2 ½ cups water
1 cup brown lentils
⅓ cup water
3 tablespoons ground flax seed
2 tablespoons olive oil
1 onion, minced
1 cup minced fresh mushrooms
1 cup minced celery
2 large cloves garlic, minced
¾ cup quick-cooking oats
½ cup all-purpose flour
1 teaspoon dried basil
1 teaspoon ground black pepper
1 teaspoon salt
½ teaspoon onion powder
¼ cup ketchup
¼ cup brown sugar
2 tablespoons mustard
2 tablespoons smoky barbeque sauce

Steps:

  • Combine 2 1/2 cups water and lentils in a saucepan; bring to a boil. Reduce heat, cover saucepan, and simmer until all the liquid is absorbed and lentils are tender, 20 to 30 minutes.
  • Mix 1/3 cup water and ground flax seed together in a bowl; set aside until thickened, at least 10 minutes.
  • Heat olive oil in a large pot over medium heat; cook and stir onion, mushrooms, celery, and garlic until softened and liquid from mushrooms has evaporated, 5 to 10 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
  • Transfer cooked lentils to a food processor and pulse until about 75 percent of lentils are mashed. Mix onion-mushroom mixture, flax seed-water mixture, oats, flour, basil, black pepper, salt, and onion powder into lentils until well combined. Press lentil mixture into the prepared loaf pan.
  • Combine ketchup, brown sugar, mustard, and barbeque sauce in a saucepan over medium-low heat; cook and stir until glaze is smooth and brown sugar is dissolved, about 5 minutes. Remove saucepan from heat.
  • Bake loaf in the preheated oven for 35 minutes. Spread 1/4 cup glaze over lentil loaf; continue baking until cooked through, 10 to 15 minutes more. Serve lentil loaf with remaining glaze on the side.

6 tablespoons water

1 carrot, diced
1 stalk celery, diced
½ cup onion, diced
2 cups cremini mushroom, diced

½ teaspoon salt
¼ teaspoon pepper
1 tablespoon dried parsley

Steps:

  • To make the flax eggs, combine the flax meal and water in a small bowl and mix well. Set aside for at least 10 minutes.
  • Preheat the oven to 350°F (175°C).
  • In a large saucepan, heat a bit of olive oil over medium heat. Once the oil begins to shimmer, add the carrot and celery and cook until lightly browned, 2-3 minutes.
  • Add the onion and mushrooms. Cook another 3-4 minutes, until the onions are semi-translucent.
  • Add another drizzle of olive oil to the pan, then add the garlic, bell pepper, and tomato paste. Cook for 2 more minutes, until the tomato paste is slightly browned.
  • Add the salt, pepper, parsley, and thyme, and cook for 1 more minute, until fragrant.

RED LENTIL LOAF

Vegetarian lentil loaf has a long history of masquerading as meatloaf. With its brownish-grey color and a red ketchup glaze, it does its best to look and taste like meat (though it never does). This delicate red lentil loaf is not at all like that. It's all about the lentil flavor - sweet and vegetal. The seasoning veers a little bit Turkish, with lemon, cumin, cilantro, dill and yogurt. It is delicious served at room temperature or warm.

1 cup red lentils
Kosher salt and black pepper
3 tablespoons extra-virgin olive oil, plus more for drizzling
1 medium onion, diced (about 1 cup)
1 teaspoon toasted and ground cumin seeds
2 garlic cloves, minced
2 medium carrots, finely chopped
2 teaspoons grated lemon zest
3 tablespoons lemon juice
Pinch of ground cayenne
2 eggs
3 tablespoons roughly chopped cilantro
1/2 cup rolled oats
1 cup plain yogurt
2 Persian cucumbers, thinly sliced
3 scallions, thinly slivered, for garnish
1/4 cup roughly chopped dill, for garnish
Red-pepper flakes, for garnish

Steps:

  • Rinse lentils. Put them in a medium saucepan. Add water just to cover and a good pinch of salt. Bring to a boil high, then reduce heat to a simmer. Cook for about 30 minutes, until very soft. Drain well.
  • Meanwhile, put 3 tablespoons olive oil in a skillet over medium-high heat. Add onion and cook, stirring, until softened, about 5 minutes. Add cumin, garlic and carrots, seasoning mixture well with salt and pepper. Add lemon zest and juice, and cayenne.
  • Transfer drained red lentils and onion mixture to the bowl of a food processor. Pulse until it's the consistency of soft mashed potato, a bit lumpy. The mixture should be bright, peppery, lemony and well salted. Taste and adjust seasoning.
  • In a small bowl, beat the eggs with a fork. Add the cilantro and beat together. Pour egg mixture into lentil mixture and pulse to incorporate. Add oats and mix in.
  • Heat oven to 375 degrees. Lightly grease a loaf pan with olive oil. Lay a wide strip of parchment paper into the pan, leaving an overhang on two sides to help in removing cake later. Pour lentil mixture into the pan, smoothing the top. Fold excess parchment over the top. Bake until nicely browned, about 1 hour. Remove from pan and let cool. (The loaf is easier to cut if cooled.) Cut into 1-inch slices.
  • In a small bowl, mix together yogurt and cucumbers, and season with salt. Warm the slices up briefly in a 350-degree oven, if desired. Even better: Griddle the slices with a bit of oil in a nonstick or cast-iron pan until crisp and golden on both sides. Or simply serve at room temperature.
  • Spoon yogurt-cucumber sauce over each slice and sprinkle with scallion, dill and red-pepper flakes. Drizzle with extra-virgin olive oil, if you wish.

2 cups cooked lentils, slightly mashed (or a 19 oz can, drained)
1 medium onion, diced
1 cup rolled oats (quick or large flake)
3/4 cup grated old cheddar cheese
1 egg, beaten
1/2-2/3 cup tomato sauce (or spaghetti sauce or BBQ sauce)
1 teaspoon garlic powder
1 teaspoon dried basil
1/4-1/2 teaspoon seasoning salt

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Mix lentils, onion, oats, and cheese in a large bowl and mix well.
  • Add the beaten egg and mix well.
  • Add about 1/2 c of sauce, garlic, basil, salt, and pepper. Add remaining sauce so long as the mixture will not be too sloppy.
  • Spray a loaf pan with cooking spray and pour/scrape the lentil mixture into it. Even out the top surface with a spatula or fork.
  • Bake uncovered 30-40 minutes or until top is golden and crispy.
  • Let cool at least 5 minutes.
  • Turn out onto serving platter and garnish with parsley, if desired.
  • Variations:.
  • Add chopped celery, different sauces, different cheeses (or no cheese!) or try more traditional poultry spices instead of the Italian ones. Serve with all the 'fixins: mushroom gravy, mashed potatoes, squash, and salad.

2 Yukon gold potatoes, finely diced
1/2 teaspoon granulated garlic
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/8 teaspoon crushed red chile flakes
2 1/2 cups vegetable stock
1 tablespoon tamari or soy sauce
2 teaspoons poultry seasoning
1/2 teaspoon hot sauce
2/3 sleeve saltine crackers, crushed
5 eggs, lightly beaten
1/2 cup shredded Cheddar
Tangy Tomato Sauce, recipe follows
1 cup ketchup
2 tablespoons brown sugar
2 teaspoons yellow mustard
1/4 to 1/2 teaspoon hot sauce

Steps:

  • Preheat the oven to 350 degrees F. Oil a large loaf pan and line with parchment paper, then set aside.
  • Soak the lentils in hot water while you prep the vegetables. Pour the vegetable oil into a large saucepot on medium heat. Add the onion, carrot, celery and potatoes. Add the granulated garlic, salt, pepper and chile flakes. Saute until the vegetables begin to soften, stirring frequently. Drain the lentils, and add to the pot along with the vegetable stock. Bring to a boil, then reduce the heat, cover and simmer until the lentils are very soft and most of the liquid is absorbed, about 1 hour. Remove from the heat and let rest, covered, for 30 minutes.

3/4 cup lentils (a mixture is best but may use one type if none other available)
1 large onion, chopped
1 large carrot, grated
2 tablespoons olive oil
2 bouillon cubes (chicken or vegetable)
spices (Thyme, Sage, Parsley, and Tarragon recommended)
2 teaspoons yeast extract (Marmite, Bovril, etc)
2 eggs
1 1/2 cups cheese, grated
2 -4 cups boiling water

Steps:

  • In a saucepan, heat oil and sauté onion and carrot until tender. Add lentils and enough boiling water to cover the contents. You may need to add some more water while boiling. Add spices, bullion, and yeast extract. Boil about 30 - 40 minutes. (This time varies depending on the type of lentils you use). The lentils should be soft and the mixture should be thick but still have some water in it -almost like cake mix. Take off heat and stir in grated cheese and eggs. Pour into a loaf pan and bake 35 - 45 minutes at 350F until firm. Serve warm as a main dish or put it on bread for a sandwich.
  • You can vary the texture by using different varieties of lentils and can even add pinto or another bean to the mix.
  • **It can be made without the yeast extract, but this really adds a flavorful zip.

2 teaspoons lemon juice
1 large egg
3 tablespoons single cream
salt & freshly ground black pepper
1 teaspoon butter

Steps:

  • Pre-heat the oven to gas mark 5, 375 deg F (190 deg C).
  • Pick over the lentils for any sticks and stones.
  • Rinse thoroughly and cook in a tightly covered pan with the water for 10-15 minutes.
  • Check after 10 minutes in case you need to add more water.
  • The mixture should cook to a stiff puree.
  • Remove the pan from the heat and mix in the grated cheese, chopped onion, parsley, cayenne pepper and lemon juice.
  • Season to taste.
  • In a separate bowl lightly beat the egg.
  • Stir in the cream (to the egg).
  • Pour this mixture over the lentils.
  • Greas e 1 lb loaf tin with the teaspoon of butter and press in the mixture.
  • Bake for 45-50 minutes until the top is golden brown and the mixture feels firm to the touch.
  • Let it stand for 10 minutes in the tin before turning out.

1 cup dry green lentils
3 cups vegetable broth
1 tablespoon extra virgin olive oil
1/2 medium onion, diced
2 large celery ribs, diced
1 teaspoon salt
1 cup frozen hash brown potatoes, thawed
2 garlic cloves, minced
1 teaspoon poultry seasoning
1/2 teaspoon black pepper
1 egg (or for vegan ( 1 Tbsp ground flax seed mixed with 3 Tbsp water)
2 tablespoons whole wheat flour
2 tablespoons nutritional yeast
1 cup chopped walnuts (preferably toasted)
1/2 teaspoon salt

Steps:

  • Method: Heat oven to 400 degrees. Lightly grease 8-9 inch loaf pan with oil or cooking spray and set aside.
  • Bring vegetable broth to a boil and add lentils. Cover and simmer over medium heat for 25-30 minutes until lentils are tender and most or all of the liquid is absorbed. Drain any excess liquid and transfer to a large bowl to cool. Note: It' important to let them cool or they will be too mushy when mashed.
  • Meanwhile, heat 1 tbsp olive oil in a skillet and add onion and celery, saute over medium heat 3 minutes. Add potatoes, garlic, poultry seasoning, and pepper and continue cooking 3-5 minutes, or until vegetables are tender. Remove from heat.
  • With a potato masher, mash cooled lentils (not to the point of being pureed). Add vegetable mixture and continue to mash to combine. Next add the remaining ingredients and mix in - using your hands works best.
  • Transfer to loaf pan and press the mixture in, smoothing out the top so it's even.
  • Bake for 25-30minutes or until top and edges look lightly browned.

LENTIL AND WILD RICE LOAF

We frequently make this for Thanksgiving or Christmas for the vegetarians in the family. It's very nutritious and yummy and it goes great with the rest of the traditional holiday meal. You can make it ahead of time and then just pop it in the oven to heat up before the meal. Always serve it with the cashew gravy recipe I'm about to post separately. I'm not sure of where this recipe originated, but I got it from my sister years ago. I apologize for the some of the amount guestimates on the broth and spices as it's been a while since I've made it and we never had a real recipe, it's just scribbled on a piece of paper.

1 cup lentils
1/2 cup brown rice
1/2 cup wild rice
3 cups vegetable broth (more or less)
2 tablespoons olive oil
1 red onion
3 garlic cloves, crushed
1 large carrot, shredded
1/2 bunch broccoli, chopped small and steamed
1/2 cup cashews, roasted
basil
salt and pepper

Steps:

  • Put lentils, brown and wild rice and veggie broth in a covered pan. Get it boiling on a higher heat and then turn down to low and cook until the rice is cooked and the liquid is absorbed, but the result is still somewhat wet and mushy, not dry. This will be approximately an hour. I usually watch this as it's cooking and add more broth as needed.
  • While lentils and rice are cooking, heat oil in a separate pan and saute onions, garlic and carrot. Add steamed broccoli, cook another minute and then season with basil, salt and pepper to taste. This will be mixed with the other ingredients, so you'll want to be a bit generous with the spices.
  • Add the lentil/rice mixture to the vegetable mixture when both are done. Add cashews. Mix everything together well.
  • Put mixture into a greased loaf pan.
  • Bake at 350 for 30 minutes covered and 15 minutes uncovered.
  • Serve with Cashew Gravy.

1 tablespoon olive oil
1 cup diced onions
1 cup chopped walnuts
1 tablespoon minced garlic
1 apple, peeled, cored and roughly chopped
4 celery stalks, roughly chopped
2 large carrots, roughly chopped
3 tablespoons ground flaxseed
1/2 cup warm water
2 cups cooked lentils or drained, canned lentils
1 cup cooked quinoa
1/2 cup oat flour
1 tablespoon finely chopped thyme leaves
1 tablespoon finely chopped rosemary leaves
1 tablespoon finely chopped sage leaves
1 teaspoon kosher salt
1/2 cup ketchup
1/2 cup cranberry sauce or pureed cooked cranberries

Steps:

  • Preheat the oven to 350 degrees F. Line a loaf pan with parchment.
  • In a medium skillet, heat the olive oil over medium heat. Add the onions, walnuts and garlic and cook, stirring occasionally, until the onions are softened, about 5 minutes.
  • Meanwhile, combine the apple, celery, and carrots in a food processor and pulse until finely chopped (or finely chop with a knife). Add to the skillet and continue to cook, stirring occasionally, for 5 minutes.
  • Meanwhile, combine the flaxseed and water in a small bowl. Stir and let sit for 3 to 5 minutes.
  • Combine the lentils and quinoa in the food processor. Pulse until incorporated, but still chunky. Transfer to a large bowl. Add the apple-walnut mixture, oat flour, flaxseed mixture, thyme, rosemary, sage, and salt. Gently mix to combine, then transfer to the prepared loaf pan.
  • Stir to combine the ketchup and cranberry sauce in a small bowl. Spread half over the loaf with a basting brush or spoon. Reserve the rest for serving.
  • Bake until the loaf is heated through and the glaze starts to caramelize, about 1 hour and 15 minutes. Remove from the oven and let the loaf rest for 10 to 15 minutes, then serve with the remaining sauce.

CURRIED LENTIL LOAF

1 medium yellow onion, grated or minced

1 tablespoon tomato paste
1 tablespoon curry powder
1/8-1/4 teaspoon cayenne pepper or 1/8-1/4 teaspoon red chili powder (to taste)
2 cups cooked brown lentils, drained and mashed slightly
2 tablespoons peanut butter
1/4 cup breadcrumbs
salt

Steps:

  • Preheat the oven to 375 degrees.
  • Lightly spray a 9x5” loaf pan with non-stick cooking spray.
  • Heat oil in a large skillet over medium heat.
  • Add carrot, onion, potato, pepper and garlic, and cook until vegetables begin to soften, about 5 minutes.
  • Stir in the tomatoes, tomato paste, curry powder, cayenne and salt, and mix well.
  • Reduce heat to low, cover and simmer until the vegetables are soft, about 10 minutes.
  • Turn off heat and stir in the lentils Place 1 cup of the lentil/vegetable mixture with the peanut butter in a blender or food processor, and blend until smooth.
  • Fold this into the remaining lentil and vegetable mixture, along with the bread crumbs.
  • Taste and see if more salt is needed, then add mixture to the loaf pan.
  • Bake loaf until firm, about 40-50 minutes.
  • It’s best to let the loaf sit for 15-20 minutes before serving.

3 cups cooked lentils (about 1.5 cups uncooked), divided
1 small onion, diced
1/4 cup tomato sauce, plus more for topping, if desired (I actually use leftover spaghetti sauce most often)
1/2 cup oats, ground or 1/2 cup bread crumbs
1 tsp dried basil
1/2 tsp garlic powder
salt
pepper
1 whole egg + 1 egg white, beaten
1/2 cup shredded cheese (I've used tons of variety here)

Steps:

  • Bring lentils (cleaned and picked over) to a low boil in about 5 cups of water. Cook 20-25 minutes or until soft. Drain water and remove 1 cup of lentils, set aside. Mash remaining 2 cups of lentils thoroughly with a potato masher or in a food processor. Fold in remaining lentils and diced onion. Mix. Add tomato sauce, bread crumbs, basil, garlic powder, salt and pepper, and shredded cheese. Mix thoroughly. Add beaten egg mixture and mix thoroughly. Prepare a loaf pan by spraying it generously with cooking spray or lining it with aluminum foil and spraying that with cooking spray. Spread lentil mixture into loaf pan and bake in a 350 degree oven for 40 minutes or until top seems a little dried. Garnish with additional tomato sauce, if desired.

SAVORY LENTIL LOAF

This lacto-ovo vegetarian recipe is one of the ones I've been making longest. It comes from a recipe card collection you would subscribe to buy one packet at a time, dated 1984 (My Great Recipes card packet 20 card 15). Even after lapsing from vegetarianism, it has remained a favorite and is just as tasty, just as filling as meat-based meatloaf. I find the recipe as given a bit dry without glaze, and have added a brown sugar-ketchup glaze, the same one used on the my family's meatloaf when I was a child. No one was thrilled with the hard-cooked eggs in the original so those have been omitted. Torn/cube bread works when I have a failed gluten-free bread baking experiment, but I discovered that half a tube of prepared polenta makes a very creamy stretcher when bread isn't available.

4 tablespoons brown sugar

Steps:

  • Pick over the lentils while dry to remove debris or shriveled lentils, and rinse in a strainer. Pour into large saucepan, cover with water and bring to a boil for 2 to 3 minutes. Reduce heat and simmer until tender. Depending on the variety and age, cooking time may take anywhere from 10 minutes to 1 hour.
  • Preheat oven to 350. In a skillet, saute the onion, celery and garlic in oil, adding garlic at the last minute.
  • In a large mixing bowl, mix the cooked lentils, sauteed vegetables, polenta or bread crumbs, cheese, egg, and spices. Place the mixture in a greased loaf pan.
  • Spread top with glaze. Bake for 1 hour at 350. Cool for 5 minutes before slicing or inverting.

CASHEW LENTIL LOAF FOR THE CROCK POT

1 tablespoon cumin seed
1 tablespoon vegetable oil
1 large onion, finely chopped
2 stalks celery, diced
2 cups carrots, shredded
2 garlic cloves, minced
1/2-1 chili pepper, diced
1 teaspoon salt
1/2 teaspoon cracked pepper
2 cups cooked lentils
3 cups cheddar cheese, shredded
1 cup cashews, coarsely chopped
3 eggs, beaten
boiling water

Steps:

  • Spray an 8 by 5 inch loaf pan and set aside.
  • In a large dry pan toast the cumin seeds until they start to brown and release their aroma. Right away put it in a spice grinder or a mortar and a pestle. Grind to a powder and set it aside.
  • Put the pan back on the stove and add the vegetable oil. Add the onion and celery and cook until the celery is soft, about 5 minutes. Add the carrots, garlic, red pepper, chili pepper, salt and cracked pepper. Cook, stirring, for 2 minutes. Remove it from the heat and set aside.
  • In a large mixing bowl combine the lentils, cheese, and cashews. Add the cooked vegetables and stir well. Add the eggs and mix well.
  • Put the mixture into the prepared pan. Cover the pan tightly with foil and secure with a rubber band or string.
  • Put the prepared pan into the crock pot and put in enough boiling water to the crock pot until the water reaches about 1 inch up the sides.
  • Cover and cook on high for 4 to 5 hours until the loaf has set.
  • You can prepare this loaf the night before and then put the loaf into the crock pot with water in the morning.
