8 ounces cream cheese, softened
1 cup mayonnaise
2 tablespoons Dijon mustard
2 tablespoons adobo sauce from canned chipotles in adobo
1 teaspoon freshly ground black pepper
1 pound sharp Cheddar, grated
1 pound Monterey Jack, grated
Two 4-ounce jars diced pimentos, drained
1 tablespoon chopped fresh dill
Kosher salt
Assorted crackers
Castelvetrano olives, pitted

Steps:

  • Combine the cream cheese, mayonnaise, Dijon, adobo and black pepper in the bowl of an electric mixer and mix until totally combined. Add the Cheddar and Monterey Jack and mix gently until combined. Using a rubber spatula, scrape down the sides of the bowl to ensure all the ingredients are mixed together. Stir in the pimentos and dill, then season with salt.
  • Refrigerate the pimento cheese for at least 2 hours before serving with crackers and olives.

1 cup(s) boiling water
1/2 cup(s) sugar
1 small whipped topping, 8 oz.
1 small pimento cheese spread
1 small crushed pineapple, drained
1 cup(s) chopped nuts (optional)

Steps:

  • Dissolve gelatin in boiling water.
  • Add sugar and pimento cheese.
  • Mix well.
  • Add pineapple.
  • Partially congeal.
  • Fold in whipped topping and nuts, if desired.
  • Chill until set.

1 (3 ounce) package lemon-flavored gelatin mix (such as Jell-O®)
1 cup boiling water
1 (8 ounce) can crushed pineapple with juice
½ cup white sugar
1 (8 ounce) package pimento cheese
1 (8 ounce) container frozen whipped topping (such as Cool Whip®), thawed

Steps:

  • Stir lemon gelatin and boiling water in a bowl until gelatin has dissolved; set aside to cool.
  • Stir crushed pineapple with juice and sugar together in a small saucepan over medium heat until sugar has dissolved and mixture comes to a simmer. Set pineapple mixture aside to cool.
  • Transfer cooled gelatin and pineapple mixture to a serving dish or mold; stir pimento cheese into mix until completely combined. Gently fold whipped topping into gelatin mixture. Refrigerate overnight.

This recipe came to The Times from the Charleston, S.C.-bred cookbook authors and occasional contributors to The Times Matt Lee and Ted Lee.

8 ounces extra-sharp cheddar cheese, grated with a food processor or hand grater (not pre-grated)
1/4 cup softened cream cheese (2 ounces), pulled into several pieces
Scant 1/2 cup jarred pimento or other roasted red peppers (from a 7-ounce jar), finely diced
3 tablespoons Duke's, Hellmann's or other high-quality store-bought mayonnaise
1/2 teaspoon dried red chile flakes
Salt and freshly ground black pepper to taste

Steps:

  • In a large mixing bowl, place the cheddar cheese in an even layer. Scatter the cream cheese, pimentos, mayonnaise and chile flakes over the cheddar cheese. Using a spatula, mix the pimento cheese until it is smooth and spreadable, about 1 1/2 minutes.
  • Transfer the pimento cheese to a plastic container or bowl, cover tightly, and store in the refrigerator. Pimento cheese keeps in the refrigerator for 1 week.

Pimento Cheese Macaroni Salad image

This is inspired by a delicious and creamy pimento dip that my best friend makes whenever we do a weekend barbecue shindig. I decided to make a pasta salad version of that dish featuring elbow macaroni. The addition of diced red bell pepper adds a crunch of freshness that pairs perfectly with the creaminess of the ingredients. This fun and comforting salad is delicious warm or room temperature but can also be made in advance and served cold.

Kosher salt and freshly ground black pepper
8 ounces elbow macaroni
4 ounces cream cheese, at room temperature
1/2 cup mayonnaise
1/4 cup canned pimento peppers, diced
1/2 cup shredded sharp Cheddar
2 tablespoon chives, fresh or freeze-dried
1 tablespoon smoked paprika, plus more for sprinkling
1 clove garlic, minced
Dash hot sauce (use your favorite)
1 red bell pepper, stemmed, seeded and diced

Steps:

  • Bring a large pot of salted boiling water to a rolling boil. Add the macaroni and cook until al dente, about 1 minute less than package directions suggest.
  • Meanwhile, in a large bowl, mix the cream cheese, mayonnaise, pimento peppers, Cheddar, chives, smoked paprika, garlic, hot sauce and a pinch of salt and black pepper together until thoroughly combined.
  • Transfer the cooked macaroni directly to the large bowl with the cheese mixture and mix until everything is thoroughly combined. Fold in the red bell pepper and garnish with more smoked paprika. Serve immediately or chill in the fridge until ready to serve.

1/2 cup(s) sugar
1 small jar pimento cheese spread
1 small can crushed pineapple, drained
9 ounce(s) carton of cool whip
1 cup(s) toasted pecans, if desired

Steps:

  • Dissolve gelatin in boiling water. Add sugar and cheese spread. Mix well. Add drained pineapple.
  • Let congeal to consistency of unbeaten egg whites. Fold in cool whip and pecans. Pour into oiled ring mold. Pace in refrigerator to congeal.
