Roast Boneless Leg of Lamb with Potatoes, Lemon, and Marjoram image

No ordinary roast, this boneless leg of lamb is fit for both Easter and Passover feasts. The lamb meat is studded with slivers of garlic, marinated overnight in lemon and marjoram, and then roasted with russet potatoes, an uncomplicated technique that infuses the potatoes with the bright flavors of the marinade.

1 boneless leg of lamb (about 4 pounds; not tied), trimmed of excess fat
4 garlic cloves (2 thinly sliced, 2 crushed)
Juice of 2 lemons (about 1/2 cup)
3 tablespoons coarsely chopped fresh marjoram, plus sprigs for garnish
5 tablespoons extra-virgin olive oil
Coarse salt and freshly ground pepper
2 russet potatoes (about 2 1/2 pounds)

Steps:

  • Place lamb in a large, shallow, nonreactive dish. Using a paring knife, make 1/2-inch-deep slits all over lamb, spacing 2 inches apart; insert 1 garlic slice into each slit. Pour lemon juice over top. Add marjoram, crushed garlic, and 3 tablespoons oil to dish. Turn lamb to coat.
  • Place 3 long pieces of kitchen twine parallel to one another on a cutting board, about 3 inches apart. Fold lamb, and place on top of twine. Tie each piece around lamb to secure. Return to dish. Cover, and refrigerate at least 12 hours (up to 1 day), turning once.
  • Remove lamb from marinade; reserve marinade. Season lamb with salt and pepper; transfer to a roasting pan. Let stand at room temperature 45 minutes.
  • Preheat oven to 425 degrees. Peel potatoes; quarter lengthwise, and halve crosswise. Arrange potatoes around lamb; season with salt and drizzle with remaining 2 tablespoons oil. Toss to coat.
  • Pour marinade over lamb and potatoes. Roast 20 minutes. Reduce oven to 400 degrees, and roast until an instant-read thermometer registers 130 degrees for medium-rare, 40 to 45 minutes. Remove from oven. Tent with foil; let rest 10 minutes. Serve garnished with marjoram.

3 tablespoons butter, cut into small pieces
Coarse salt and ground pepper
1 package cut-up whole chicken (about 3 pounds)
1 bunch asparagus (1 pound), trimmed and cut into 2-inch pieces
1 lemon, cut into 8 wedges
6 sprigs fresh thyme

Steps:

  • Preheat oven to 475 degrees. Place potatoes and half the butter in a roasting pan; season with salt and pepper. Roast, tossing once, until potatoes are golden, 20 to 25 minutes.
  • Place chicken, skin side up, on top of potatoes; season with salt and pepper. Roast until chicken begins to brown, about 20 minutes.
  • Scatter asparagus, lemon, remaining butter, and thyme around chicken. Roast until asparagus is tender and chicken is opaque throughout, 5 to 15 minutes. Serve chicken, vegetables, and lemon drizzled with pan juices.

1 tablespoon extra-virgin olive oil
8 small skin-on, bone-in chicken thighs (2 1/2 to 2 3/4 pounds)
Kosher salt and freshly ground pepper
1/2 cup pitted green olives, lightly smashed
4 cloves garlic, roughly chopped
1 teaspoon dried oregano
1/2 cup low-sodium chicken broth
1/2 teaspoon grated lemon zest, plus 2 tablespoons lemon juice
1 pound new potatoes, halved if large
1/4 cup chopped fresh dill
4 ounces feta cheese, crumbled

Steps:

  • Preheat the oven to 450˚ F. Heat the olive oil in a large ovenproof skillet over medium heat. Season the chicken on both sides with salt and pepper and lay skin-side down in the skillet. Cook until the skin is well browned, 8 to 10 minutes. Transfer skin-side up to a plate. Pour off all but about 1 tablespoon drippings into a small bowl and reserve.
  • Add the olives, garlic and oregano to the skillet and cook until the garlic is softened, about 2 minutes. Pour in the chicken broth and 1 tablespoon lemon juice. Return the chicken skin-side up to the skillet. Transfer the skillet to the oven and roast until the chicken is no longer pink near the bone, 12 to 15 minutes.
  • Meanwhile, put the potatoes in a medium saucepan and cover with cold water; add a few big pinches of salt. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, 10 to 12 minutes. Drain and return to the pan. Add 1 tablespoon of the reserved chicken drippings, the lemon zest, half the dill and a big pinch each of salt and pepper and toss.
  • Divide the chicken and potatoes among plates. Stir the remaining 1 tablespoon lemon juice into the sauce in the skillet; season with salt and pepper, then stir in the remaining dill and spoon over the chicken and potatoes. Top with the feta.

2kg Maris Piper potatoes
1 garlic bulb, cut in half lengthways
100ml rapeseed or sunflower oil
8-10 fresh bay leaves
½ tsp lemon , zested

Steps:

  • Peel and halve or quarter the potatoes, if large, so they're all the same size. Put in a large pan and cover with cold water and a pinch of salt. Add one half of the garlic bulb. Bring to a simmer and cook for 10 mins until a knife goes easily through the potatoes, then drain well, reserving the garlic. Leave the potatoes to steam-dry in the pan for 10 mins. Heat the oven to 220C/200C fan/gas 7.
  • Pour the oil into a large baking tray or two smaller ones - it should cover the base of the tray, so add a little more if you need to. Heat in the oven for 10 mins until really hot. Carefully transfer the spuds to the oil, leaving lots of room between each one (otherwise they will steam, rather than roast) and coat in the oil, taking care not to splash yourself. Season, then add both halves of the garlic, blanched and not, and nestle the bay leaves underneath the spuds.
  • Roast for 40-45 mins, turning halfway through and coating in more oil, until golden and crunchy. Season with more salt and pepper, and zest the lemon directly over the potatoes so the essential oils spritz over the spuds. Serve with the roasted garlic in its shell.

ONE-PAN HERBY ROAST LAMB WITH LEMON, POTATOES & FETA



One-pan herby roast lamb with lemon, potatoes & feta image

Enjoy a roast lamb dinner with a twist. There's no need to labour over gravy - instead, the lemon and garlic pair well with a quick yogurt and harissa sauce

2kg leg of lamb
1 garlic bulb (about 10 cloves)
small bunch of mint
small bunch of parsley
2 large rosemary sprigs, needles picked
1 lemon, zested and thinly sliced
1 preserved lemon, peel cut into quarters, flesh and pips discarded (or use 1 heaped tsp preserved lemon paste)
70ml olive oil
1kg floury potatoes (such as Maris Piper or King Edward), halved or quartered if large
1 tbsp harissa paste
200g thick Greek yogurt
200g feta cheese, crumbled steamed peas or spring greens, to serve

Steps:

  • Take the lamb out of the fridge at least 1 hr before cooking to come to room temperature. Score the skin into 3cm diamonds using a sharp knife, but don't cut too deep.
  • Cut the garlic bulb in half to expose the flesh of each clove. Set one half aside, then pop the cloves from the remaining half out of their skins. Put these in a small food processor along with most of the mint and parsley, the rosemary, lemon zest, preserved lemon and a large pinch of salt. Blitz the mixture together, or pound using a pestle and mortar, adding half the olive oil once the herbs have started to break down. Pour the marinade over the lamb, massaging it into the cuts. Leave to marinate at room temperature for at least 30 mins, or chill for up to 24 hrs.
  • Heat the oven to 200C/180C fan/gas 6. Put the lamb in your largest roasting tin (you'll need space to add the potatoes later). Wrap well with foil and bake for 45 mins.
  • Meanwhile, put the potatoes in a large pan of cold salted water. Set over a medium heat and bring to the boil, then reduce the heat and simmer for 5 mins. Drain and leave to steam-dry for 10 mins.
  • Remove the lamb from the oven and lift onto a board. Drizzle the remaining oil into the roasting tin, then tip in the potatoes, fresh lemon slices and the remaining garlic bulb half, rubbing the cut side in the oil. Season and toss to coat the potatoes and lemon slices in the oil and lamb juices. Sit the lamb on top.
  • Return to the oven for 35 mins more for medium (a thermometer should read 55C), or 50 mins for well done. Transfer the lamb to a warm platter, cover and leave to rest. Meanwhile, shake the potatoes around in the tin and return to the oven for another 20-25 mins, or until golden and crisp. Swirl the harissa paste through the yogurt.
  • Roughly chop the remaining mint and parsley. Scatter the chopped herbs and feta over the potatoes. Carve the lamb and pour any roasting juices into the spiced yogurt, and mix through. Serve the lamb and potatoes with peas or spring greens, and the spiced yogurt sauce on the side for drizzling over.

salt and black pepper
5 -6 tablespoons olive oil, extra virgin
4 garlic cloves, crushed

1 large handful of chopped coriander

Steps:

  • Boil the potatoes in salted water for about 10 minutes, then drain and transfer to a wide baking dish. Cut them into 1/2 inch cubes and sprinkle over some salt and pepper, the olive oil and the garlic. Mix and turn the potatoes so they are coated all over with the oil.
  • Roast the potatoes in a very hot oven, preheated to 475 degrees, for 30 minutes, or until they are crisp and brown. Remove potatoes and sprinkle evenly with the lemon juice and chopped coriander, and mix well (being careful not to break the potatoes).

• 1 x 2kg/4½lb free-range organic chicken
• sea salt and freshly ground black pepper
• 2kg/4½lb potatoes, peeled
• 1 large, preferably unwaxed, lemon
• 1 whole bulb of garlic, broken into cloves
• a handful of fresh thyme
• olive oil
• a handful of fresh rosemary sprigs, leaves picked
• optional: 8 rashers of smoked streaky bacon

Steps:

  • Rub the chicken inside and out with a generous amount of salt and freshly ground black pepper. Do this in the morning if possible, then cover the chicken and leave in the fridge until you're ready to start cooking it for lunch or dinner. By doing this, you'll make the meat really tasty when cooked. Preheat your oven to 190ºC/375ºF/gas 5. Bring a large pan of salted water to the boil. Cut the potatoes into golf-ball-sized pieces, put them into the water with the whole lemon and the garlic cloves, and cook for 12 minutes. Drain and allow to steam dry for 1 minute (this will give you crispier potatoes), then remove the lemon and garlic. Toss the potatoes in the pan while still hot so their outsides get chuffed up and fluffy - this will make them lovely and crispy when they roast. While the lemon is still hot, carefully stab it about 10 times. Take the chicken out of the fridge, pat it with kitchen paper and rub it all over with olive oil. Push the garlic cloves, the whole lemon and the thyme into the cavity, then put the chicken into a roasting tray and cook in the preheated oven for around 45 minutes. Remove the chicken to a plate. Some lovely fat should have cooked out of it into the roasting tray, so toss the potatoes into this with the rosemary leaves. Shake the tray around, then make a gap in the centre of the potatoes and put the chicken back in. If using the bacon, lay the rashers over the chicken breast and cook for a further 45 minutes, or until the chicken is cooked and the potatoes are nice and golden. (You can tell the chicken is cooked when the thigh meat pulls easily away from the bone and the juices run clear.) I like to remove the bacon from the chicken and crumble it up over the potatoes. Then I remove the lemon and garlic from inside the chicken, squeeze all the garlic flesh out of the skin, mush it up and smear it all over the chicken, discard the lemon and rosemary and carve the chicken at the table. Heaven!

5 tbsp olive oil
1kg Maris Piper potato , cut into large, even pieces
6 garlic cloves , left in their skins
2 lemons , 1 zested, both cut into wedges
¼ tsp dried oregano
75g pitted black olives
4 pork chops
100g bag baby spinach

Steps:

  • Heat oven to 200C/180C fan/gas 6. Pour the oil into a roasting tin and put in the oven to heat. Put the potatoes, garlic and half the lemon wedges into a large pan. Cover with cold salted water and bring to the boil, then simmer for 10 mins. Drain the potatoes, discarding the lemon and garlic. Toss the potatoes with the lemon zest, oregano and seasoning, then carefully transfer to the hot oil in the roasting tin and roast for 30 mins.
  • Meanwhile, finely chop the olives in a small food processor with some pepper. Press the olives onto both sides of the pork chops, then add the chops to the roasting tin and cook for a further 15-20 mins. Just before serving, heat a dry frying pan until very hot. Tip in the spinach, cook for 20 seconds or so until wilted, then set aside in a colander to drain. Season, then serve with the pork, potatoes and remaining lemon wedges.

4 -5 large potatoes (leave the skins on, the flavour is fabulous)
2 tablespoons grainy mustard
2 lemons, juice of (save the squeezed lemon halves)
1 tablespoon dried oregano (I used thyme) or 1 tablespoon dried thyme, crumbled (I used thyme)
4 tablespoons olive oil
1 (3 lb) roasting chickens, about 3 pounds
2 onions, peeled and cut into wedges
2 bay leaves
6 garlic cloves, with skins left on
1/2 cup white wine

Steps:

  • Pre-heat the oven to 180*C/350*F.
  • Halve the potatoes lengthwise and then cut them into three or four wedges, so that they look like chips. I used Charlotte fingerling potatoes and they were perfect, cut into quarters.
  • Throw these into a shallow roaster along with the onion wedges and the chicken.
  • Mix together the mustard, lemon juice, oregano (or thyme) and olive oil to make a marinade.
  • Pour over the chicken, potatoes and onions. Add the bay leaves and garlic.
  • Season with salt and pepper (remembering the inside of the chicken as well as the outside)
  • Rub the marinade in all over the surface of the chicken and shuffling the potatoes and onions around so that they are well coated.
  • Put the reserved lemon halves inside the chicken.
  • Gently pour a cup of warm water into the pan, being careful not to wash any of the marinade off of the chicken or potatoes.
  • Roast for one hour. At this point the chicken should be starting to brown.
  • Pour the wine over the top and turn the potatoes and onions.
  • Roast for another hour, turning the chicken when it is well browned on top. Check that the potatoes are still in a little liquid, you don't want them to go dry. If they seem a bit dry add a little more hot water.
  • When it is done the chicken will be golden brown and juicy and cooked through and the potatoes will be meltingly tender, with a few crisp edges. There should be a little sauce left in the roaster to serve spooned over the chicken and potatoes, but if there isn't just add a bit of hot water to the dish and scrape up the tasty bits from the bottom to make more sauce.
  • Serve to a very lucky family that will be scrambling for more! If this doesn't soon become your favourite way to roast chicken I'll be a monkey's uncle!

These potatoes are good with anything but especially good with seafood. First had them at a friend's dinner party, served with dilled salmon, and of course had to have the recipe.

1/4 cup olive oil (extra virgin)
1/4 cup fresh squeezed lemon juice
dry mustard
salt and pepper
6 -10 potatoes (russet)

  • Peel and quarter potatoes.
  • Place in roaster, in one layer.
  • Whisk together chicken stock, olive oil, lemon juice, dry mustard, salt and pepper.
  • Taste and adjust.
  • Pour mixture over potatoes.

LEMON & ROSEMARY ROAST CHICKEN WITH CRISPY POTATOES

2kg floury potatoes such as King Edward or Maris Piper, peeled
1 lemon
1 tbsp coarse sea salt
1 extra large fresh chicken , around 2.7kg/6lb
6 sprigs rosemary , plus extra for garnish
4 tbsp olive oil
400ml fresh chicken stock (buy two 300ml tubs and use the rest for the lettuce)

Steps:

  • Heat oven to 220C/fan 200C/gas 7. Cut the potatoes into 2 mouthful-sized chunks and put in a large pan of salted water. Bring to the boil, cook for 5 mins, then drain. Meanwhile, place the olive oil in a really large, sturdy roasting tin and heat for 5 mins. Tip the potatoes in and cook for 20 mins.
  • Meanwhile, peel the zest from the lemon (a vegetable peeler is great for this) and slice it finely. Mix it with the sea salt. Place the chicken on a board with the legs pointing towards you, and undo any string tied around. Lift up the skin around the cavity and work your fingers under the skin over the breast and legs, easing it away from the flesh. Push the salty shreds of lemon rind under the skin, spreading it as evenly as possible, followed by four sprigs of rosemary, one on each leg and one on each breast. Then put one sprig inside the bird along with the peeled lemon.
  • Take the tin out of the oven, give the potatoes a good shake, and then arrange them so you can fit a rack over the roasting tin. Then place the chicken upside down on the rack and roast for 20 mins. Turn the chicken over and turn potatoes, coating them in the fat that's run off the bird. Return to the oven and roast for another 20 mins, then turn the potatoes again and cook for another 20-30 mins, until the chicken juices run clear.
  • Remove the roasting tin from the oven and put the chicken on a serving platter, covering it with foil to keep it warm. Leave to rest for 20 mins. Meanwhile, scoop the potatoes into an ovenproof dish and return to the oven to finish crisping up. Pour away the fat from the roasting tin, then put the tin on the hob over a low to medium heat. Add half the stock, then bring to simmering point, stirring and scraping up the brown residue. Boil, reducing until darker and syrupy. Add the rest of the stock, and bring to simmering point again, bubbling to reduce it. Taste and adjust seasoning. Pour through a sieve into a warmed gravy jug.
  • Pile the potatoes around the chicken, and garnish with remaining rosemary sprigs. Serve with gravy and braised lettuce.
  • Freezing: Freeze the chicken at the end of step 2, for up to a month. Defrost thoroughly before continuing with the recipe.

Roast Potatoes with Lemon and Coriander image

The lemon juice in this dish really adds a delicious flavor.

2 lb new potatoes, peeled
salt and freshly ground black pepper
5-6 Tbsp extra-virgin olive oil
4 garlic cloves, crushed
1 1/2 lemons, juiced
1 large handful of chopped coriander

Steps:

  • 1. Boil the potatoes in salted water for about 10 minutes, then drain and transfer to a wide baking pan. Cut them into 1/2 inch cubes and sprinkle over some salt and pepper, the olive oil and the garlic. Mix and turn the potatoes so they are coated all over with the oil.
  • 2. Roast the potatoes in a very hot oven, preheated to 450 degrees, for 30 minutes or until they are crisp and brown.
  • 3. Remove potatoes and sprinkle evenly with the lemon juice and chopped coriander. Mix well being careful not to break the potatoes.

ROAST CHICKEN WITH LEMON, ZA'ATAR, AND POTATOES



Roast Chicken With Lemon, Za'atar, and Potatoes image

Za'atar is a Middle Eastern herb mix based heavily on thyme. If you cannot locate it, you can make your own or substitute Herbes de Provence or just use dried thyme. This recipe is adapted from a recipe by Lauren Keating, on Healthy-Delicious.com. She says of her recipe,"Flipping the chicken has the effect of roasting it on a spit, distributing the juices throughout the meat and keeping the breast from drying out."

1 whole broiler-fryer chicken, about 3 1/2 pounds
1 meyer lemon (or regular lemon if out of season)
1 tablespoon kosher salt
2 tablespoons za'atar mixed herbs
4 medium yukon gold potatoes, scrubbed and quartered

Steps:

  • Several hours or the night before cooking the chicken, remove giblets from the chicken and pat the skin dry. Cut the lemon in half, and place half inside the cavity. Slice the other half crosswise as thinly as you can into four slices and insert the slices under the skin, one under each breast half and one under the fattest part of each thigh. Rub the salt and za'atar into the skin, then truss the chicken and refrigerate it for several hours or overnight.
  • Remove the chicken from the fridge to bring it up to room temperature before roasting. Preheat the oven to 475°F.
  • Place an elevated roasting rack in a roasting pan. Toss the quartered potatoes with a small amount of olive oil and salt (maybe even a little more za'atar) and place them in the bottom of the roasting pan, arranging them around the rack. Place the chicken on the rack, breast-side-up. If you do not have an appropriate rack, improvise with wadded up aluminum foil, or place the chicken right on the potatoes.
  • Roast the chicken for 30 minutes - the skin will turn golden and may start to blister. Remove from the oven and flip the chicken onto its breast. Turn the potatoes, put the pan back into the oven and roast for 15 minutes more, then remove the pan from the oven, turn the potatoes again if needed, and turn the chicken onto its back for 5-10 more minutes to crisp the skin. Carefully tilt the chicken so that the juices that have accumulated into the cavity run out into the pan - the chicken is done when the juice runs clear and has no trace of red.
  • Remove the chicken from the oven and let rest for 15 minutes before carving.

A traditional Greek recipe served for Easter and as lovely Spring Sunday dinner

3-3½ lbs. boneless leg of lamb, butterflied (see note)
3 TBSP. Greek olive oil
1 small shallot, minced
3 garlic cloves, minced
1 TBSP. fresh rosemary leaves, finely chopped
1 TBSP. fresh thyme leaves, finely chopped
½ tsp. dried Greek oregano
¼ tsp. red pepper flakes
¼ tsp. freshly ground pepper
1½ tsp. sea salt
--- zest of one small lemon
3 large baking potatoes, (or 6 medium Yukon Gold) peeled and quartered lengthwise
3 TBSP. extra virgin olive oil
2 garlic cloves, minced
½ tsp. dried Greek oregano
½ teaspoon salt
¼ freshly ground pepper
--- juice of ½ medium lemon
¼ cup water (or pan drippings of a roast)

Steps:

  • Place the leg of lamb on a cutting surface and trim most internal fat and any excess connective tissue. Do not trim much of the outside fat, however, as it imparts moisture and flavor to the rest of the cut. Spread the lamb as flat as possible and, with a sharp boning knife, make small cuts along the thicker parts of the meat as needed, so as to get an even thickness. This will make rolling easier later. You can also ask your butcher to butterfly it for you. Carefully score the meat on the inside, so that the herb mixture can seep in to all of the scorings and soak up all the flavor while roasting. Make sure not to score all the way down and cut the outer layer of meat - just small ¼" inch cuts on the inside only will do.
  • Prepare the "wet" rub: In a small skillet set over medium-low heat, heat the olive oil and add the shallot, garlic, rosemary and thyme. Cook for two minutes and then add the oregano, pepper flakes salt & pepper and lemon zest. Cook for a couple more minutes (making sure not to burn the garlic) and then remove it from the heat and let it cool.
  • Pour two thirds of the rub over the inner side of the butterflied lamb. Spread it all over the meat and push it into the scores you made. Carefully roll tightly into a log along the longest side. Tie the roll with some kitchen twine at 1½" intervals, to make sure it does not open up while roasting. Let it sit in the refrigerator (uncovered, so we get a crisp crust) for at least two hours or, even better, overnight. A longer stay with the rub will give the lamb a better flavor and texture.
  • Take the lamb out of the refrigerator and allow it to sit at room temperature for 30 minutes. Preheat the oven to 275° F. Adjust oven rack to the lower middle position. Line a rimmed baking sheet with heavy-duty foil. Place the lamb on the baking sheet and transfer the sheet to the oven. Roast for about 1¼ to 1½ hours, depending on the thickness and the size of the leg or lamb. The best way to ensure proper doneness is to use an instant-read thermometer inserted into the thickest section of lamb - it should register between 130°F to 135°F, for a perfect pink center. Remove the lamb from oven and let it rest, loosely covered with aluminum foil, for about 15 minutes.
  • While the lamb is resting, increase the oven temperature to 450°F. Return the lamb to the oven and roast it for about 8-10 minutes or until the exterior is golden brown and crisp. Remove it from the oven, place it on a cutting board, and, let it rest for about 5-8 minutes. Remove the twine and slice the lamb into thin slices. Serve with roasted potatoes.
  • Preheat oven to 400°F.
  • Prepare the potatoes and place them in a glass or ceramic baking pan. Add the olive oil, garlic, oregano, salt, lemon, and water. Mix well and arrange the potatoes in a single layer. Bake for 30 to 40 minutes or until the potatoes are fork tender. If necessary, add more hot water and gently mix once or twice during baking.
  • Once the potatoes are cooked, place them under the broiler for 5 minutes to get some nice golden brown color. Serve at once.

Originally from Canadian Living Magazine, these are delicious and easy. They are lemony without being sour, and not too oily. Great with Greek food, or anything really. These take a lot less time to make than similar recipes on this site.

8 potatoes, scrubbed
1/2 cup lemon juice
1/3 cup extra virgin olive oil
3 garlic cloves, minced

Steps:

  • Boil potatoes for approximately 15 minutes in a large pot of salted water.
  • Drain and let cool somewhat.
  • Peel potatoes if desired and cut into wedges.
  • Whisk together all other ingredients in a large bowl. Toss with potatoes to coat.
  • Arrange potatoes in a greased baking pan or dish.
  • Roast at 400 degrees, turning once, for about 40 minutes.

10 -12 medium potatoes
3 -4 lemons, juice of
1 -2 tablespoon lemon zest
2 garlic cloves, smashed
1/4 cup olive oil
1 bunch fresh oregano, finely diced
1 pinch salt (or to taste)
1 teaspoon white pepper (or to taste)

Steps:

  • Preheat the oven to 400 degrees
  • Wash and cut the potatoes into quarters lengthwise and put into a large ovenproof baking dish.
  • Squeeze the lemons of their juice and grate the zest from 1 or 2, pour the lemon juice over the potatoes.
  • Drizzle with the olive oil coating all the potatoes.
  • Add the garlic, oregano and the lemon zest, seasoning the potatoes well with the salt and white pepper
  • Bake uncovered for 45-60 minutes or until tender and nicely browned.
  • Serve with lemon wedges.

SLOW ROAST LAMB SHOULD WITH LEMON POTATOES

This is a lazy take on an Australian way of slow roasting lamb with lemon potatoes. It's put it in the oven and chill out for a few hours type of approach.

Steps:

  • Preheat the oven to 220. Put the lamb in a large roasting tin (ideally on a wire rack) and season well with salt and pepper. Sprinkle with the oregano and pour over the lemon juice and 100 ml of white wine (Or Stock). Drizzle with the olive oil and roast for 20 minutes, or until the lamb is browned.
  • Reduce the oven to 160 (315/Gas 2-3). Add 125 ml (4 fl oz/½ cup) of water to the roasting tin. Arrange the potato and lemon quarters around the lamb and cover the tin with foil and return to the oven for another 2.5 - 3 hours, turning the potatoes at least once during this time and basting the lamb with the pan juices. The lamb should be very tender.
  • Remove the lamb from the tin and set aside to rest before slicing. Increase the oven to 220 (425/Gas 7). Roast the potatoes for a further 20 minutes, or until the potatoes are golden.
