Spaghetti with lemon, Parmesan & peas image

This super healthy vegetarian pasta dish is quick to make, and makes the most of your store cupboard ingredients

140g spaghetti
100g frozen petits pois or garden peas
2 tsp olive oil
1small onion , finely chopped
100g low-fat soft cheese with chives and onion
1 lemon , finely grated zest
3 tbsp finely grated parmesan (or vegetarian alternative)
1 tbsp chopped fresh flatleaf parsley

Steps:

  • Bring a large pan of lightly salted water to the boil. Feed in the spaghetti and cook for about 10-12 minutes, until just tender. (Check the pack instructions for timings - 'quick cook' spaghetti takes only 3 minutes.) Add the peas for the last 2-3 minutes.
  • At the same time, heat the olive oil in a saucepan and fry the onion gently until softened and cooked, but not brown. Stir in the soft cheese and warm it through, adding 3 tbsp of the pasta cooking water to thin it down. Now stir in the lemon zest and 2 tbsp of the Parmesan.
  • Drain the spaghetti and peas really well, return them to the pan and gently stir in the sauce. Season with salt and pepper, then pile it into 2 serving bowls. Sprinkle the parsley and the remaining Parmesan over the top and serve right away, with a mixed leaf salad.

This is one of those 'much more than the sum of its parts' recipes. It's great with a salad, perfect for vegetarians and children, and makes a wonderful side dish with chicken or seafood.

8 ounces spaghetti
⅓ cup unsalted butter
1 (8 ounce) container sour cream
1 teaspoon lemon zest
3 tablespoons fresh lemon juice
3 tablespoons chopped fresh parsley
¼ cup grated Parmesan cheese
salt and ground black pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Cook spaghetti according to package directions until al dente. Drain and place spaghetti in a greased 1.5 quart casserole dish.
  • Melt butter in medium saucepan over low heat. Remove from heat, and stir in sour cream, lemon peel, and lemon juice. Mix until smooth. Pour mixture over spaghetti in casserole dish. Mix well
  • Bake 15 to 20 minutes in the preheated oven, or until heated through. Remove from oven, and add grated Parmesan cheese and parsley. Season with salt and freshly ground pepper to taste. Serve immediately.

A friend told me she had been making a dish like this recently so I decided to give it a go. Very light and fresh - perfect for summer supper with a green salad.

6 cups cooked spaghetti
4 -5 minced garlic cloves
1 large lemon, juice and zest of
2 -3 tablespoons olive oil or 2 -3 tablespoons grapeseed oil
1/4 cup fresh basil leaf, torn
1 cup fresh grated parmesan cheese, use the real thing

Steps:

  • Cook spaghetti according to pkg directions.
  • While pasta cooks, in a large frying pan, saute garlic in oil over low heat until golden.
  • Drain cooked pasta and add to garlic and oil, increasing heat to medium, tossing until well coated.
  • Add lemon juice, lemon zest and fresh basil and remove from heat. Toss until well mixed.
  • Serve garnished with Parmesan cheese.

1/2 cup Olive Oil
1/4 cup Bread Crumbs
4 Garlic Cloves - keep whole
1/4 cup Paremesan Cheese
1 Lemon - Zest & Juice
1/2 cup Parsley - Flat Leaf, minced
1 pinch Red Pepper Flakes

Steps:

  • In a large fry pan over medium heat, warm the 1 Tbs. olive oil. Add the bread crumbs and saute until browned, about 4 minutes. Season with salt and pepper and transfer to a bowl.
  • In the same pan over low heat, warm 1/2 cup oil (or 2 Tbs. butter), add garlic and saute until fragrant, 1 to 2 minutes. Optional - add 2 Tbs flour, cook 1-2 mins, add 1 cup of wine (and or pasta water) and cook until reduced by half. Cont. with rest of directions.
  • Remove from heat and stir in Parmesan and lemon zest and juice. Season with salt & pepper.
  • Add cooked pasta to sauce pan and toss. Add pasta water if pasta seems dry.
  • Add bread crumbs, parsley, red pepper flakes, and salt and pepper to taste. Top with parmesan.
