Lemon-Thyme Cocktails image

1 cup sugar
1 cup water
6 sprigs fresh thyme
2 tablespoons grated lemon peel (from 2 lemons)
1 sprig fresh thyme
2 1/2 oz vodka
3 oz cranberry juice
1 oz lemon-thyme simple syrup (above)
1/2 oz orange-flavored liqueur
Ice
1 thin (1/8 inch) lemon slice
1 sprig fresh thyme

Steps:

  • In 1-quart saucepan, heat lemon-thyme simple syrup ingredients over low heat until sugar is dissolved. Let stand 15 minutes. Strain to remove thyme and lemon peel. Use within 2 days.
  • Place 1 sprig fresh thyme in cocktail shaker. Add vodka, cranberry juice, 1 oz of the lemon-thyme simple syrup and liqueur; muddle thyme with back of spoon. Add ice; place lid on shaker, and shake until cold and blended. Strain into 2 martini glasses.
  • Garnish with lemon slice and sprig of thyme.

18 to 20 lemon sandwich cookies
3 tablespoons salted butter, melted
1 1/2 cups sugar
1/4 cup cornstarch
1/4 teaspoon kosher salt
3 cups whole milk
4 large egg yolks, beaten
1/2 teaspoon fresh thyme leaves
3 lemons, zested
2 tablespoons salted butter
Canned whipped cream, for topping
1 cup fresh blueberries
1/4 cup fresh mint leaves

Steps:

  • For the crumb base: Add the cookies and melted butter to a food processor and pulverize. Divide among 6 martini glasses.
  • For the pudding: Stir together the sugar, cornstarch and salt in a medium saucepan. Add the milk and egg yolks and whisk to combine. Add the thyme and lemon zest and heat over medium heat, stirring, until the mixture barely comes to a boil. Simmer gently until it's thickened like custard, 6 to 8 minutes. Remove the pan from the heat and stir in the butter. Divide the pudding among the glasses over the base and chill for at least 2 hours.
  • For serving: Top each pudding with mounds of whipped cream, then add a handful of blueberries and some mint to each one.

LEMON-TEA-THYME MARTINIS

3/4 cup (6 oz) vodka
1 tea bag
1/4 cup sugar
1/2 cup fresh lemon juice
1/2 cup honey
1/4 cup ice
4 sprigs fresh thyme
4 thin lemon slices

Steps:

  • In airtight jar or container, place vodka and tea bag; let stand to steep 2 hours.
  • Moisten rim of each of 4 martini glasses with water. Dip each rim in sugar; set aside.
  • In blender, place lemon juice, honey and ice. Cover; blend until ice is finely chopped. Pour evenly into glasses.
  • Remove tea bag from vodka. Add 3 tablespoons (1 1/2 oz) vodka to each drink. Garnish each with fresh thyme and 1 lemon slice. Serve immediately.

1 cup white sugar
3 sprigs lemon thyme
½ fluid ounce lemon juice
5 fresh raspberries, divided
ice
1 ½ fluid ounces raspberry vodka
1 cup lime-flavored sparkling water (such as La Croix®), or as needed
½ slice lemon
1 sprig lemon thyme

Steps:

  • Heat water, sugar, and 3 sprigs lemon thyme in a small saucepan, stirring, until bubbles form and sugar is dissolved, about 5 minutes. Remove from heat and let steep, about 10 minutes. Strain out lemon thyme.
  • Pour 1/2 fluid ounce of the lemon thyme syrup into a tall glass. Add lemon juice and 3 raspberries; mash with a muddler or wooden spoon. Fill glass with ice and vodka; stir vigorously with a long spoon until well chilled. Fill glass with sparkling water.

1 stick (4 ounces) unsalted butter, at room temperature
1 cup all-purpose flour
2 tablespoons chopped fresh thyme leaves
1/2 teaspoon fine sea salt
1/2 cup powdered sugar
2 tablespoons fresh lemon juice
1/2 teaspoon pure vanilla extract
2 tablespoons fresh lemon juice
1/2 cup powdered sugar

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 325 degrees F. Butter and flour an 8 by 8-inch glass baking dish.
  • For the bars:
  • In a small bowl combine flour, thyme and salt. Set aside. Using a stand mixer fitted with the paddle attachment, beat together 1 stick of butter and powdered sugar on high speed until light and fluffy, about 30 seconds. Beat in the lemon juice and vanilla. Reduce the speed to low and gradually add the flour mixture. Using damp fingers, press the dough into the prepared pan. Bake for 30 minutes until golden. Cool for 30 minutes.
  • For the glaze:
  • In a medium bowl, whisk the lemon juice and powdered sugar together until smooth. Spoon the glaze over the cooled crust. Allow the glaze to harden, at room temperature, for at least 1 hour.
  • Using a metal spatula, remove the crust from the pan. Cut into 1 1/2-inch square bars and arrange on a serving platter or store airtight in a plastic container at room temperature.

8 lemons, halved
16 sprigs of thyme
Ice cubes
4 cups ice water
1 1⁄2 cups vodka
1⁄2 cup agave or simple syrup (see Note)

Steps:

  • Wipe the grill grates with oil to prevent sticking. Build a high-heat fire. Your high-heat zone should have embers 1 to 2 inches from the cooking surface, with occasional flames licking it.
  • Place the lemons, cut side down, over high heat until they are charred and soft, about 3 minutes. While the lemons char, using tongs, hold 8 of the thyme sprigs over high heat just until they start to color and give off wisps of smoke.
  • Add the remaining 8 thyme sprigs to a cocktail shaker, squeeze in the lemon juice, and add a couple ice cubes. Shake very well and strain into a pitcher. Add the ice water, vodka, and agave, and stir until the agave is dissolved.
  • Serve the drinks in ice-filled glasses garnished with a charred thyme sprig.

Fill a shaker three-fourths full with ice. Add vodka, limoncello and lemon juice; cover and shake until condensation forms on outside of shaker, 10-15 seconds. Strain into prepared glass.
