BITTER LEMON SODA

This is very much like Krest® Bitter Lemon (found in Africa) or Schweppes® Bitter Lemon (found in Europe). Unfortunately there is nothing comparable found in the USA, but this comes pretty darn close! This is the perfect thirst quencher for a blistering hot day!

SPARKLING GINGER-LEMON SODA

Sparkling Ginger-Lemon Soda image

Provided by Julia Moskin

Categories     non-alcoholic drinks

Yield 12 to 16 drinks

Number Of Ingredients 4

2 ounces fresh ginger, peeled and sliced paper thin
2 medium lemons, preferably organic, well washed
1/3 cup honey, more to taste
Ice cubes and mint sprigs, for serving

Steps:

  • Combine ginger and 2 quarts cold water in a large pot. Cut lemons in half and squeeze into pot, straining out pits. Drop lemon halves into pot and bring to a boil. Turn off heat, cover and let steep 30 minutes. Stir in honey, then taste for sweetness, adding more to taste. Strain mixture into a container and discard solids. Let cool to room temperature, then chill until very cold.
  • Working in small batches, pour cold mixture into the bottle of a carbonator, filling it not more than 1/3 full (this will give the mixture room to foam). Charge with CO2 until very fizzy, waiting between charges for foam to subside completely. (This can take up to 2 minutes, so be patient.)
  • Very slowly, as if opening a bottle of soda, release the bottle from the carbonator. Serve immediately, or cover tightly and chill. (Extra soda mixture can be refrigerated for up to a week, and can be served carbonated or flat.) To serve, pour over ice and top with a mint sprig. If desired, add a slug of rum to each glass.

LEMON-SODA BUTTERMILK PARFAIT

Lemon-Soda Buttermilk Parfait image

These seriously elegant and tongue-tingling parfaits are an excellent dessert to have in your year-round repertoire and are as perfect in the formal dining room under the chandelier as they are in the backyard tent on picnic tables under the paper streamers. Alternating thin precise layers of lemon soda gelatin and tangy buttermilk gelatin takes patience and focus, but once built, they can sit, covered, up to a week in the refrigerator. Be sure to pull them twenty minutes before serving to allow the fully chilled and set parfaits to relax a little, tempering to a perfectly jiggly consistency - then try not to giggle as you eat that first zingy lemony spoonful.

Provided by Gabrielle Hamilton

Categories     parfaits and trifles, project, dessert

Time 5h

Yield 4 parfaits

Number Of Ingredients 10

1 3/4 cups club soda
1 tablespoon plus 1 teaspoon powdered gelatin
1/2 cup fresh lemon juice (from about 4 lemons), strained
1/2 cup granulated sugar
1/4 cup cold water
1 1/2 tablespoons powdered gelatin
1 3/4 cups heavy cream
1 cup buttermilk
1/4 cup granulated sugar
Unsweetened whipped cream, for serving

Steps:

  • Prepare the lemon gelatin: Pour 1/4 cup club soda into a medium bowl. Sprinkle the powdered gelatin on top, and let the gelatin bloom for 2 to 3 minutes.
  • Combine the lemon juice and sugar in a double boiler or a medium stainless-steel bowl set over a saucepan with an inch of simmering water. Cook over low heat just until the lemon syrup begins to steam, about 3 minutes. You should have a viscous, syrupy liquid with no discernible traces of sugar granules. Pour the lemon syrup into the gelatin mixture, and stir well to combine. (There should be no visible undissolved gelatin, but you could pass the mixture through a fine-mesh strainer, if need be.) Stir in the remaining 1 1/2 cups club soda, and transfer to a bowl set over an ice bath.
  • Prepare the buttermilk gelatin: Pour the cold water into a medium bowl. Sprinkle the powdered gelatin on top, and let the gelatin bloom for 2 to 3 minutes.
  • Meanwhile, in a double boiler or a medium stainless-steel bowl set over a saucepan with an inch of simmering water, combine the heavy cream, buttermilk and sugar. Scald over medium heat until the sugar is dissolved completely.
  • Stir the scalded cream mixture into the gelatin-and-water mixture, then pour into a smaller bowl set over an ice bath. Let cool for 5 minutes, stirring often to prevent the edges from solidifying. Remove the bowl from the ice bath, and let stand at room temperature. After about 5 minutes, once the mixture is the consistency of melted ice cream, start assembling the parfaits.
  • Gather four 8-ounce parfait glasses and prepare an ample ice bath that can comfortably and securely fit all four of the glasses without tipping them over.
  • Using a tablespoon, carefully pour 2 tablespoons of the buttermilk mixture into the bottom of each glass, and place each glass into the ice bath to set for 10 minutes.
  • Pick up a parfait glass, and give it a little jiggle to confirm the layer has set enough to receive - and support - the next layer. Then repeat Step 7 with the lemon mixture, allowing it to set until firm in the center, about 30 minutes.
  • Continue layering the buttermilk and lemon gelatins alternately, until the glasses are full, allowing each layer to fully set in the ice bath before proceeding to the next. Add more ice to the ice bath as needed, and don't be tempted to hasten the process. If either mixture begins to firm up while you are working and is no longer spoonable or pourable, gently rewarm it for a few seconds over a pan of simmering water to liquify once more.
  • Cover and refrigerate the parfaits until thoroughly chilled and fully set, or up to 2 days. Before serving, be certain to temper for 20 minutes at room temperature for perfect, tender results. Finish with whipped cream.

5 large eggs, room temperature
1 teaspoon vanilla extract
1 teaspoon lemon zest
2 tablespoons lemon
3 cups all purpose flour, spooned and leveled

1 tablespoon lemon juice
1 teaspoon lime juice
1 tablespoon lemon lime soda
¼ teaspoon lime zest
¼ teaspoon lemon zest

Steps:

  • Preheat the oven to 325°F (160°C). Grease a 10-12 cup Bundt pan or tube pan (without a removable bottom).
  • In the bowl of a stand mixer fitted with a paddle attachment (or in a large bowl with an electric hand mixer), beat the butter on low speed for 2 minutes. Add the sugar and cream on high speed for about 5 minutes, until pale yellow, light, and fluffy.
  • Add the eggs, 1 at a time, and beat on low speed between each addition until just incorporated, scraping down the sides of the bowl as needed. Do not overmix. • Make the glaze: In a medium bowl, whisk together the powdered sugar, lemon juice, lime juice, and lemon-lime soda until completely smooth. Whisk in the lime and lemon zests.
  • Drizzle the glaze over the cake and let set for 5-10 minutes before serving.

GINGER LEMON SODA

Ginger Lemon Soda image

Even though I originally conceived of this as my take on homemade ginger ale, I'm hesitant to call it that. It's such a far cry from the sugary bottled stuff. It has an intense gingery heat that's heightened by the acidity from the lemon. Be sure to use a fresh bottle of club soda here. (I prefer the little bottles of Schweppes.) You need the fizziness to deliver the flavor.

Yield Makes 1 drink

Number Of Ingredients 2

1/4 cup Ginger Syrup (page 244)
3/4 cup club soda

Steps:

  • Fill a highball glass with ice. Pour in the syrup, then the soda. Stir with a straw and serve immediately.

LASKEY LEMON SODA WITH BAY ICE CUBES

Laskey Lemon Soda with Bay Ice Cubes image

In 2010, Ruth Laskey, a talented artist who weaves hand-dyed threads into graphic shapes, was one of the Bay Area artists chosen for the biennial SECA (Society for the Encouragement of Contemporary Art) award and whose work would be featured at SFMOMA. She also happened to be Leah's classmate from the California College of the Arts. Thrilled to collaborate with an artist as she produced her work, we arranged a studio visit to see the weavings Ruth was creating for the show. She had a series of six sketches, each with two intersecting shapes of different colors, and she had started weaving the pieces based on her sketches. I suggested assigning a flavor to each color, and where the colors overlapped, so would the flavors. We decided that a liquid of one flavor chilled with ice cubes of a second flavor would be an interesting approach: as the ice cubes melted, the flavors would slowly overlap. My good friend Paul Einbund, an extraordinary sommelier and a genius at making seasonal sodas, taught us how to make a concentrated syrup by muddling an ingredient with sugar, adding cold water, and then chilling the mixture to allow the flavor to infuse. When sparkling water is added to the concentrate, the result is a lightly sweetened soda with pure flavor. Leah discovered that just about anything could be given this treatment-from fresh fruit and herbs to licorice candy, and even bubblegum-giving us limitless options for homemade sodas. I like to use standard Eureka lemons in this recipe because I prefer their classic, extra-sour flavor, but Meyer lemons will also work. We created a soda and ice cube combination for each of the six weavings created for the SECA exhibition, from her larger twill series, and rotated through them on a daily basis: peppermint soda with licorice ice cubes for the blue/black weaving, green pepper soda with orange blossom ice cubes for the orange/green, chokecherry soda with rose ice cubes for the two-toned pink weaving, bubblegum soda with violet ice cubes for the pink/purple, hibiscus soda with eucalyptus ice cubes for the magenta/green, and lemon soda with bay ice cubes for the yellow/green. We served each drink on a custom wood tray made for us by the installation crew at the SFMOMA. Stained to match the frames around Ruth's weavings, the tray held the glass and two small vials containing threads used in the artwork that had been scented to correspond with the flavors in the drink. With visual, taste, and olfactory components, the Laskey sodas offered guests a multisensory experience and a direct connection to the art, and they were our most conceptual creations to date.

Provided by Caitlin Freeman

Time 3h

Yield Makes 8 sodas

Number Of Ingredients 8

Grated zest of 2 small lemons
1/4 cup (1.8 oz / 50 g) sugar
2 tablespoons fresh lemon juice
1 1/2 cups (12.9 oz / 360 g) cold water
3/4 cup (6.4 oz / 180 g) water
1 tablespoon sugar
2 bay leaves
4 cups (34.4 oz / 960 g) cold sparkling water

Steps:

  • To make the lemon soda concentrate, combine the zest and sugar in a mortar and crush with a pestle until fragrant, moist, and tinted yellow.
  • Transfer the mixture to a small pitcher or lidded container and pour in the lemon juice and water. Stir until the sugar dissolves. Cover and refrigerate, agitating the mixture from time to time, until cold and infused with lemon flavor, about 2 hours.
  • To make the ice cubes, combine the water, sugar, and bay leaves in a small saucepan and bring to a boil, stirring to help the sugar dissolve. Boil for 1 minute, remove from the heat, and let stand for 20 to 30 minutes.
  • Strain the infused water through a fine-mesh sieve set over a liquid measuring cup. Pour into ice cube molds, and freeze until solid, about 2 hours.
  • To serve, place 3 to 5 ice cubes in each of eight 8-ounce drinking glasses, and then add 3 tablespoons (or more, to taste) of lemon concentrate per drink. Pour in 1/2 cup (4.3 oz / 120 g) of the sparkling water per serving and stir gently. Serve immediately.

SUGAR FREE LEMON LIME SODA CAKE - THE SUGAR FREE DIVA

Sugar Free Lemon Lime Soda Cake - THE SUGAR FREE DIVA image

Sugar Free Lemon Lime Soda Cake, a delicious sugar free version of a popular diet soda dessert recipe that is easy to make!

Provided by @MakeItYours

Number Of Ingredients 7

3 cups All purpose flour (- sifted)
1 ½ cups Butter (- unsalted and at room temperature)
3 cups Splenda (- see post for alternatives)
5 Eggs (- room temperature)
2 tbsp Lemon Juice
1 cup Sugar Free Lemon Lime Soda
Glaze (-see post)

Steps:

  • Preheat your oven to 300 degrees. Double prep a bundt cake pan. This can mean both spraying with nonstick spray and then dusting with flour.
  • Sift the flour if not already sifted. Sifting the flour will help make a finer crumb on this Bundt cake. What that means is that it will be much lighter in texture as opposed to being heavy and dense.
  • In a large mixing bowl, cream together the butter and sugar alternative until light and fluffy. This will take between five and seven minutes. Then add the eggs one at a time, mixing between additions. Follow this up by adding the lemon juice.
  • Turn off the mixer and move to using a spatula for the next step. Fold in one cup of flour and continue until all three cups of flour have been folded in and incorporated-do not over mix. Then stir in the soda.
  • Transfer the cake batter prepped bundt pan and bake for 1 hour and 20 minutes or until a skewer or butter knife (not a toothpick) comes out clean. Tip: Resist the urge to open the oven for at least an hour and do not slam the oven door shut.
  • Remove the cake from the oven and make the glaze. Use a skewer to poke holes in the cake and then pour the thinner glaze over the cake. Allow the cake to cool for a half hour. Then turn the cake over onto a cake plate and coat with the second, thicker glaze.
