup pearl barley
1/2 cup long-grain rice
1/4 cup chopped dried apricot
1/2 cup raisins (I used golden sultanas)
1 1/2 teaspoons dried mint
pepper

Steps:

  • Heat oil in a medium-large saucepan (I used a 2Q pan and it was just right; I've also sauteed in water instead of oil).
  • Add onion and garlic; cook& stir 2 min.
  • Stir in cinnamon, sugar, and 4 c water.
  • Add lentils and barley.
  • Bring to boil on med heat; reduce heat to low.
  • Cover and simmer gently for 20 min.
  • Add rice, apricots, raisins, and mint; stir.
  • Simmer, covered, 20 more min or until all the ingredients are tender and have absorbed the liquid.
  • Season to taste with pepper.

After trying several complicated lentil recipes with dissatisfaction, I developed this delicious dish that is also so simple! Even my 3 year old loves it! Great side dish or a yummy vegetarian meal.

1/4-1/2 cup margarine
1 onion, chopped
1 cup dry lentils
1 cup uncooked rice (, not instant rice)
2 1/2 cups hot water
2 1/2 teaspoons chicken bouillon granules
1 1/2 cups cold water
1 1/2 cups shredded cheddar cheese
1 piece sandwich bread
oil
italian seasoning
1 teaspoon parmesan cheese

Steps:

  • Use a big pot and cook onion in margarine until soft.
  • In a bowl, stir together bouillon and hot water.
  • Add lentils, rice, bouillon-water mixture and cold water.
  • Bring to a boil.
  • Lower heat, cover and simmer 25 minutes, stirring occasionally.
  • Meanwhile, fry both sides of a slice of bread in oil and sprinkle with Italian Seasoning blend.
  • Cool on rack.
  • After 25 minutes, rice should be cooked and lentils should be cooked but still firm (not mushy) and there should still be some moisture in the mixture.
  • Turn stove off and stir 1 cup of the cheese into the mixture until cheese is melted.
  • Pour mixture into a 9 by 13 pan that has been sprayed with Pam and smooth the top with the back of your spoon.
  • Sprinkle remaining 1/2 cup of shredded cheese over top.
  • Crunch up the cooled fried bread with a knife and sprinkle over casserole.
  • Sprinkle parmesan over casserole.
  • Bake in preheated 350 oven for 15 minutes or so until cheese is melted.
  • Let cool slightly before serving.

1 cup regular long grain rice
1 cup dried red lentils (8 ounces), sorted and rinsed
6 cups boiling water
1 tablespoon ground turmeric
1 teaspoon salt
2 tablespoons safflower or vegetable oil
2 teaspoons whole allspice
1 dried chili
1 dried bay leaf
1 teaspoon sugar
3 tablespoons butter or margarine, cut up

Steps:

  • 1. Heat vegetable oil in 2-quart saucepan over medium-high heat. Cook onion and gingerroot in oil 2 to 3 minutes, stirring occasionally, until onion is crisp-tender. Stir in rice and lentils. Cook about 3 minutes, stirring frequently, until rice is browned.2. Reduce heat to medium. Gradually stir in boiling water. Stir in turmeric and salt.
