1 cup blueberries
1 lemon, juiced, plus zest for garnish

Steps:

  • In a medium bowl place cut fruit, blueberries, lemon juice and 1 tablespoon sugar. Mix well and macerate for about 10 to 15 minutes. This will allow fruit to be infused with lemon juice and sugar. Meanwhile in a small bowl stir 2 cups of lowfat yogurt and poppy seeds. In clear glasses, layer the ingredients starting with the fruit mixture then next layer with yogurt, then fruit, then yogurt. Repeat these steps until you have filled the glasses. Garnish with a sprig of mint.

I am playing around and trying to find some new lower fat recipes to put into my rotation to keep me from getting bored. This turned out to be lush tasting and something that I could happily eat both for breakfast or for a fairly diet friendly dessert. I use fat free Greek yogurt in this because I enjoy the thick creamy texture with such little fat. Also, I am lactose intolerant but have found that I don't get any reactions when I eat Greek yogurt. I have used both Splenda and sugar in the blueberry stage of this recipe and both worked well

2/3 cup lemon curd
4 tablespoons sliced almonds
1 cup fat free Greek yogurt
2/3 cup fresh blueberries
2 tablespoons lemon juice
2 teaspoons sugar or 2 teaspoons Splenda granular

Steps:

  • Divide lemon curd into the bottom of two dessert dishes.
  • Put flaked almonds into a very hot pan and toast for about three minutes. Keep moving them constantly to make sure they don't burn.
  • Layer toasted almonds on top of lemon curd.
  • Put half a cup of Greek yogurt on top of the almonds in each dish.
  • Put the blueberries into a saucepan over medium heat.
  • Add the lemon juice and sugar and stir gently stir into the blueberries over the heat.
  • Keep stirring for about four minutes until the berries have popped and are cooked through.
  • Pour the blueberries on top of the yogurt layer along with any of the juices in the pan you cooked them inches.
  • Serve.

4 tablespoons unsalted butter, softened
1/2 teaspoon finely grated lemon zest plus 1/2 cup lemon juice
1 large egg
1 1/2 cups cream cheese, softened
1 1/4 cups heavy cream
1 1/4 cup confectioners' sugar
1 teaspoon finely grated lemon zest plus 3 tablespoons lemon juice
1 teaspoon vanilla extract
6 cups lightly packed cubed angel food cake (a little more than 1/2 cake)
1 1/2 cups fresh blackberries

Steps:

  • For the lemon curd: Combine the granulated sugar, butter, lemon zest and juice and egg in a large microwave-safe bowl (the mixture will bubble and triple in volume during cooking). Microwave on high in 1-minute intervals, stopping to remove the bowl and stir well after each interval. Continue until the curd thickens enough to coat the back of a spoon, about 6 minutes. Strain into a clean bowl, cover the surface with plastic wrap and cool in the refrigerator (the curd will continue to thicken as it cools).
  • For the lemon cheesecake layer: Combine the cream cheese, cream, confectioner's sugar, lemon zest and juice and extract in a large bowl and beat with an electric mixer until it holds stiff peaks. If the cream cheese isn't very soft, you may have to whip for up to 5 minutes to get the lumps out. Refrigerate until ready to use.
  • For the parfait: Divide half of the cake among six 2-cup mason jars or glasses (1/2 cup of cake per jar). Top with about half of the cream cheese mixture (about 1/4 cup) followed by all of the lemon curd. Divide the remaining cake, followed by the cream cheese mixture, among the jars. Top with the blackberries. Eat immediately or refrigerate up to 4 hours.

75g meringue nests (5 nests)
450ml double cream , chilled
1 tbsp caster sugar
1 lemon , zested
2-3 tbsp gin or vodka
5 tbsp of lemon curd , plus extra to drizzle

Steps:

  • Line a 20cm round tin, preferably loose-based, with cling film, using more than one piece if necessary to cover the bottom and up the sides, and pop in the freezer.
  • Roughly break up the meringues with your fingers into a bowl, aiming for nothing bigger than a golf ball.
  • Put the cream and sugar in a large bowl and whisk until starting to stiffen. Stop when it looks floppy, like Greek yogurt.
  • Grate over the lemon zest and sprinkle over the gin and meringue rubble. Use a large spoon or spatula to fold the cream up, over and round, until just combined.
  • Stir the lemon curd so it's gloopy rather than firm; if it remains too thick, dilute with a tsp of gin. Dollop over the surface of the cream. Take your spoon and fold it in, turning the bowl as you do so - no more than a dozen folds, so the curd forms streaks. Spoon gently into the tin and freeze for at least four hours. Once firm, cover with cling film.
  • About 10-20 mins before serving, remove the parfait from the freezer, invert onto a plate, peel away the cling film, and return right-side-up, at room temperature. Serve in wedges with lemon curd drizzled over and the fruit on the side.

Alternating thin precise layers of lemon soda gelatin and tangy buttermilk gelatin takes patience and focus, but once built, they can sit, covered, up to a week in the refrigerator. Be sure to pull them twenty minutes before serving to allow the fully chilled and set parfaits to relax a little, tempering to a perfectly jiggly consistency - then try not to giggle as you eat that first zingy lemony spoonful.

1 tablespoon plus 1 teaspoon powdered gelatin
1/2 cup fresh lemon juice (from about 4 lemons), strained
1/2 cup granulated sugar
1/4 cup cold water
1 1/2 tablespoons powdered gelatin
1 3/4 cups heavy cream
1 cup buttermilk
1/4 cup granulated sugar
Unsweetened whipped cream, for serving

Steps:

  • Prepare the lemon gelatin: Pour 1/4 cup club soda into a medium bowl. Sprinkle the powdered gelatin on top, and let the gelatin bloom for 2 to 3 minutes.
  • Combine the lemon juice and sugar in a double boiler or a medium stainless-steel bowl set over a saucepan with an inch of simmering water. Cook over low heat just until the lemon syrup begins to steam, about 3 minutes. You should have a viscous, syrupy liquid with no discernible traces of sugar granules. Pour the lemon syrup into the gelatin mixture, and stir well to combine. (There should be no visible undissolved gelatin, but you could pass the mixture through a fine-mesh strainer, if need be.) Stir in the remaining 1 1/2 cups club soda, and transfer to a bowl set over an ice bath.
  • Prepare the buttermilk gelatin: Pour the cold water into a medium bowl. Sprinkle the powdered gelatin on top, and let the gelatin bloom for 2 to 3 minutes.
  • Meanwhile, in a double boiler or a medium stainless-steel bowl set over a saucepan with an inch of simmering water, combine the heavy cream, buttermilk and sugar. Scald over medium heat until the sugar is dissolved completely.
  • Stir the scalded cream mixture into the gelatin-and-water mixture, then pour into a smaller bowl set over an ice bath. Let cool for 5 minutes, stirring often to prevent the edges from solidifying. Remove the bowl from the ice bath, and let stand at room temperature. After about 5 minutes, once the mixture is the consistency of melted ice cream, start assembling the parfaits.
  • Gather four 8-ounce parfait glasses and prepare an ample ice bath that can comfortably and securely fit all four of the glasses without tipping them over.
  • Using a tablespoon, carefully pour 2 tablespoons of the buttermilk mixture into the bottom of each glass, and place each glass into the ice bath to set for 10 minutes.
  • Pick up a parfait glass, and give it a little jiggle to confirm the layer has set enough to receive - and support - the next layer. Then repeat Step 7 with the lemon mixture, allowing it to set until firm in the center, about 30 minutes.
  • Continue layering the buttermilk and lemon gelatins alternately, until the glasses are full, allowing each layer to fully set in the ice bath before proceeding to the next. Add more ice to the ice bath as needed, and don't be tempted to hasten the process. If either mixture begins to firm up while you are working and is no longer spoonable or pourable, gently rewarm it for a few seconds over a pan of simmering water to liquify once more.
  • Cover and refrigerate the parfaits until thoroughly chilled and fully set, or up to 2 days. Before serving, be certain to temper for 20 minutes at room temperature for perfect, tender results. Finish with whipped cream.

Swiss Meringue for Lemon, Blackberry, and Meringue Parfait
1 cup creme fraiche
Lemon Curd for Lemon, Blackberry, and Meringue Parfait
1 cup ripe blackberries
1 cup chilled heavy cream, whipped

Steps:

  • Preheat oven to 200 degrees, with racks in upper and lower thirds. Line two large rimmed baking sheets with parchment paper. Fit a pastry bag with an Ateco #22 star tip; fill with meringue. Pipe 12 to 16 long swirly shapes onto one of the prepared sheets. Gently spread remaining meringue 3/4 inch thick onto the other.
  • Bake 20 minutes. Reduce oven heat to 175 degrees; continue baking until meringue is dry but still white, 35 minutes more, rotating sheets halfway through. Transfer to a wire rack to cool completely. Set aside swirls; crumble meringue sheet.
  • Meanwhile, in a small bowl, combine creme fraiche and 1 cup lemon curd; refrigerate until ready to use.
  • To assemble parfaits, layer creme-fraiche mixture, crumbled meringue, and blackberries in serving glasses. Spoon some of the remaining 1/2 cup lemon curd into each glass. Top with whipped cream; garnish with meringue swirls. Serve immediately.

1/3 cup egg whites, from about 3 large eggs

Steps:

  • For the graham cracker crust: Weigh and mix your dry ingredients together in a bowl. In a stand mixer, cream the butter with both sugars and honey until thoroughly combined. Add to the butter/sugar mixture until just combined. Roll between two pieces of parchment paper to a ¼-inch thickness. Freeze 20 minutes.   • Preheat oven to 325 degrees F. Remove top sheet of parchment and bake 30 minutes until brown. When cool, break up pieces and pulse in a food processor until it resembles coarse crumbs. Set aside at room temperature.

LEMON GINGER CRUNCH PARFAIT

The lemon filling is creamy, sweet, tart and delicious! It's fresh and very impressive. We included the candied ginger in the crust and it adds an extra punch of flavor. This crust is so good, you may consider using it with other recipes too. Yum!!

*CRUST*
1 box ginger snap cookies
1/2 c butter
1/4 c sugar
1 tsp ground ginger
1/4 c candied ginger minced (this can be omitted)
*LEMON FILLING*
1 1/4 c lemon juice (fresh is best)
zest of two lemons
2 c sugar
6 eggs
6 egg yolks
1 c butter
*TOPPING*
1 pkg cream cheese, room temperature
1 1/4 c heavy cream 35%
1 c confectioners' sugar (icing sugar, powdered sugar)
2 tsp vanilla (or vanilla bean)

Steps:

  • 1. Crust: Place ginger cookies in a food processor and pulse until fine. Place in a bowl and add sugar and ground ginger. Mix. Add melted butter and press on the bottom of Parfait glasses (12 med size)
  • 2. Lemon Filling: In a bowl beat eggs and egg yolks together and set aside. In a sauce pan, stir lemon juice and sugar together and place on Med heat and bring to a boil while stirring. Remove the hot lemon from the heat and slowly add it the eggs whisking quickly to prevent eggs from scrambling. Place the mixture back on med. heat stirring till the mixture thickens. Remove from heat and add lemon zest and butter a bit at a time mixing till all the butter in incorporated. Add lemon Extract. Cover and cool.
  • 3. Topping: Beat cream cheese on low speed add half of the sugar and increase the speed for a minute. Add extract and scrape down the side of the bowl. Beat for another minute and set aside. Whip Cream to thick and add the rest of the powdered sugar. Whip till thick. Add 1/3 of the whipped cream to the cheese mix folding it in.. Keep adding the whipped cream into the cream cheese till its all incorporated.
  • 4. Put the lemon on top of your crust layer then pipe on the cheese mixture. Garnish with a but of ginger cookie or candied ginger.

1 (3 1/2 ounce) package instant lemon pudding mix
1 1/2 cups 2% low-fat milk
1 cup Cool Whip Lite, frozen and thawed
12 gingersnap cookies, coarsely crushed (about 1 cup)
2 cups fresh raspberries (or mix with strawberries and blueberries)

Steps:

  • In a medium bowl, add lemon pudding mix to 1-1/2 cups milk and beat with wire whisk until pudding is dissolved. Then fold Cool Whip cream into prepared lemon pudding.
  • In 4 to 6 individual serving glasses, spoon a layer of the pudding mixture; sprinkle lightly with cookie crumbs and a layer of raspberries, or strawberries and blueberries combined.
  • Repeat layers one more time, ending with the pudding. Cover and refrigerate for about 30 minutes.
  • Garnish with mint sprigs and some berries, if like.
