2 to 3 cups mixed berries such as blueberries, strawberries, raspberries, blackberries
1 quart plain yogurt
Granola

Steps:

  • Wash and dry the berries; hull and cut strawberries into pieces, if using. Spoon a layer of yogurt into 4 individual glass bowls or parfait glasses. Add a layer of berries, and sprinkle with a layer of granola. Repeat the layering once or twice more, depending on the height of the bowl or glass, ending with a layer of granola.

Homemade Berry Granola Parfaits image

2 cups old-fashioned rolled oats
1 1/2 cups whole almonds
3/4 cup shredded coconut
1/4 cup vegetable oil
1/2 cup honey
Salt
1/2 cup dried cherries
1/2 cup dried cranberries
1/2 cup dried pineapple chunks
1/2 cup maple syrup
4 cups plain yogurt
4 cups mixed berries (raspberries, blueberries and strawberries), quartered

Steps:

  • For the granola: Preheat the oven to 350 degrees F.
  • Toss the oats, almonds and coconut together on a baking sheet lined with a silicone baking mat.
  • Whisk together the vegetable oil and honey in a liquid measuring cup, then pour over the oat mixture. Stir until all the oats and nuts are coated. Season with salt to taste.
  • Bake until golden brown, 40 to 45 minutes.
  • Remove the granola from the oven and allow it to cool. Add the cherries, cranberries, and pineapple chunks. Drizzle with some of the maple syrup and toss together.
  • To build the parfaits: Line up eight parfait glasses. Start with a large spoonful of the granola, followed by a layer of yogurt, then a layer of berries and a drizzle of maple syrup. Repeat the layers one more time, finishing with berries, drizzled with maple syrup.

2 cups vanilla frozen yogurt
1 (10-ounce) bag frozen berries (raspberries, blackberries or strawberries), thawed
4 tablespoons shelled pistachio nuts

Steps:

  • Soften yogurt by letting it sit out for a few minutes or by microwaving for 20 seconds. Heat a large nonstick saute pan over medium-high heat. Add the berries and saute until just starting to soften, but not hot throughout. Transfer frozen yogurt to a large bowl and pour over berries (with liquid from bag). Gently swirl berries into yogurt, without completing mixing in.
  • Spoon mixture into bowls or tall glass and top with pistachio nuts (you can also refreeze the swirl before serving).

1 tablespoon wheat germ
½ banana, sliced
⅓ cup granola

Steps:

  • Layer 1/4 cup strawberries, 1/4 cup blueberries, 1/3 container yogurt, 1/3 tablespoon wheat germ, 1/3 of the sliced banana, and about 2 tablespoons of granola in a large bowl. Continue to build the parfait, repeating the layers until all of the ingredients are used completely.
